  • These keto vegan shortcrust pasties are so satisfying and comforting to eat. They’re delicious both piping hot or in room temperature. They make great work lunch or food on the go. Who can resist the combination of crusty pastry and delicious fillings? I certainly can’t!

    INGREDIENTS
    ---------------------
    (Recipe make 6 pockets)
    Shortcrust pastry:
    200g ground almonds/almond flour
    (or 90g coconut flour)
    80g lupin flour
    4 tsp psyllium husk powder
    2 tsp xanthan gum
    1/2 tsp salt
    1 cup hot water (may need more if you’re using coconut flour)
    Filling:
    ½ medium cabbage
    1 carrot
    A large bunch of coriander
    Some spinach
    2-3 cloves of garlic
    1 pack of shirataki noodles
    Seasoning:
    White pepper
    Soy sauce
    Salt
    DIRECTIONS
    -------------------
    1. Chop all ingredients for “filling” in desired size pieces. Saute all “filling’ ingredients together, season with soy sauce, white pepper and salt to taste. Once all vegetables are cooked and softened, leave to cool completely to room-temperature.
    2. Place all dry ingredients for the “shortcrust pastry” in a mixing bowl. Mix them together with a spatula. Add in 1 cup hot water (Best to add ½ cup at a time, in case you need less) mix then knead the dough thoroughly till the texture is moist and smooth. It shouldn’t have any graininess. Leave the dough to rest for 15 minutes.
    3. Divide the pastry dough in 6 portions. Roll out each portion with a rolling pin or tortilla press. Scoop some filling mixture and place in the centre of the rolled out dough. Gently fold in half (follow the instructions of the video), press the edges together and then fold in the edges to create the pleated pattern. This will secure the pasty filling.
    Place the pasties/pockets on a greased baking tray, brush each pasty with oil.
    Bake in a 180C/350F preheated oven, 15 minutes on the first side, flip the pasties and bake the bottom side for 10 minutes. Flip them back and brush more oil on the top and bake further 5 minutes, till the surface is golden brown.
    And enjoy!
    STORAGE
    -------------------
    You can freeze the pasties before or after baking. To eat them, bake them in 200C/400F preheated oven (no need to defrost) for 15-20minute till they are thoroughly warmed through.

    About 20 months ago I was diagnosed with prediabetes. So l went on a low carb diet. Having searched the internet for recipes I came across your TH-cam Channel and I have to say your recipes are amongst my favourites and I am no longer a pre-diabetic. But I still stick to a low carb diet why wouldn't I with delicious recipes like yours on youtube so thank you very much for sharing them with us. You might even have save my life. Thank you.

    If you make a tiny slit on top before baking, it helps to prevent the hollow effect inside. This filling is fabulous. We made a Mexican version too. With Cilantro and cumin. Thank you for the dough recipe!!

    Another superb recipe. Cannot wait to bake them in the airfryer. They will come out crispy on all sides without having to turn them over too!! ( i bake empanadas in this way)

    I just made these for lunch, omg, delicious. I made mine good for ketchup, delicious. I am going to make these smaller - empanada sized. There is so much you can do with this dough. Jamaican Patties, Cornish Pasty's, Calzones, etc...

    Ok I tested in my pie maker and it worked well. I'm very thankful for your recipes. I can't have dairy or gluten. As I said I did the coconut version and it needed lot more water. Very yum. Pastry kept well in fridge . I've frozen some pies. I've eaten them for 3 days for lunch lol.

      Exactly, here we call them "empanadas", mostly filled with meat but many people try different ingredients. And they are smaller.

    I use fine grounded flaxseed with some spices instead of almond and lupin and fine psyllium husk only without xanthan gum , follow ur bread instruction for keto bread , for filling I fry spinach with onion and some spices good work big love from Iraq

    I have been making something like this (in a way) as convenient lunches as I work on the road so lunch is often in the car. I have been using a variation of your classic bread recipe (without the flax) and rolled out into thin sheets then folded or rolled around (cool) fillings and warm proved until fluffy risen, then baked. I do bulk runs and freeze the excess, an item defrosted overnight in the fridge is ready for my lunch next day. A sort of filled bread roll.

      It makes perfect sense! This is how Cornish Pasty came about. An all-in-one meal without the need of cutlery for workers on the go. Love the way you do it.

    In India these pockets are usually filled with sweet fillings dry fruits or sweetened lentils they have different names in different parts of country like Gujiya , karjikayi or kadubu they are made with shortcrust dough ….Samosa too is similar but it’s savoury & shaped differently.

      If you put hot oil or butter to the dry flour mix before adding water n mixing dry ingredients well with fat would make the bread ( pockets) very crunchy even when cold & you can even reduce baking time I guess .

    Oh my gosh, you are making South American empanadas! I’ve been trying to figure out how to do the edging. I’m so glad you’re doing it in a video. I’m also glad you’re doing good vegan.
    I have a recipe for empanadas, but I didn’t know how to do a vegan filling. Cutting up the shiitake noodles is something I never wear it considered! I wish I were as experimental as you.

    Made a beef and veg pie. 15min in air fryer. Looked great tasted yum. The coconut flour taste didn't come through as much.
    I'm saving dough in fridge. Made chicken filling. So I can try out tomorrow in the pie maker.
