I will give you a tip, if you add too much flour, it gets sticky, so we Mexicans have a bowl of water to wet our hands and make the masa ball and make the tortillas. To avoid using too much flour you can use saran plastic, we actually use a plastic bag, and the tortilla press, you can get one in Amazon. They're very useful. Thank you for your recipe. I make sweet potato tortillas but bake my potatoes and make oat flour from extra thick rolled oats. I think they taste better with the oat flour than the ones I made with white flower and are heathier. I use one cup of sweet potato to one cup of oat flower. I also use a tortilla press instead of a rolling pin. They puff up quite a bit in the pan and are very soft. Add some cinnamon for a little extra flavor.

Love this idea and I also love the fact that when you said a 2 ingredient recipe you meant exactly 2 ingredients. So many recipes I see on youtube say only 2, only 3 ingredients etc. and by the time they are done they've added 5, 6 or more ingredients to the recipe.

There was a place in Chimayo New Mexico next to this old old church, where this lady had a mobile cooking cart thing. She made all different kinds of flavored tortillas. My absolute fav was chocolate tortillas! She is long gone and I've never found them since. 😢 Thank youfor this. Fond memories and these sound delish.
Nice, simple recipe, and I appreciate your awareness about some people preferring (needing) a GF version. I love sweet potatoes that are orange inside. We have other varieties as well where I live. I have stopped eating white potatoes, as they are a nightshade vegetable and can contribute to gut microbiome issues, I'm trying to avoid. I now make baked sweet potato fries instead of fried white potato fries, and they are great.

One can mitigate the problems of white potatoes by soaking them overnight, peeling them, and boiling them -- but sweet potatoes don't have the same health issues, and I like sweet potatoes more than white potatoes anyway. We have been making a version of these for years now because we are gluten free. We do sweet potato with cassava flour/tapioca starch. When I am short on that ingredient we have made it work with corn flour or rice flour or a blend of any of these. Whatever we have on hand. My kids absolutely love them! This is called “stretchy bread” in our house because over the years we have started making them smaller in diameter and thicker to be able to fry multiple pieces at once in a large skillet. Ours look like hers before she starts rolling them. We either eat them as is beside other food or we use like a hamburger bun.
If it SAYS gluten free that's where they get you. Try chickpea flour or any other similar flour like corn flour. Where I live chickpea flour is cheap because many don't know it's value.

If you have a jar opener mat for helping to open jars, try putting it under your cutting board to help keep it from slipping. That’s what I do for my glass mixing bowls. 😊
Depending on your recipe keep on mond that sweet potato skin is edible and delicious too. I parbpoil with skin on and then pan sauté with chopped spinach olive or avocado oil and garlic. I serve with 2 eggs over medium on top. Comfort food that ticks all the healthy dietary boxes. Yummy!
Some have used gluten free flour for this recipe, not sure if the almond flour will allow them to be as flexible since white flour has the gluten in it. However with the almond flour you’d probably get a nice flat bread. 😊

Yeah, I realized I could have just used roasted sweet potatoes like I did in the past. This video I used boiled and forgot the potatoes absolutely a bit of the water making them more wet than the roasted were. You can definitely add more flour in the bowl first before kneading to have an easier time at it. 🤗🥰💕

If you use a circle cookie cutter, you can make petite desserts by cutting out little circles of dough after cooking, let cool. Then add a spritz of vegan almond whipped topping and sprinkle with finely ground nuts. Or smear honey on the circle, cinnamon, crushed nuts, and roll. Beautiful recipe.

Cut the sides of a produce bag. Then insert your dough. Use a clear glass pie plate and rock it around in little circles flattening your tortilla. Works with masa dough too.
I’ve never even thought of sweet potato for tortillas! They look delicious. Definitely will try this, probably with a roasted potato to keep more nutrients and more of a 1:2 potato:flour ratio since it seems like it takes a lot more flour in the end. Thank you

Also-I have an idea for your rolling pin bottle-you could fill it with ice, to keep your dough chilled, if you were making something that required that.
Put a damp paper towel, or two, under you board and it will not move. I was told this a while ago and have been using it ever since. The tortillas look great.

Don't have a tortilla press? No problem! Roll your dough into a ball then place on a sheet of parchment on your counter or cutting board. Place another sheet of parchment paper on top. Grab a heavy plate with a flat bottom (or something like a round glass or ceramic pie plate, just needs to be slightly heavy, flat bottomed and easy handle), place it over the sandwiched dough ball and press down as evenly as possible. There you go! Nice, round and flat tortilla, just need to peel it out from between the sheets of parchment to cook it up and you can continue using the same two pieces of parchment to make the rest of your tortillas. Simple! 😊 Personally, I would make these with a mix of walnut (1/4 cup), almond (1/2 cup) and coconut (1/4 cup) flour, mainly to add protein and give it a tiny bit of a crispy edge (from the coconut flour). Plus, that makes them both more filling and gluten free. I don't have gluten allergies or anything like that but this is obviously going to be sweeter than your average tortilla and using that mix of nut flours will play nicely with that, plus coconut flour absorbs a lot of water so you'll need much less flour. 😉 Also, if you want something healthier than all purpose flour but don't want to use nut flour(s), try white whole wheat flour or corn flour instead. It all works well! 😁👍

