If you watch other videos and try to sneak a peek, more chefs use the compost bowl but dont mention it... its always that huge silver bowl, I believe Gaby started it!!! I know Carla uses it ALL the time and so does Brad (0bv) and I thiiiiiiink Rick.
I always assumed they did before, so the first time I heard it mentioned in a recent video (not this one) that they just started composting, I was lowkey horrified. I'm fairly certain NYC restaurants of a certain size are technically supposed to compost by law. But the test kitchen would be in a different category, so I don't think there's any composting legislation that would apply to them. Regardless, it's awesome that they finally started.

I've made this two times already, it's one of those things where you don't need any crazy ingredients and you can make it any time with anything you have on hand. First time I've followed the recipe and the second time I used just onions and cilantro instead of parsley. It's really about the lentils. I keep coming back to this video. I like the energy, the calmness, the professionalism. Same reason I keep rewatching Chris's videos. And this one has both of my favourites!
Sohla is absolutely the best. The details she includes, like making a flat surface on the zucchini before cutting, makes this so accessible for me.
