@@gloriaalex11 🤔Well sure, whenever Babcia made them for us they were just always perogies, or you know little slices of heaven you could never get enough of. Still going to give Nonna's recipe a try, and yeah go hit my favourite Polish restaurant for some perogies. Sadly Babcia and her recipe have long since passed away.

She loves roasted red pepper spice lol, but also uses traditional spices such as oregano, basil, and bay leaves in many of her dishes

I love pancetta but I can't afford a pound at a time. Looks like a delicious and hearty winter dish
You can substitute pancetta with bacon and some cubed pork loin. Cheaper and delicious too.😊

Would it be fine to use yellow onions instead of red? I don't like the flavor of red onions, but I really enjoy the texture and flavor of yellow, but don't know if it would alter the flavor too much.

Love Nonno's comments about rap. I was once in a restaurant bar and the girl standing at the side of me had a Tshirt that looked like it said "Stop Rap." I asked her about it and she turned to let me see that it said "Stop Rape." Of course that is an important and powerful message. But I had to comment that "stop rap" wasn't a bad idea either. WHERE are the recipes? I see ingredients mentioned on the screen which is good but last bit was missed out? Was it parmesan cheese?
I think so, she said it in the beginning of the video.
I don't think nonna mentioned the type of cheese she used.
But anyway it could be eigther PARMIGIANO (cow cheese) or PECORINO ( sherpa cheese).
It is " customer choice".
Probably, because of the PANCETTA (quite a robust taste) i would use the PECORINO which give additional robust character to the pasta (LA MOLISANA...one of the best brand in Italy!).
Of corse you must have a glass of good red wine next to you!!!
