Brisket Is King | USDA Prime Brisket On Oklahoma Joe's Bronco

  • In this video I cook a prime brisket on my Oklahoma Joe's Bronco. I trimmed the fat and seasoned the brisket with coarse black pepper and kosher salt. When I placed the brisket in the Bronco, I left it untouched for 4 hours. After that I spritzed the brisket with apple juice every hour. 7 hours and 30 minutes into the cook I wrapped the brisket with pink butcher paper. My decision to wrap the brisket was based on the color of the brisket and not when it hit the stall. The brisket stayed wrapped for 3 hours and 30 minutes. Total cook time was 10 hours. I let the brisket rest for 1 hour still wrapped in the pink butcher paper and used a towel to also wrap the brisket. 11-10-19

    I also own a Bronco. Do Not
    I repeat Do Not trust the thermometer.
    I use an electronic thermometer for the meat and one to monitor the temperature. Otherwise you will be flying blind.

    That's it, I'm finally sold on the bronco. Gonna go ahead and get one myself. Been using a Weber kettle to smoke but I want something a little more made for smoking. That brisket looked amazing! 🤙

      Lol if you cook a lot of food at a time. Get the Pro. Larger cooking space. I normally cook for 2-3 people that includes me, so regular Bronco works for me.

    Great job! Man that turned out perfectly. Just did a brisket on my bronco last weekend. Hung it vertically for the first 6 hours. It did burn the tip of the flat closest to the charcoal. But otherwise it was delicious, but I don't think it was quite as perfect as this one!

      @@MoesBlackGoldBBQ No, I would have liked to, but there wasn't enough room, I would have almost had to hang it about 1/3 of the way down and wrap the point over the hanging rack. Which maybe I should have done.

      Certain type of wood can also help get a darker color. Brisket can be intimidating. Such a large cut of meat that takes time to cook. But it gets easy brisket after brisket.

    I know this an old video but you really never explained how long you cooked then wrapped and haw long you cooked after that. Brisket looked really good though. Think you need a sharper knife though

    Back again to one of your videos. Can you guess what I’m cooking next? I’ve gotten two pork butt cooks and a grill session of burgers on my bronco so far man and I absolutely love it. Had to battle wind on my second pork cook though and had to end up adding fuel twice but it still worked, just took 16 hours hahaha learned a valuable lesson about wind that day! Tomorrow it’s brisket! Your vids have been a great help bro! Keep smokin!

      @@MoesBlackGoldBBQ it’s just a small trimmed (5lb) brisket but I have a whole packer brisket in the freezer. I work at Walmart now so I get first dibs on all the meat that’s going on markdown. We got some certified angus choice briskets going on sale the 2nd of feb. Running out of room in the freezer hahahaha

I was out there shielding the outtake with my Webber silver kettle lid like a shield! Hahahahaha I must have looked every ounce of crazy!

      Thank you for watching! It was a fun cook. The Bronco made it an easy cook. It can be a set it and forget it Smoker. It is worth buying. I use wood chunks and I get the smoke flavor. The major bad thing about the Bronco was the upright air intake pipe did not sit well when bolted onto the drum. But Char-Broil will send you the correct air intake for free. I just got mine last week. Free of charge.

      This smoker is awesome once you get the air intake down to your liking it will hold that temp all day and you never have to fill back up with charcoal it will hold heat I love mine

      Thank you for watching. I have not placed a water pan on the diffuser, but I have seen it done. If you feel more comfortable with using a cooking grate, I say go for that.

      The water pan is from a small Kingsford smoker pit I had. The grate i purchased from Home Depot. Its the weber 18 grate. But since I posted this video, I have purchased the same stock cooking grate that comes with the Bronco from Oklahoma Joe's.

    What size brisket did you use, and what is the largest the Bronco can handle?

      It was a 10 pound brisket. I have the 18" Bronco and I've gotten up to 12 pound briskets.

