This actually looks super legit. I've been on a pizza-making kick lately so I want to try to mess around with it a bit. I might make this and leave the dough in the fridge for a few days to let the cultures ferment a bit and see if that does anything. Maybe make a batch with some yeast as well. And I think this would go well in a cast iron pan.

There are cultures in the yogurt depending on what kind you get. Not sure if they’ll do much with the starch in wheat, but worth a try. He does say, “see if that does anything.”

Pro tip: do not buy self rising floor so you can substitute ~30g of vital wheat gluten for the AP flour for even more protein content
