I read a lot of UK set mysteries and historical fiction. The meat pies, pasties and cheese and onion pie ... along with other goodies always sound wonderful and bit by bit as I see recipes, I make them. Can’t wait to try this one - thank you!
Not too sure if it’s a North/South thing, as I grew up in East London and pies were part of growing up, except for me it was pie, mash and ‘green liquor’ - perhaps it’s more working class culture, as in the 50’s & 60’s pastry was cheap and filling meal so allowed you to feed a family on little money. This sounds like a Monty Python thing… “You think you had it hard…” 😆

I am glad you have shown this because I have made individual Pies in individual little Pie Dishes but I wanted to use those Foil thingies so I could freeze with confidence instead of in the Pie Dish. However I consider myself Ham Fisted in delicate matters and looking at the Foil Things and my big Mitts I was not confident doing that task and every other on-line person like yourself sort of glosses over the process and they are magically done. I now feel more confident thanks to your - as usual - down to earth presentation and I will now give it a go. In all fairness wih a different filling. Relevent question regarding freezing three and eating one - which is my normal way, freeze before or after final baking? With my Pie dish ones I baked first, but not completely and baked from frozen until done. What would be your recommendation? Sorry for going on a bit but I could not think of a way of summarising and still making any sense!!
Had cheese and onion pie for the first time on a trip to Greenwich to see the observatory (Goddard's Pies) and was absolutely blown away. Been looking for a recipe to make it here in the states and am going to give this a try! Also, I've never before seen an oven where the door slides under and out of the way, I've got to keep my eye out for one of those the next time I'm in the market for an oven!

You can’t beat homemade cheese and onion pies. These look great, Nicki. Where abouts down south have you moved to? Are you settling in okay? I’m currently in South Yorkshire but looking at houses in East/West Sussex. Any advice on house hunting when you’re so far away from where you want to move to? Thank You x

Looks lovely, but sorry I just can't get my head around putting potato and cream in with the cheese and onion. On this one I have to agree with another comment, my ancestors would also be turning in their graves. They taught me that cheese and onion pie only consists of cheddar cheese and onion filling, no potato nor cream. If this is what is in a chippy (i.e. Hollands) pie filling consists of I now know why I don't like them.

that size she cut for the tins didn't fit so why not just cut the pastry bigger ???

To stop the pastry bubbling /rising up while it is blind baked 😊