    That was a juicy brisket! Very nice work. Looked incredible. I just got the Oklahoma Joe Bronco last week. I have done ribs by hanging them, came out great! I’m excited to do a brisket next. Can you give me your thoughts on using charcoal briquettes or lump charcoal for a brisket on the bronco? I plan to maybe use lump charcoal with hickory wood chunks.

      Thank you for watching and congrats on your new Bronco! I love briquettes in the bronco when it comes to long cooks. I find they last longer than lump. But lump is still great to use for long cooks. It really comes down to what you prefer. I can get 12-15hrs on one charcoal basket of briquettes. I've seen longer as well with lump. I suggest doing long cooks with briquettes and lump and compare.

      Lol the grate came in handy, but I ended up buying another cooking grate from Oklahomajoes.com its exact cooking grate that comes with the bronco and another side shelf.

      The internal temp ended up being 205. I removed the brisket when the probe went in like butter.

      I kept the intake at #1 to keep my temp close to 255. Here and there the temp would spike up, but it would go back down to around 255.

    That look amazing thinking about getting me a bronco. I have a question did you have to add more charcoal for the whole cook ? If not what kind of charcoal you use ?

      Thank you for watching. If you get the Bronco, you won't be disappointed. It's a set it and forget it smoker. When it came close to the 8th hour, i added more Charcoal. I lit my Charcoal with a weber cube placing it in the middle of the charcoal, but if I had placed the weber cube on the side up against the Charcoal basket, I would have gotten a longer cook with the Charcoal. For longer cooks it's best to start your Charcoal on the side of the basket. What that will do is Charcoal will burn from one side to the other side. That helps for low and slow cooking.

    Brisket went on early this morning! Thanks for the video I just got my Bronco a few weeks ago. If you can’t find that pink butcher paper will foil work okay? With Kansas City being a BBQ town you’d think that paper was everywhere.

      Congrats on owning the Bronco! Oh yeah use foil paper. Here in Texas we call using foil "Texas Crutch" Foil will speed up your cooking as well.

    Bought the bronco and cooked on it a handful of times, any tips on temp control?? It fluctuates a lot for me but maybe it's my fault messing with the intake and exhaust...Looks amazing by the way!

      250 would be best just tips on keeping it at a steady temp would be awesome like I said maybe I still have to get used to it.

      What works for me is having the air intake pipe at #1 and the top smoke stack at #4. My temp will be at 250. If it goes up or down it will go back to 250 with out me adjusting the air intake. Do you remember what numbers you had your Bronco on?

      You're welcome. I will lean more to having the top smoke stack at #4 and control the temp with the air intake. But if you need to, you can always have the top smoke stack at a lower number to help lower your temp. Fool around with it adjusting to lower numbers to get a lower temp. Lower the number, low the temp will be. Higher number, higher the temp will be. Remember that. I've only used kingsford and H-E-B charcoal.

      I ordered it from the home depot. It is the 18 inch weber cooking grate. I stopped using it because I recently purchased the bronco cooking grate.

    What was your total cook time to temp?

      It took a total of 10 hours to cook. I did not go by internal temp of brisket but I went with how tender the brisket felt when I started to stick a probe through the brisket.

      I purchased the 18" weber cooking grate from Home Depot. If you dont want to use the weber grate, you can buy the Bronco cooking grate from Char-Broil website.

      The weber 18" grate is a tad smaller than the Bronco cooking grate but weber grate still fits and works.

      Why didnt you use the Diffuser plate that comes with the bronco? Did you add water in the pan before cooking?

    Have you tried smoking a smaller brisket by hanging it? I just got my Bronco a couple of days ago. Eager to do my first brisket.

      Thank you for watching! If anything 2 things. 1. Would be to have waited to wrap. I should have gotten a darker bark. 2. I wish I would have known at the time how to set up my chracoal basket for a longer cook, like i do now. In that cook I had to add more charcoal.
