    One detail I noticed and appreciate is that you can hear a baby (I'm assuming Sohla and Ham's baby) occasionally in the background, which just feels like it's a good way of normalizing being able to balance parenthood and work, in a way.

      I did like his tip on using a meat grinder instead of a food processor. But when I make my own falafel, I start with my chickpeas in a food processor and an onion and kind create a paste and then add a little more chickpeas at the end so you get a couple different textures.

    I honestly have no idea how Ham manages to multitask that hard every episode. Everything he does would take me like 3-4 hours if I tried to do it myself. Crazy. I mean Sohla is crushing it too, but I feel like I blink and Ham's done a whole entire dish in the back of the set.

    I gasped when Sohla suggested making soan papri in that amount of time and without much experience. Glad no one got hurt tbh. I wish she’d gone with halua, but I’m so impressed at how she saved the day and stumbled upon a new tasty ice cream topping.

    The thing that Sohla ended up making is kind of like a legit Indian sweet! It's besan laddoo - but usually it's soft not crunchy, obviously the sugar crystallized in this case. I have never thought about eating besan laddoo with ice cream but it sounds amazing tbh! It's very rich, thick and has a peanut buttery mouthfeel, like Sohla mentioned. The dessert would have also tasted amazing with some ghee toasted cashews, since that's a traditional component of besan laddoo.
    What she was originally trying to make is soan papdi, which has similar ingredients but different technique.
    I think my takeaway is that I need to start eating Indian sweets with ice cream, haha

    As a former pastry cook who still sometimes does stupid stuff like forget to set a timer and burn the cookies, it's really comforting seeing someone as talented and knowledgeable as Sohla fully admit when she doesn't know something or makes a silly mistake - it's a good reminder that no one is perfect no matter how good at something they are, and the important thing is to save what you can, move on and just enjoy what you're doing. Thanks for another great video!

    I love these, and I'd be perfectly happy ignoring the "timed" aspect and watching an hour long video of this same menu. I also loved how you created a new dessert, Sohla! Your knowledge and experience, and the fact that you were willing to keep trying and think if something different, meant that you may have created a magical new dish. I'd watch an in-depth video about the process in a heartbeat!

    Every Mystery Menu is not only some wonderful food and shows me things from well outside my usual experience, it's also like a big hug. I love how things stay so comforting even when it goes wrong because there's never blame or accusation there's just support.

    So much empathy for Ham. I’ve definitely gotten myself into projects that ended up involving having to get too much stuff through too small and too fine a sieve. That moment when you realize you’re stuck doing with the inadequate tools at hand and how much repetitive physical effort and how long it will take is definitely a, “My soul is tired” moment.❤

OK - so I guess I'm saying forget the race against time. Can you make these videos longer and allow Sohla and Ham more time to teach us? If they want to do that?     I actually find it really reassuring to see even professional chefs mess things up and have to start over, even multiple times, and figure out how to rescue what they messed up. Makes me feel a lot better about my own mistakes.

    So impressed by how Ham has changed as a presenter/host over the course of this series. It felt like maybe he was a little shy in the earliest episodes, he's so charismatic and fun to be with on screen with the experience he's developed.

    For the patisa/soan papdi, just in case Sohla would want to try again, I'd recommend a couple of things:
    A. When the sugar is poured on the silpat, cool it by agitating it with a spatula and slowly turn it into a ball, and then start to twist it like you would the beginning of taffy/dragon's beard; if you leave it unattended it will never be workable (guess how I found this out)
    B. Instead of making a roux, toast/dry roast the chickpea flour in ghee/butter (and spices) and then use that when you're pulling the sugar, just like cornstarch in dragons beard
    That said, Sohla did wonderfully in the circumstances 💜💜💜 I wouldn't be able to manage anything in an hour, although Sohla might be able to make besan ke laddu instead??

    I LOVE that Sohla went from Mysore Pak (the Indian fudge made from chickpea flour) to Soan Papdi (the pulled sugar coated in chickpea flour) in 2.2 seconds as possibilities for a 60 min challenge. Ambitious but still able to be practical and improvise. Never change, bestie.

    Hi sohla! I am a bartender. Love the different cocktails you make for each challenge. I wanted to let you know that aquafaba (chickpea liquid) can be used in cocktails as an egg white substitute. When shaken it foams the same way egg white do. I work at a bar where all our cocktails are vegan so we make our drinks with aquafaba. I was hoping you'd do this in this episode but I realized it's probably not as common as I think it is.

    Possibly not an intended effect, but as someone not from the US this was a fascinating look at the inside of an American grocery store. The shelves are so full?? Like it's all so packed in, no space above the items, and they're all pulled to the front. It actually looks a little overwhelming! But interesting to see.

    Giving these two chickpeas? It was almost too easy-but they’re pretty good at getting into trouble with ambitious ideas. Also I loved ham’s labor of love with the hummous from dry beans.

    I think Sohla was trying to make soan papdi, which is a chickpea flour based sweet with the stretched sugar. Honestly, it's super hard to make just because the steps are so particular, and it's admirable that making a soan papdi- like sweet was even attempted 😂 Loved this episode, love their dynamic

    it is so normal in indian households to soak chickpeas overnight and cook them the next day in pressure cookers. Chickpeas taking long to cook does not even come up in our first thoughts upon seeing them

      Soaked dried chickpeas truly do have a fresher taste than the canned ones. There simply wasn’t enough time here.
