Sweet Potato Tortillas Recipe // Only 3 Ingredients

  • Hi everyone! 👋 Hope you enjoy this simple sweet potato tortilla recipe! I use these tortillas for both breakfast wraps, lunch wraps AND dinner wraps! Haven't tried them for a dessert wrap yet, but that would probably work too! 😄
    The measurements I used
    4 sweet potatoes - 1260 grams.
    1 tsp salt
    610 grams spelled flour (choose whatever flour you like).
    This made 26 tortillas and the macros for each where approximately:
    124 calories | 3.8 protein | 23.5 carbs | 0 fat
    Instructions:
    As I mentioned in the video, there are no exact measurements for this recipe.
    Buy a desired amount of sweet potatoes.
    Peel, chop and cook in the microwave until tender.
    Add salt and mash with a hand mixer.
    Add flour until you get a dough that you can roll out.
    Roll out each tortilla and fry on both sides in a dry pan on medium heat until it bubbles up and becomes golden.
    Transfer into a damp towel immediatly after frying.
    Leave in the towel until they are cooled down.
    Store in a bag in room temperature for about 4 days or freeze them.

    Made these today. Delicious! I used cassava flour because I can't have gluten. So good and because I used the damp towel like you said, they remained soft. Perfect! Thanks for the recipe 😊

    I steam my sweet potatoes and then just mash with a fork. Also if i freeze them i separate the wraps with wax paper, place in a freezer bag... Thanks for sharing❤

      Why would anyone freeze a tortilla??? They keep in the refrigerator in a sealed plastic bag for weeks if not months.

      Homemade tortillas don’t last as long in the fridge as store bought. Also in my experience they stay more fresh and moist when frozen. 😊

    The sweet potato tortillas looked delicious! Here in Texas we eat alot of corn and flour tortillas, but I never thought of sweet potato tortillas! I will try them this week! Thank you for this recipe!

    You should try this with plantains if you can find them! I have made something similar with boiled and mashed plantains, a little flour (Coconut or almond) and coconut oil. I baked mine instead of frying but they were great.

    Thank you. While roasting on the pan try pressing down with spatula and rotating the in the pan, they will likely fluff up, that is what happens to roti and paratha in Indian cooking. Going to try it tody😊

    I would use multigrain and rice flour to make dough of any sweet potatoes. Not all purpose flour or wheat flour. Tortillas comes out so good and delicious for family.

    Thanks for your recipe, what I find is that because sweet potato is so soft it takes a lot of flour. So it might be good to do a trial run to estimate the amount of flour that should be used

    I'm going to try this with either millet flour or by cooking whole millet in the Insta Pot with the sweet potato. When possible I like to make it into a pourable batter instead of rolling it

      I just soaked it completely, then squeezed it and drained all excess water out. 😊

    Steam sweet potatoes whole in skins then skin falls off easy woth a fork and that way you dont have to use the microwave also cassava flour works

    Microwave potato in the skin. Then let cool and then scoop out. Much less work.

    Is "wrap" how you say tortilla in Norwegian? (Or is "wrap" Norwegian for burrito???) BTW, Regardless of the filling, whether it's eggs, potatoes, rice and beans, chicken or beef, or even cold cuts with cheese and lettuce, to Mexicans we just call it a burrito! ( Whereas, corn tortillas are used mostly for tacos enchiladas)

    Sweet potarttoes should be cooked in the oven with the skin on. Very easy to remove from the peel when cooked. Cook until the juice starts running out as the sugar in the sweet potato will be maxed. Microwave is the worst cooking method known to man. Does not enhance flavor and destroys the nutritional value.

      Hmmmm. I do not believe you are correct. All cooking can destroy nutrients. Microwave ovens typically do not brown food; browning food adds flavor. But for things that do not require browning, such as cooking root vegs quickly . . . .

      @@lindas.8036 I do not believe you are correct. Nukers do not enhance flavor. Roasting and frying do. Carmelization is the key to flavorful cooking. Zero carmelization in a nuker.
