    Hi Uncle Matt! I wanted to come back to you to report on this recipe. The pastry was amazing...the smell was incredible...and the taste was fab. I made an onion/mushroom/bacon tart with mushroom cream cheese and a little cream. Thank you for your video and your time. My first experience of keto pastry was positive and I will be making more.     This pastry tasted really good with my quiche. I did make a double batch as you suggested. Had the same size pan as you. It was tricky getting it in the cake pan. Actually I did get the bottom in but the sides fell apart and I had to patch all the sides😂. Nothing like your professional touch. But it turned out great

      it's unavoidable that this pastry will tear while working so having to patch it up is inevitable, put aside the difficulty of working with this dough, when baked it tastes great in my opinion. Thanks for taking time to comment

    Just found your channel and subbed. I'm fairly new to keto, around three months, and am still feeling my way about. This looks like a lovely quiche, and im looking forward to trying it.
    Is there any chance of seeing a recipe for pastry for a "sweet" pie? I'd love to be able to take advantage of natures bounty of berries this su.mer and to be able to have pie. Cheers!

      I've tried some keto recipes that are not good. This one however is really lovely. The pastry is so crumbly though so do use the parchment when rolling

      Good luck, if you find it takes over your life as finding low carb options in restaurants is difficult. You can allow yourself cheat days.
      I now just try to avoid cabs and sugar most of the time

    I enjoyed your TH-cam - just wondering if you could try some keto without the almond flour, do you think we could exchange for sunflower flour/meal? My daughter has a nut allergy

      I wish I knew more about this, I'm still learning. I've tried some recipes use coconut flour and it's super absorbent so without sunflower flour I couldn't even guess, sorry

      I would reccommend Lupin flour. Its absorbent and a little tricky to work with, however it does work. There are other flours that the Keto community of youtubers also reccommend. There is South African lady “ Cook with Mel” who uses a version of flour she calls clean prep flour. She uses Chicken flour and a blend of other flours.
      I’m vegetarian and so I prefer to work with nuts and seeds. I have experimented with seeds such as pumpkin, sunflower and chia combined, to make bread, however, not sure about turning that into a pastry. I’ll come back and let you know. Thank you Uncle Matt for your wonderful contribtions 👍🏽

      Thanks so much. When you say little balls I think you're referring to the ceramic baking beans?
      They are designed to hold the pastry in place so it doesn't puff up, we call this blind baking.
      You can use dry rice or beans also.

    I always think the coconut taste comes through from the flour ya know?? I love real pastry but replicating it is hard work 👍

      my daughter says the same, it's odd as I don't get that flavour. I imagine this recipe would work if you replace the small amount of coconut with extra almond or maybe an alternative keto flour such as lupin, that would work just fine?

    Fantastic. I've really needed some recipes to use up my lovely almond flour. I'm quite into my gut health at the moment and Prof Spector at Zoe was saying you need to eat 30 different veggies/pulses/beans/seeds/grains per week for optimum gut health. It doesn't have to be much, either. Like a tiny bit of soaked quinoa in an omelette counts....or your almond and coconut flour, here, would count as two (3 with onions). Using veggies in cakes is a good cheat he said, like beetroot or sweet potato etc I'll try and link the vid, Matt.       it's interesting that when I started taking an interest in your health that I'm discovering that the hunter gatherers were probably a lot healthier than we are? I'm sure that GMO's etc are necessary to feed 8B people but the more natural foods you can eat the better you'll feel.
      I've been adding mixed seeds to my packed lunch salad for a while now, I do it because I like the texture and flavour but also they have to be good for me?

    What would you substitute for the parmesan if you were going to make something sweet?

      I've considered this and my best idea at this point would be a little xylitol or alternative sweetener. Then when working with the pastry if it was a bit to wet, I'd add a little more coconut flour, but taking care as it is really absorbent.
      I really should have a try then I could make another video?

      Thanks mate, I've been getting some really good views on Rumble lately. I just think TH-cam is not interested in my channel, shame but I have paid for promotion before and got very little results?

      @@hubrisnaut thanks for letting me know what I already suspected, i occasionally get a little boost of suggestions but this never lasts long.
      Looks like youtube decided a few years ago to be the next netflix and you can see they promote mainstream content and have forgotten what made this platform so brilliant in the first place.
      Rumble currently has a lot of political content where the more conservative creators have been pushed to, there's also a lot of cute cat style videos and it feels like early youtube time to me.
      The bonus for anyone with a large catalogue of content is that I can upload any of my videos on Rumble and monetise immediately so I'm currently making some money there.

If I watch an episode of Kitchen Nightmares, my suggestions are flooded with Ramsey stuff. Also repeated suggestions that are unrelated. Until about a year ago at least one of your other videos would be suggested. I'll be setting up a account at Rumble.

      Well like I've said the keto label is not quite accurate for me but it's a lot more catchy than low carb, low sugar?
      I've kept fruit and alcohol in my diet as this needed to be a lifestyle change and I know that doing proper keto would never worked long term for me.
      I have to say though that giving up potatoes, rice, pasta and bread was a lot easier than I thought it would be, sugar was no issue as I never really had a sweet tooth, but in costco they have some very nice keto sweets, so if me or my lady crave a treat they are in the cupboard.
      My lady has also not given up potatoes (she's Polish) and she's been losing weight as well so you can get slimmer by maybe just cutting out wheat and sugar, worth a try?
