    How to make Sticky Toffee Pudding, a full baking tutorial.
    TIMINGS
    Prep Time: 15 mins.
    Cook Time: 45 mins.
    Total Time: 1 hour.
    SERVINGS
    Makes enough to serve eight people.
    INGREDIENTS
    For the Sponge Pudding.
    10½ tablespoons (125g/4 ½ oz) butter.
    ¾ cup (150g/5oz) light muscovado sugar.
    1 tablespoon of treacle.
    1 tablespoon of golden syrup.
    2 eggs.
    1 teaspoon of vanilla extract.
    1¼ cups (150g/5oz) self-raising flour.
    ⅔ cup (150g/5oz) dates, chopped.
    1 cup (250ml/8.5floz) water.
    2 teaspoons of bicarbonate of soda.
    For the Toffee Sauce.
    7 tablespoons (100g/3 ½ oz) butter.
    ¾ cups (150g/5oz) dark muscovado sugar.
    3 tablespoons golden syrup.
    ⅔ cup (150ml/5 fl oz) double/heavy cream.
    1 teaspoon vanilla extract.
    Pinch of salt.
    To Serve.
    Vanilla ice cream, whipped cream or custard.
    METHOD
    1. Preheat the oven to 180℃/160℃ Fan (360℉/320℉ Fan) Gas Mark 4
    2. Grease a 20cm/8” ovenproof dish.
    3. Chop the dates and place in a saucepan with the water and bring to a simmer.
    4. After cooking for a couple of minutes add the bicarbonate of soda taking care as this mixture will foam up. Set to one side.
    5. Beat the butter and light muscovado sugar together until light and fluffy.
    6. Add the golden syrup, treacle, eggs and vanilla extract and continue to mix.
    7. Add the flour, continuing to beat until it’s all mixed in.
    8. Add the date mixture and mix until combined.
    9. Pour into the prepared ovenproof dish.
    10. Bake for 40-45 minutes, or until firm and springy to touch.
    11. The toffee sauce, melt the butter, dark muscovado sugar and golden syrup together in a pan.
    12. When the sugar has dissolved add the cream, vanilla extract and salt.
    13. Bring to a slow simmer for 4 minutes until the toffee sauce has thickened.
    14. Remove from the heat and allow to cool for 1 minute while continuing to stir.
    15. Pour the sticky toffee sauce over the pudding reserving some to pour over the pudding when served.
    16. Serve with vanilla ice cream, custard or cream.
    17. Mmm Scrummy!!

    I had the great pleasure of trying sticky toffee pudding for the first time during a trip to England in 2017. It immediately jumped to #1 on my list of favorite desserts of all time. Just watching it being made fills me with happiness!

    Can i make the sponge and the sauce the day before eating and then just blast each portion in the microwave before serving

    Hey for the pudding is it normal butter or unsalted?

    Can we use light brown sugar instead of dark brown sugar for the sauce ?

      Yes you can Nabiha - the sauce won't be as dark but will still taste delicious x

    Can we alternate dates. I don't like them

      yes you can but not tried anything else here are some options: Figs - Dried figs offer a similar sweetness and texture. Soak them in hot water like you would with dates.
      Raisins or Sultanas - These can add sweetness and moisture. You may want to chop them and soak them to soften.
      Prunes - They have a similar sticky texture and work well in place of dates. Prunes add a slightly different but still delicious flavor.
      Dried Apricots - These provide a more tart sweetness but can still contribute to the moist texture of the pudding.Whichever substitute you choose, keep in mind that the flavor and texture will vary slightly from the traditional date-based pudding.

    Step 2 mentions- 2. Grease a 20cm/8” round ovenproof dish. However the dish in the video appeared to be a rectangle. What baking dish should I use?

      Hi there an 8-inch or 9-inch square tin will be fine. If you don't have one it will work in any 8" or 9" round tin Thank you x

      Yes you can - golden syrup is easy to make too :)

      In Canada and USA golden syrup is corn syrup.

    What is treacle, muscovado sugar??

      Treacle is molasses in the United States - if you don't have you could use golden syrup instead the mixture won't be as dark but shouldn't taste any different:)

      Dark brown sugar - muscovado is a brown sugar but very fine when you open the packet it's all stuck together. If you have dark brown sugar use instead:)

      If you can get molasses or treacle you can make your own with white sugar. Not difficult to make :)

      You could leave the dates out. I've seen recipes without the dates but it's just basically a sponge . I wouldn't use raisins but prunes would be another option :)

      It's possible to make golden syrup if you can't get it. It's only sugar, water and lemon juice cooked together. lots of recipes online to make it. Maple syrup or honey would be a good substitute either. I wouldn't add more treacle :)

    Looks divine, but don’t add vanilla to a very hot pan. If the alcohol in the vanilla cooks off the vanilla loses a lot of it’s flavor.

      @@ScrummyTV 3 tablespoons of Black Treacle - gives it that deep and rich toffee taste and then can dispense with the dates altogether. Though that's just my preference - lots of people love dates.
