Love all the different options for pho. I grew up eating the beef version, but my dad would add a whole chicken to our pho broth to round out the flavor and then he found out I like eating the chicken over the beef so he'd take the meat out early (as opposed to letting it cook until it falls apart) so I can have chicken instead of beef. Now that I'm older, I add both beef and chicken to my bowl of pho when possible. But then there are the meatballs and the tendon from the big chunks of bones....mmmm! We had regular Thanksgiving food last Thursday followed with pho for dinner. So good!
Yeah, I cannot imagine how vegans and vegetarians survive because there's just no way to get the same depth of flavor as using real bones in the broth.
My best friend who is like a sister is Vietnamese. She had her grandmother make some pho and I am absolutely in love. Whenever I'm sick she makes her grandmother make some and then she comes over and makes me eat it. I love her to pieces.

Where I live there is this pho place called "what the pho" and whenever someone in my family isn't feeling well we go there and it clears up our sinuses and colds almost instantly.
While my favorite is beef and tendon pho, I've been cutting back on meat for health reasons, so I am definitely interested in the vegetarian version. Not sure about the broccoli and carrots though. They're rather overpowering in flavor. Probably omit those and stick with doubling the bok choy and adding the herbs. I would also panfry the tofu to give it a better texture. Still a really good recipe though, and I can't wait to try it.
Made the chicken pho and it was amazing! To my taste I only did 1tsp brown sugar and it wudve been too sweet if I added more and I salted a bit more. I also did not have licorice root so did like the beef the anise clove and a touch of fennel seeds. Still was just like the pho I’ve ordered at restaurants

My boyfriend and I don't eat meat, so we always go for veggie pho. Ours is made with carrots, some sort of sweet cabbage, sugar snap peas, sweet onion slices, and lots and lots of sprouts. I add more sprouts than anybody could need, but I love them.

Sarah Elizabeth If you eat it everyday, it won’t give you all the nutrients you need to be healthy. Maybe a different one each day or two will work but your body will get so used to it, you’ll still be hungry after you eat it.

well, i'm not sure about the price of those bones in your place but it's around $3.5/kg of the aitchbone while i just spend more than $1 to get a whole chicken bone in Vietnam supermarkets not too expensive for a meaning self- cooking meal to your family, right? ^_^

Got the chicken broth for $8.99 at this market called Sprouts. Two packets of fresh pho noodles $1.49, 1 pack of thai basil weighing about .50lb for $1.75, packet of bean sprouts $.79, i used chicken tenderloin about 1.23lb for $6.31 at HEB. 8 limes for 1.99 at this asian market. Under $25 that serves 4 people. bout the same lol if people went out. I haven't made it yet hopefully i can have more than 1 servings. When my mom cooks legit pho with bone marrow i can eat pho for 2 days for under $30

for the Pho-lovers, don't squeeze the lime or put in any bloody dipping sauces BEFORE you take a sip of hot pho soup. taste on your own first, always!! I used to do that but since I've found the proper way to enjoy the broth, I don't want to add in anything more in my bowl of pho.

A lot of the Viet restaurants I go to don't put fish sauce in their Pho. I finally figured out why my bone broth always tasted gross. Thank you for this quick recipe I will definitely try it but without the fish sauce.

well, i'm not sure about the price of those bones in your place but it's around $3.5/kg of the aitchbone while i just spend more than $1 to get a whole chicken bone in Vietnam supermarkets

Got the chicken broth for $8.99 at this market called Sprouts. Two packets of fresh pho noodles $1.49, 1 pack of thai basil weighing about .50lb for $1.75, packet of bean sprouts $.79, i used chicken tenderloin about 1.23lb for $6.31 at HEB. 8 limes for 1.99 at this asian market. Under $25 that serves 4 people. bout the same lol if people went out. I haven't made it yet hopefully i can have more than 1 servings. When my mom cooks legit pho with bone marrow i can eat pho for 2 days for under $30
I’m just wondering, why did you replace star anise in the recipe with licorice root for the chicken version? When I smell star anise I realize that it smells like licorice but what made you decide to use licorice root instead of star anise

for the Pho-lovers, don't squeeze the lime or put in any bloody dipping sauces BEFORE you take a sip of hot pho soup. taste on your own first, always!! I used to do that but since I've found the proper way to enjoy the broth, I don't want to add in anything more in my bowl of pho.

iiiSnowheartiii Yes me too! I think that people can eat their pho however they want to. There shouldn't just be one way to eat pho; lots of people believe adding lime and sauces is the best way but others may disagree. When you said 'the proper way to enjoy the broth' really got me.
A lot of the Viet restaurants I go to don't put fish sauce in their Pho. I finally figured out why my bone broth always tasted gross. Thank you for this quick recipe I will definitely try it but without the fish sauce.
