Oklahoma Joe's Bronco Pro - Thanksgiving Turkey

  • On this video I hang and smoke up a 14 pound full turkey for Thanksgiving Day! I used the Tony C's for an injection and a few simple rubs to give this bird some outstanding flavor! Hanging a full bird just gives it a out of this world flavor and is probably one of the more fun ways to cook a turkey! I used B and B oak lump charcoal and a few chunks of applewood and maintained pit temps between 275-295F throughout this whole cook. I pulled the bird off when the breast hit 161F and let it rest for about 45 minutes and then had a Thanksgiving feast with allllll the good sides!     Turkey is one of my favorite things to cook and eat. Hanging and injected one in a drum smoker is my favorite method to cook one. I loved everything about this video but the hoodie you were wearing. LOL
    Just call it “Tony’s” Yet it is pronounced “Sha-Shure-Ree's”. It’s Cajun French not Italian.

    Really nice cook there Horse......I've seen quite a few rotisserie cooks this year and it's nice to see a bird hanger for a change. Looks amazing.... Nice job and cheers!

    Any tips on smoking with the smaller Bronco. My food comes out a little to acrid for me after choking it down to lower temps.

      Hmmm if you add wood I’d say back off on how much you use. And using lump coal should help with that.

      Bronco Pro only comes in Orange. He's cooking on a Bronco. As for the acrid taste, let you wood ash down before adding your meat. I've done 18# briskets on my bronco and it will hold at 225 for over 20 hours.

    So did the baffle plate make a difference? I own the Bronco Pro but I’ve never used it, just let it drip on the coals.

      Hard to say but I’d lean towards it tasting about the same.

      @@MadHorseBBQ cool. Im a new subscriber. I like how you use both pit barrel & okj bronco. I have a wsm & the okj Bronco Pro, but I run both like a pbc. I feel both give you a little more versatility than the pbc (like closing the vents after cooking to save your coals).

    Love your channel. Did I hear you correctly that the turkey is brined? I have an OJ Bronco and can’t decide if I need to both brine and inject.

    @Mad Horse BBQ ... Looks great! I plan on doing my own next year. I also plan on purchasing the Oklahoma Joe pretty soon as well. For your experience, how accurate is the thermometer that comes with it?

      Hey thank you very much! And not very accurate. I’ve never been a guy who trusts the lid or grill thermometer. I always use a digital. But the Bronco pro is an awesome grill and I can about guarantee you won’t be disappointed.

I use an Intellitopia digital thermometer with built in probes in another grill that I'm ready to ditch so I just wanted to inquire before replacing the one that comes with the Joe. I plan on getting one of those BBQ tubs as well. Excellent looking product. Thanks again and been enjoying the videos!

    Perfect color! Great job. Do you use the smoker's thermometer or are you using a probe on your wireless thermometer for your pit temp?

      Thanks! And I use a digital thermometer to monitor pit temps. I am currently using the Thermoworks X4

    Also: I’ve been using the Pit Barrel turkey hanger in my Bronco Pro, so it hangs breast down. I noticed your turkey hanger has the breasts up. Do you think that makes a difference?

      Again I’m not positive but my thought was to protect the white meat and attempt for it not to dry out.
