Not a lot of people know about the vegan dishes in Vietnamese cuisine. She simply introducing this side you the world. She's doing a good job. There are a lot more Vietnamese food that is vegetarian. We call it "chay", if you look it up any Vietnamese food and add the word Chay, you will a vegan counter part of any of the dish u find. Example, "Pho" add in "Pho Chay" and you find 100 recipes.

I need to try this place next time I'm in Portland! I went to Berlin last month and noticed vegan Vietnamese restaurants everywhere! Typically in America Chinese dominate the Asian cosines. Pleasantly surprised hehe

It's a fact that the human mouth is evolving to open wider on a vertical axis to accommodate the modern vegan cuisine served in Portland, LA, and NYC. Look it up.
Chef Thuy should open a Mama Dut restaurant in Little Saigon California, there's nothing like that here despite there're lots of vienamese sandwitch shops in town of little Saigon.
The chef’s comments about vegan being part of Vietnamese culture is interesting. I’ve worked in a Vietnamese restaurant as well as spoken to many Viet resto owners. All of them said “chay” means vegetarian, that there’s no word for vegan in the language, and that a chay item is not guaranteed to be vegan. But a given dish might be accidentally vegan. But I sure do wish the Viet restos around me had any of her dishes - especially that limeade tea
yep. traditionally, chay means no meat or eggs, but dairy is not always off limits, if available. People didn't really eat dairy back then though, so effectively chay foods were vegan. I ate chay twice a month for over a decade and it wasn't until I was in my teens that my parents decided pizza was allowed.
"being vegan is white"?! Why are featuring bigoted NON VEGAN racists on your channel? She uses honey, she is not vegan, she is a BUSINESS person who learned to cook on YT ffs. No wonder her restaurant has so many bad reviews online. I love your channel, but this aint it. Please promote ppl with ETHICS.

Good point. Though I've been told that even chay can include fish sauce. It really depends on the restaurant/ cafe.
