Healthy Meal Prep! Higher Protein Plant Based Recipes | Lentil Chili, Tofu Nuggets, Protein Muffins

  • Thanks for joining me for another meal prep video! This week I made banana chocolate chip protein muffins, tofu nuggets, lentil chili and prepped some produce for salads!

    pea protein crumbles- amzn.to/3mZixkD

    banana protein muffins-
    3 bananas mashed
    1 1/4 cup soy milk mixed with 1 tbsp apple cider vinegar
    1 tsp vanilla
    1/4 cup sweetener of choice
    1/2 cup protein powder
    1/2 cup almond flour
    1 1/2 cups whole wheat flour
    1 tsp baking soda
    1 tsp baking powder
    walnuts + chocolate chips (optional)
    bake @ 350 for 24 minutes
    tofu nuggets
    firm but not extra firm tofu ( I used 3 packages)
    garlic powder
    onion powder
    adobo seasoning
    black pepper
    chickpea flour
    shake all ingredients up together in a large container or gallon size ziplock bag. Roll each tofu piece in extra chickpea flour if you want it to be extra breaded. Bake at 400 degrees for 20 to 25 minutes til golden brown. Shut off the oven but let the tofu rest in the oven for an additional 15- 20 minutes and they will get extra crisp on the outside as they sit.
    lentil chili-
    1 onion diced
    1 bell pepper diced
    8 oz mushrooms diced
    splash of veggie broth for sauteing
    1 lb dry brown lentils rinsed & sorted
    1 can black beans drained and rinsed
    1 28 oz can crushed tomatoes
    1 15 oz can tomato sauce or diced tomatoes
    2 tbsp southwest chipotle mrs dash seasoning
    1 to 2 tbsp braggs liquid aminos
    1 1/2 tbsp chili powder
    1/2 tsp garlic powder
    1/2 tsp onion powder
    6 cups water or broth
    pressure cook for 15 minutes, natural release
    2 tbsp date paste or other sweetener
    when the timer goes off set it back to saute and add in some kale and frozen corn

    Barkeeper's freind is good for cleaning your baking pans. Salt and lemon with the natural scrubby pad can help get the hard food bits.

      I prefer salt and lemon on when the surface comes in contact with food so I don’t have to worry about chemical residue from barkeepers friend but it’s fantastic for the outside of my stainless steel pans.

    Thanks for the ideas. FYI: when sheet pans are seasoned, they cook more evenly. I usually use parchment as well because I hate scrubbing pans. I always wonder how cooking shows have stoves and pans that always look like they've never been used.

    Measure with your heart❤I love that. I have a Tokyo central by me too in Costa Mesa and it is my fav. I love getting miso paste there and def mushrooms. I really need to try your tofu nuggets recipe. I’m so surprised how good it comes out for you without pressing your tofu at all!

    Another fab post! Great to see minimal oil was needed in these recipes too! Maybe I could avoid firing up my oven twice in one day tho - once for tofu and then turning it on again for mushrooms - with Xcel Energy prices in here that is expensive and a waste if not really needed. ps I've never tried tofu but one thing I purchased recently was powdered jalapeno powder so that would be good to add to it and other recipes. At a Chinese food place I had crispy jalapeno chicken and that's how I found out about the powder. Denver Spice carries it. Best from Colorado!

    what helps me a lot to gain weight is doing wraps with corn or flour tortillas, basically tacos or burritos. I use a lot the soy curls too.

    Here I was going to make your lentil soup recipe today, now I'm going to try the chili instead. Everything looks so good. I've never tried the chickpea flour on tofu I guess I will try that today too. Love the natural nails BTW they look great. You still haven't linked your glass containers, could you please?

    Look into something called" the pink stuff" it will clean that baking tray. I dont think its good to use on non stick, but that baking tray doesnt look like its a non stick to me. I use it on my stainless pans and it works great. And it claims not to be toxic. Check it out!

    Absolutely amazing meal. I wish that I could tolerate tofu but to me it’s like eating a sponge. I tried to soak it in every liquid and marinade known to man and it still taste like a sponge to me lol but I absolutely love the meal prep. I’ll have to just stick with my MorningStar chicken nuggets. It’s the only one I can tolerate. 10:47

      It‘s really all about how you prepare it. My picky eaters at home also used to say tofu is like eating sponge. But now I found the right way to make it really crispy and tasty (flovourwise) and now tofu is on our weekly meal plan and everybody loves it.

    There is o need to wait for apples if you pop the. In the oven for a few minutes they will turn brown.

    You make quite a few doable bulk recipes, and I always enjoy people incorporating more protein (chickpea, tofu, hemp seeds, tahini etc.. ). What do you think of doing a recipe with Burmese chickpea tofu or hemp seeds?

      I used to use almond flour to make these! It totally works but the chickpea flour has a better texture in my opinion!

      Yes! We usually microwave them cause we are lazy but they would be so good in the air fryer or oven!

    I like to freeze my tofu and let it thaw in fridge then i squeeze water out. I got sick of using my tofu press!

      I did the lettuce with the marinated cabbage and mushrooms on top with some kidney beans and this store bought dressing from Whole Foods and all together it tasted so good!!

    Aldi has way cheaper tofu that is also organic. In fact, ive never seen non organic tofu at any grocery store if I remember correctly

      They’re similar but date syrup i think is more processed because they cook it down, date paste is just blended up dates that you can make yourself!

      I use it sometimes but not that much! It helps the seasoning stick to the mushrooms and so they don’t dry out

    Ugly pans are a sign of a good cook...brand new pans show that no one uses them
