The bun ca cay looked so good I went over to D7 to try it and instantly it now competes with bun bo hue as my favorite Vietnamese noodle soup. That spicy garlic sauce is on point too
Both complexities of Bun Ca and Bun Bo Hue put Pho to shame. One can say Pho is delicious for such simple food but fact remains that it is one of the most unsofisticated dish in Vietnam.
@@HoangLinhBuiSilverDrone It's okay, though, as pho is like an intro into Vietnamese food...a gateway for those more timid to trying foreign foods. It's something everyone can eat as it doesn't have any scary looking or sounding ingredients in it (e.g. blood cakes, big chunk of pig trotter with skin intact, mam, spices, etc.). Pho put Vietnamese food on the map so that we can now say, if you like pho, try it's spicier cousin, bun bo Hue, bun ca cay, or bun rieu! I see many people try to belittle or diminish pho, but let's give it some credit for what it's done for Vietnamese food.
Love learning about this stuff. There is a local Vietnamese restaurant where I live and it is so good, but of course the owner has had to alter the authenticity and keep a limited menu to stay in business. I would LOVE to try all that authentic food so at least I get to learn about via your content.
If you're in the States and travel to SoCal, check out Little Saigon, 15 minutes from Disneyland. You'll find a lot of authentic Viet food (since it's the largest Viet community outside of Vietnam) done southern style mostly, but there are few places that do northern style dishes as well.
Oh wow. Tân Mỹ market in district 7. It's my whole childhood living there. I remember living in Phú Mỹ Hưng and we would go to Tân Mỹ market with my mom and aunt to buy grocery and flowers for ancestor offering ceremony. There is a charitable vegetarian local restaurant 2 blocks away from the market that would sell for 10,000 VND (around $0.50) per plate (dine-in)/or box (to go), including rice and 3 options of main dishes, and a side soup). The price may increase over those years as the cost of ingredients increases, but I believe they intended to keep it at least half the price of most cơm bình dân (economy rice) place because charitable vegetarian restaurant are run by Buddhist families that don't focus on making a profit but more on helping the low income community who struggle to buy meals. (I'm friends with the owners, they are so lovely people, and they said no matter if you are wealthy or middle class or low income, you all pay the same price, and everyone is welcomed). This is what I love about Vietnam that so far I haven't seen anything similar to this in the U.S, not that I'm aware of. I used to always go there to eat my meal with plenty of vegetable options, including fake meat made from tofu, tofu skin, and mushroom. So much nostalgia. Now I live in California now. I would miss this place a lot.
So disappointed to have missed these both these restaurants when I was in Ho Chi Minh in 2020 as there were Covid restrictions, having travelled over from the other side of town expressly for them. They looked fantastic
Another good fish noodle is Bun cha ca Da Nang. It's underrated. For Central region fish noodle, it's always much better in its original place because of fresh seafood which I offen crave when living in Saigon.

The 1st place that you tried bún cá actually has the best beef stew (hủ tiếu bò kho) I've ever tried. Their bún cá is good but the beef stew is amazing.
I prefer solid breakfast foods like xoi or banh mi, but something light and simple like bun ca is nice in the morning. The bun ca joint around here puts in little strips of crunchy jellyfish to vary up the texture a bit.
Quality of your video has really gone up. Glad to see you eating some different foods as many vloggers stick to the same stuff over and over...which is fine, if they were doing a comparison or rating them so the viewers can see which is best according to them. But at some point, it seems Vietnam only has certain types of foods, when obviously it has many types of foods and different regions have their own iterations of them. Maybe do a cafe hop and do various coffees from the popular coconut coffee, to egg coffee, peanut, yogurt, salt, etc. Helen's recipes did an interesting video on it recently, but maybe you can add your own professional take on it. Do one for xoi (savory and sweet version) and different types of banh mi (I know there's a fried fish one out there that Sonny showed years ago, but we always see the same ones over and over and I KNOW there has to be more than those styles out there).

Bún bò Huế is one of my favorite soups. I haven’t found a good one in San Francisco. Normally, I have to drive to San Jose for good Vietnamese food. The best place for Vietnamese food is in Westminster California.
There is another style of Mì Quảng called Mì quảng cá lóc. And like its name, it's a mì quảng dish with snakehead fish as its main meat source. Since you like mì quảng, I think that you will like that dish too
Its so frustrating to me because as I was watching this video I checked the menu of our local favorite Vietnamese restaurant and aside from the Pho the only other soup offerings are called Hu Tieu Rau Cai and Wonton Soup | Hoành Thánh. The HuTieu Rau Cai is described as Rice Noodle Soup with Fresh Vegetable but doesn't seem to have any proteins in it. The Wonton Soup | Hoành Thánh just says "Vietnamese style wonton filled with pork and shrimp". Neither sounds quite as interesting as the Pho or the soups featured in this (and other of) video. What say you Chad, any of these selections worth a try?
In Hai Phong, people don't really eat Bun ca cay with kumquat. They eat it with tamarind water, which is more acidic and gives better flavor. Hai Phong's authentic Bun ca cay also have a special strait to it that even Vietnamese people themselves don't know, that is the broth should look reddish. The amount of spices, tomatoes in the broth determine how much these ingredient was used, and since the bow of Bun ca cay you had have the yellowish color to it, it is safe to say that your bow by nature is not spicy. Southern Vietnamese prefer to eat sweat stuff rather than spicy stuff (which is why that Bun ca cay have not correct color, since it's more of the sweet side than spicy side), so next time if you want to try something Northen, unless you really don't have a choice/too lazy to travel far, going to the place itself would be better.

You should do like a noodle edition! Like you said in regards to North Viet Nam, there's so many varieties of noodle dishes that all of Viet Nam has that isn't well-known outside of the country that I think is arguably better than Pho. I'm Viet, yet I think Pho is a bit overrated at this point when we have other noodle soup dishes that are even better.

The problem with Vietnamese food these days is that the water they use isn’t safe to consume due to high level of lead and cadmium. The number of cancer patients has been quadrupled along with the number of manufacturers dumping toxic chemicals. All they have to do is to filter it through charcoal to reduce the toxins.
It's my goal to cancel you, so let's fact-check, m'kay? US ranked as top 5 in cancer, Vietnam doesn't even rank as top 50 (they smoke and drink like crazy, too). Keep tossing out negative tidbits in every Vietnamese-related video so I can keep countering you.
