I have to say that I was expecting the experience to be relatively normal when I went to Kichi kichi. However, Chef Motokichi is just like he is in the videos. He's high energy fun and positive. He literally gives everyone in the shop a personal show. Literally. When you visit his restaurant, you'll understand. :D It was great food and fun. I can't wait to go back.

With practice comes technique.
I'm not saying I could make this, but any experienced pro cook can make this. Just not with as much flair.
The fried rice is just fried rice, just moist enough to hold together.
The omelette is the classic french omelette, just with too much egg for the pan and seriously undercooked. The only reason a Chinatown chef wouldn't make this right the first time is just that they don't make omelettes that way.
So the secret is tons of practice, which is why he can do the ending. Remember, 10K hours to become an expert at something.
I'm not even going to attempt this one. I can't bring myself to waste food so I would be eating dozen after dozen eggs in the form of failed omelettes. Some things are better left to the pros.

That's life summed up. You statement about 'any experienced pro cook' is false. ANYONE can make this; the only secret ingredient in being good at doing anything is PRACTICE. Do it so many times you feel like shit but continue doing it over and over; that's how you go from not being able to do something to being mediocre to then becoming a god at that certain thing.
As you said 10,000 hours practice makes you professional, even more and you'll be a god at that.

the sauce is demi-glace, made with a roux, veal stock, and vegetables with french herbs. really that simple.
