I love making tofu cubes in my air fryer instead of the oven when it starts getting too warm out for the oven. You don’t need oil or cornstarch for crispy edges

I make this Thai Curry: Oil 1 red onion, diced 1 bunch of scallions, sliced at ½” lengths, on the diagonal 1 or 2 carrots, sliced on the diagonal 1 large red pepper, diced 1 Tablespoon ginger from a jar A few shakes of crushed red pepper 1 Tablespoon minced garlic 1 Tablespoon red curry paste (I used Thai kitchen.) 1 13.5 oz. can coconut milk dried basil 1 package pea pods, ends trimmed and strings removed, larger ones cut in half ½ cup water Soy sauce Cilantro, chopped Basil, sliced thinly Juice of a small lime In a wok, heat oil and cook separately the red onion until brown, scallions until start to brown, carrots until tender, red pepper until tender and browned, and set aside. Add ginger and crushed red pepper to the wok. Add garlic, stirring frequently to make sure it doesn’t burn. Add red curry paste and cook a minute or so. Add coconut milk, pea pods, water, dried basil, soy sauce, and reserved cooked vegetables. Cook until pea pods are tender crisp. Add sliced basil, cilantro, and lime juice. Serve over rice.

I have a pinafore apron just like that one, I love mine. after you launder it, put it in the dryer for a *short* while and it will shrink

I make this Thai Curry:
