I would use grilled chicken breast for my protein. so hard almost impossible for me to build muscle on tofu. I would also grill the veggies or stir fry in wok with peanut oil. Panda Express teriyaki chicken with white steamed rice is what I eat if I visit a restaurant. yucca valley has a nice Panda Express.

That roasted veggie salad looks bomb!
You can also use the weggie peeler for thin cabbage "shavings. Same concept as the julien carrots.😊

I used the slicing blade on my Cuisinart to thinly slice cabbage, it saves a lot of work! This salad looks so YUM!!
For an easier route you can buy bagged shredded cabbage or coleslaw mix.
