Oklahoma Joe's Bronco Pro - Pork Butt

  • On this video I smoked up about a 10lbs pork butt! The weather wasn't the best during this cook but the Oklahoma Joe's Bronco Pro ran like a boss! I used a combo of B and B Oak Briquettes and chunks of Post Oak for the fuel, kept pit temps between 275-300F, and I used a homemade rub! The flavor on this butt was top notch but to me it pulled a bit tough but she still ate just fine! So to wrap up I would have to say that the Bronco Pro is quickly becoming my favorite smoker and for anyone in the market for a UDS type of cooker I highly suggest the Bronco Pro or if you don't want to spend that much I would suggest the Bronco!

    Thanks for the video. Glad to see the Bronco operating in less than ideal conditions. Living in Nebraska we get similar weather and I smoke and grill year round.

    Looks great man! You are absolutely right about B&B briquettes with the oak chunks. I tried the hickory lump with oak chunks the other day and I think that’s how I’m going to do it from now on. It was amazing.

    Big sucker really cooked!!! One thing I have found out is wind are these Bronco's friend. I cooked a TriTip at 304 till 203... I had the intake opened about like you did, the wind never got below 25mph. Easiest cook ever on the Bronco and best TriTip ever. Great VIDEO and more on that Beast... And keep that white stuff up North and don't let it come down the MS to W.KY

    Great video! Just got my Bronco yesterday and assembled it. I did use some sealant between the 2 drums and on the bottom, so waiting a good 24 hours to let that set. Picked up a 7.5lb butt for this weekend. I've watched a bunch of your videos, good stuff! 👍

    Hey Bri! Thanks for showing us what's to come........cold weather and snow. I like that Pit and it's possibilities.
    I liked your method on this with the paper.........I believe it was the animal and it just didn't have the marbling you are used to.
    Still a 👍👍....looked great! I will look for post oak now. Hey..... the Party Rub was really good on some loin ribs I did.
    It's very peppery which I like. I need to use it on some beef ribs. 👍 Thanks for the heads up on that stuff! 👍🍺 \m/

    BBQ in Minnesota is a challenge sometimes. I’m in Austin Mn AKA Spam town USA. We’ve got a non stop supply of pork, but the weather sucks.

      @@MadHorseBBQ i got the std bronco the pro was out of stock. its the black wanted orange but no go. i got rid of a couple pit bosses LOL and wanted a bronco for a while i like my pit barrels but like the idea of the using controller in the bronco

    The buther paper seemed very wet, as you said foil would have been the better choice as it wouldn't have absorbed so much juices but looks amazing all the same

    Looks good. I just got one for Christmas from my son. Want to use it New Years eve but it's going to be high of 35 for the day. But watching you it looks like it will work great here in Kansas. New to smoking and I was reading not to use lighter fluid. Why is that maybe taste just wondered if you had the answer. Thanks

      Ya the Bronco pro runs great in the cold weather so you’ll be just fine! And I either use a tumbleweed in the coal or use a chimney starter to get my coal going. Lighter fluid is frowned upon by a lot of people. And to be honest I’d only use it in 1 of my cookers. All the other ones I’m starting like I said above. Hope this helps you out.

    I’m curious what your grate temp was if by chance you have any idea? My chamber thermometer says 230-250 and my grate was about 310 325 curious as to what one I go by?

      Hmmmm I can’t say I ever look at the grill thermometer. So if I mentioned temp it was the grate temp.

    do you change the opening of the vents whenever you get temperature spikes after opening the barrel, or let it be and wait until it goes back down to previous temp? Thanks

      I never touch the exhaust during a cook, I always leave it wide open on my drums. If temps spike on me I Adjust accordingly the intake. But I rarely have that issue with the pro.

    How do you know at what time to wrap in foil? Also, should you spray from time to time? Nice video, thanks

      Once you get the color and the rub is set I will wrap. And spraying is optional imo.

    Love the video. Coming time to soon replace my offset, been looking at these bronco pros. On the grilling side of things how many steaks will that rack hold?

      Thanks! And hmmm well it’s the same as a 22” weber kettle so you could prolly fit 8 steaks easy.

    So, how long after you initially light your charcoal is it before you throw on the pork butt? 30-45 minutes? I am just curious as to how long it takes for the nasty start up smoke to clear up.

      Yep I’d say right around 30-45 minutes if you use 1 tumbleweed. If you use multiple it’s quicker than that or if you use a chimney to start the coal it’s about 20-30.

    Do you find that the lid paint bubbles up over time since the heat goes straight up to it? I am deciding between black or orange Bronco Pro, and if bubbling becomes an issue, the black will be much easier to sand and touch up than the orange.

      I have not had that issue at all. I would think that if you burn it in at 250 for a few hours it should cure the paint if it isn’t already.

    Do you have to put that diffuser plate in? What would happen if you didn’t?

      Nope. It works just fine without it

      The diffuser plate is sposed to heat up and disperse the heat more evenly but I’ve found that it depends upon what your cooking whether you use it or not. It still cooks wonderful without it but I like the drippings dripping directly into the fire which creates a really nice flavor profile to whatever your cooking

    thanks for sharing your results . i have a OJ's longhorn combo , it my first and only smoking experience , but i kinda have the grill bug and want a new toy . i'm between the OJ bronco and the WSM 18 , any thoughts or opinions between them ? i'm getting better with the offset side of my longhorn combo and i can do a pretty decent shoulder/butt on it , but the charm of babysitting the fire box/temperature is loosing it's appeal . so i'm thinking about something a little more versatile , but also that i can still play with .

      You’re welcome! And they’re both essentially the same style cooker but I’d go with the Bronco. It’s a lot more versatile of a cooker and it comes with everything.

      @@1982MCI I got the bronco and I'm loving it . Mine was a PITA getting the 2 barrel sections together and it leaks grease/oil there so I'll suggest putting a gasket there . And the greas cup is a PITA to get to because there's barely enough room to slide it out . I made a little platform on the side of our deck and left the middle open and that solved both issues . The deck is only a few inches above the ground where I put it at . Take care , jeff .

      I did a chicken on it last night and I’m gonna do a butt and baby backs tomorrow along with a couple racks of beef ribs

      @@MadHorseBBQ I figured just wanted to check. I use the ash catcher out of a old Webber. Slides right in and out. Learned a ruff lesson after my first pork butt. Looked like someone changed the oil in the driveway with no drip pan. Lol.

      You may never but a whole lot of us do. I've wrapped probably 2000 pounds of pork butts in the last couple years and never had a complaint about the finished product.