I'm all for improvising with what you have (I love your glass jar "rolling pin," lol) so I definitely looked for ways to make tortillas without needing to master the rolling pin or buying a ridiculously priced, single use, kitchen item (I live in NYC where kitchens aren't huge unless you're rich) so I went from pressing between two flat plates between sheets of plastic wrap (which was all I had at the time) to learning parchment paper works slightly better, then learning a heavy ceramic or glass baking dish makes it even easier. I learned of the difference in nut flours when learning to make healthier desserts when I got diabetes and I went from having to go to the hospital with my blood sugar at 500 to now registering as "pre-diabetic" so obviously I did SOMETHING right. 😅 I pass on what knowledge I can to you happily. 🥰 Actually, technically, the mix of nut flours I mentioned plus even the sweet potato itself can be eaten raw. Might be interesting to see you peel the sweet potato and puree it raw and then add the nut flour mixture bit by bit until you get a dough. Some people like to eat raw or almost raw foods too so it might be interesting to play with that mixture a bit. 😉👍

If it SAYS gluten free that's where they get you. Try chickpea flour or any other similar flour like corn flour. Where I live chickpea flour is cheap because many don't know it's value.

Depending on your recipe keep on mond that sweet potato skin is edible and delicious too. I parbpoil with skin on and then pan sauté with chopped spinach olive or avocado oil and garlic. I serve with 2 eggs over medium on top. Comfort food that ticks all the healthy dietary boxes. Yummy!

Some have used gluten free flour for this recipe, not sure if the almond flour will allow them to be as flexible since white flour has the gluten in it. However with the almond flour you’d probably get a nice flat bread. 😊

Yeah, I realized I could have just used roasted sweet potatoes like I did in the past. This video I used boiled and forgot the potatoes absolutely a bit of the water making them more wet than the roasted were. You can definitely add more flour in the bowl first before kneading to have an easier time at it. 🤗🥰💕

If you use a circle cookie cutter, you can make petite desserts by cutting out little circles of dough after cooking, let cool. Then add a spritz of vegan almond whipped topping and sprinkle with finely ground nuts.
Or smear honey on the circle, cinnamon, crushed nuts, and roll.

Cut the sides of a produce bag. Then insert your dough. Use a clear glass pie plate and rock it around in little circles flattening your tortilla. Works with masa dough too.

I boil my sweet potatoes whole and then peel with my fingers. Saves the step of cutting and keeps the flesh from getting waterlogged. 😊

Don't have a tortilla press? No problem! Roll your dough into a ball then place on a sheet of parchment on your counter or cutting board. Place another sheet of parchment paper on top. Grab a heavy plate with a flat bottom (or something like a round glass or ceramic pie plate, just needs to be slightly heavy, flat bottomed and easy handle), place it over the sandwiched dough ball and press down as evenly as possible. There you go! Nice, round and flat tortilla, just need to peel it out from between the sheets of parchment to cook it up and you can continue using the same two pieces of parchment to make the rest of your tortillas. Simple! 😊
Personally, I would make these with a mix of walnut (1/4 cup), almond (1/2 cup) and coconut (1/4 cup) flour, mainly to add protein and give it a tiny bit of a crispy edge (from the coconut flour). Plus, that makes them both more filling and gluten free. I don't have gluten allergies or anything like that but this is obviously going to be sweeter than your average tortilla and using that mix of nut flours will play nicely with that, plus coconut flour absorbs a lot of water so you'll need much less flour. 😉
Also, if you want something healthier than all purpose flour but don't want to use nut flour(s), try white whole wheat flour or corn flour instead. It all works well! 😁👍

I'm all for improvising with what you have (I love your glass jar "rolling pin," lol) so I definitely looked for ways to make tortillas without needing to master the rolling pin or buying a ridiculously priced, single use, kitchen item (I live in NYC where kitchens aren't huge unless you're rich) so I went from pressing between two flat plates between sheets of plastic wrap (which was all I had at the time) to learning parchment paper works slightly better, then learning a heavy ceramic or glass baking dish makes it even easier.
I learned of the difference in nut flours when learning to make healthier desserts when I got diabetes and I went from having to go to the hospital with my blood sugar at 500 to now registering as "pre-diabetic" so obviously I did SOMETHING right. 😅 I pass on what knowledge I can to you happily. 🥰
Actually, technically, the mix of nut flours I mentioned plus even the sweet potato itself can be eaten raw. Might be interesting to see you peel the sweet potato and puree it raw and then add the nut flour mixture bit by bit until you get a dough. Some people like to eat raw or almost raw foods too so it might be interesting to play with that mixture a bit. 😉👍
