A traditional British cheese and onion should never be made with cheddar. Should always be made with a cheese that doesn’t melt completely. Lancashire or Caerphilly are the right cheeses to use.

Hi Trevor, you don't have to put any ground pepper if you don't want to, it's just a suggestion. It doesn't look like it in the video, but this pie was quite big so it could take a lot of pepper as it is off set by the double cream. Thanks for your comment, I will think about this in future videos.
Delicious recipe that turned out fantastic, however deviated sligtly as follows:- 500g strong white bread flour + a good pinch of salt 250g of salted butter Save back some water and add as required to create the correct pastry consistency - was a bit too wet even with extra flour 500g of chopped onions fried in butter + a good few twists of black pepper 400g pack of extra mature cheddar cheese (grated). Pastry and filling was amazing, definitely worth the effort of making your own pastry - will make a good thick pie base and lid.
I think the eggs bind it altogether. But doesn't say if time were greased. I will let you know how it tasty and I have not used that amount of pepper. Wish me luck.
250g butter in the pastry - this is over half a pound ! 700g cheese - this is enough for 4 pies the size shown ! 3 tablespoons of pepper - this is enough for 20 pies ! And furthermore, hot water pastry does not work with cheese and onion - I know because I tried it !

No egg in cheese and onion pie, just onion and grated cheese, not cheddar, half a teaspoon of mustard, I use creamy Lancashire and double wenslydale, cheddar is to greasy.
This is a verry difficult way of making a pie i make up to 100 pies a day and i couldnt work the way this guy works it would take me days just to make 50

never eat a pork pie??, they are made with hot water crust pastry. I would make the fat content 50/50, lard and butter....
