Bun Bo Hue is a traditional Vietnamese soup originating in the city of Hue in Central Vietnam - Bun translates to noodles, and Bo to beef. It's a dish famous for its balance of acidity, spice, and umami flavors. This particular iteration is inspired by Southern Vietnam, and is spicy and rich in flavor. Watch and learn!

    honestly Bun bo Hue needs more love, everyone in the US only ever talks about Pho but simply said pho ain't got shit on bun bo hue.

      The problems is Bun bo hue have pork cook blood and pork feet. I like it, but American people not use to eat that.

    Phenomenal video... Any Vietnamese restaurant in the WORLD regardless of the geographical style (Northern or Southern Vietnamese) should institute this recipe! Madame Vo is among the best Vietnamese restaurants in the world and there aren't enough superlatives to praise the operation.

    I'm currently addicted to Bun Bo Huey. My local Vietnamese restaurant makes a killer bowl and I legit get it atleast 2-3 times a week, thank you Vietnamese people for inventing this most delicious soup.

    My adoptive sister is from Vietnam. She started making pilgrimages to Vietnam yearly when she turned 16. She loved the people, the culture, the language, but the thing she would talk about the most was the food. Her favorite meal was this exact soup! I can't wait to prepare her a steaming bowl of it, she'll be so excited! This recipe looks wonderful, the only thing I think it needs is a little southwestern kick. Thank you so much Chowhound!

      @@FecalMatador You don't have to fusion everything. There's no need to put in a "south western" kick to this dish. Eat it as intended. Also the fusion game is targeted to hit the pale-skinned people's eyes. It's like going to a Bar Taco instead of a true Taqueria.

    Bun bo hue is King. Gotta have banana blossoms and fish mint. Much like many other Viet dishes, the accompaniment of the right herbs and veggies is key.

    You know the chef is a good chef when he makes the interviewer taste and smell each of the ingredients. Vietnamese cooking is just as much about it's components as it is the end product and he has such reverence for each ingredient and each step of the process. He truly loves food and cooking and I have so much respect for him for it.

    Not sure why American vietnamese use paprika for adding color to food. Anato seed is so readily available and it's natural and it's authentic method. Paprika will change the flavour! You need pork hock with beef bones to create better depth of flavour. The beef shank look tough and dry. And you usually don't add all those spices into the broth. You should let people do that.

    I think banana blossom is more traditional, not cabbage. And where’s the Vietnamese coriander, pork blood, and most importantly...gio heo?! The Hue way is def better 😊

    If only Madame Vo wasn’t extremely expensive. A traditional dish like Bun Bo Hue should be enjoyed at a reasonable price point. It’s not a delicacy, rather an everyday meal for the working class. A real shame that New York ritz ruins the spirit of Vietnamese cooking.

      this is hardly "traditional". It's not traditional to Huế where the dish originate and its not traditional to the southern style as he claim to be.
      This is the most pathetic bowl of bún bò huế ive ever seen in my life, no annatto oil, no pork trotters, no beef balls, no bloodcakes, no water spinach, no banana flowers.
      Cant even bother to use fresh noodles and am I supposed to take him seriously after he dump a bag of premade seasoning into the pot ?

      We had a Japanese guest came all the way from Japan 2 years ago. We made Bun Bo Hue for him and other Vietnamese cuisine. He described Bun Bo Hue has such a umami flavor and it's the best beef broth he ever had. He finished everything in that bowl to a single drop of soup.
      I love ramen myself, used to eat 5 times a week at my local Kahoo ramen until they close down due to Covid.

    Using fresh rice vermicelli noodles instead of the rehydrated ones in the Bun Bo Hue or any rice noodle dish makes a world of difference.

    I always make some sort of spicy beef noodle soup, and my sister LOVES PHO. I like pho but love more the depth of flavor with a deeper spicy beef soup..i would love to try this!!

    I applaud Madame Vo for putting this on their menu. It's a more exotic soup and can be a challenge for American tastes. So...this version is a bit more Americanized unfortunately. It's missing some key essentials like - pork broth with pork knuckles, blood jelly and annato oil. Check out Helen's Recipes youtube channel for a more authentic step by step recipe. Last, I'd be wary of that Pyramide spice mix. They often have lots of MSG. Happy Eating!

    It's like saying "Move over hotdog, here's a hamburger." Pho and Bun Bo Hue aren't in competition. Vietnamese folks have more than one kind of soup, white people. You add Bun Bo Hue to your Viet food list, you don't move Pho over.

    Hella appreciate the recipe vid. One thing though. Those Vermicelli noodles gotta soak in water for an hour before cooking. Otherwise it's gonna be like chewing on shoelaces.

    This looks like a very basic southern style. It's missing all the yummy pork parts like the trotters. I like thinly slice banana blossoms in mine as well.

      Authenticity doesn't necessarily mean it tastes better. Authentic pho is Northern but I prefer Southern pho like most foreigners.

      @@MrAnji1995 alot of important ingredients are missing: banana blossom, pork knuckle, pork blood pudding, chilly oil, beef ball. The broth is pretty close, but not as good wthout what i listed.
      @mrcalipride making good bun bo hue is not something a casual mother/grandma can even do. The best, authentic dishes are usually handled by shop owners with decades of experience

      @@carmeloshin im not saying its easy, but I feel like if you're going to release a video about something, you should at least put in the effort to learn how to pronounce the name of whatever it is. Takes less than 1 minute if you search on google "bun bo hue pronunciation" :)

      Roob Trulso not really necessary since you won’t be eating the pineapple. It’s really only there to sweeten up the broth and tenderize the meat.
