From my experience growing up and from my own research (talking to my family/friends/online), lemongrass isn't a huge player in pho recipes, usually it's the star anise and the spices I've shown in my recipe. If you love lemongrass and Viet food, you'll love Bun Bo Hue (spicy beef noodle soup) - I'll make a vegan recipe and video of this soon! Thank you for your kind words
