Poor Nonno and how he had to go through WW2. My grandfather fought in WW2 and Korea. He enlisted at 16. Was fighting at 17. He was just a kid. I miss my grampa John. He was special.

I think your grandparents should tell more stories about the war and the difficult times their families had to endure. Personally, I love first person historical accounts on any subject. But, WWII was not that long ago and it affected much of the world. Of course there’s a political reason for war, but it’s the innocent people who suffer. Most people in the world want one thing, happy and healthy children that have more opportunities than their parents and grandparents. Your grandparents are perfect examples to demonstrate how to overcome adversity and how to give their children a life beyond anything they had when they were young. Your grandfather told the story about eating the rotten tomatoes, but maybe it was the tomatoes that kept him alive long enough to find his next meal. To think if he had decided not to eat those tomatoes, he might have died due to starvation. Without your grandpa, Julian, you would not be here, cuz your mom would not be here and to connect your existence to a table full of rotten tomatoes your grandfather decided to eat is mind blowing. I hope you’re recording way more than what you share with us, because your grandparents stories about survival in Italy are priceless. May I suggest, Julian, go stand in your grandparents beautiful upstairs living room and take in the lush decor and art work, then imagine the stark life they came from during the war and the ruins they saw afterwards. From then to now….their accomplishments are unbelievable and their story is beautiful. They are modern day Heroes, who need their story to be told and shared. They have so much to teach us❤

I make mine similar to this, but no Cheddar and no Parmesan. And no breadcrumbs on top. Just a piece of fresh basil on top when they come out of the oven. This recipe kicks it up a notch. I am going to try it!!!!
