For years I've made jiffy cornbread mix with canned or homemade chili, just pour in the middle then bake, it swells up over the chili. So good! Love these too! Thanks 😊

Obviously not a lot per muffin, but that would both boost the flavor and veggie content slihtly. Maybe a good way to sneak in veggies for finicky kids. ... Dang, now I'm gonna have to try this....
I made Jiffy cornbread muffins. I followed directions on box ( I used 2 boxes) then I added 1/3 cup of sour cream, 2 tbsp honey and 1 tbsp flour. When done I cut them in half and smeared them with my whipped honey butter. They were so good!!!
Mandy...made your chili cornbread casserole today....soooo good!! Highly recommend making the chili part one day ahead of time giving the chili time to marry those wonderful flavors together. Then make everything the next day. Thanks for the awesome recipe!!
Oh my goodness bacon pimento cheese muffins…. I’m making those!!! Some jalapeños just aren’t that hot. They can really vary. Another thing you can do if you don’t have buttermilk is make sour milk - a tablespoon of vinegar or lemon juice in a cup of milk, sit out for 5 min. It gets thickish and tangy and works great. And yes I have grabbed stuff out of the oven to add something I forgot. Great video! Thanks
Made the Chili and cornbread casserole for dinner. It was delicious. I added some chopped jalapeño to the cornbread and in place of ground beef mixture I used some leftover pulled pork chili.
What air fryer do you have and how do you know how long to cook them? I’m thinking I want an air fryer for my birthday, but I don’t really know much about them. Thanks.
@@wendyneal4900 hi there, I have a power XL air fryer basket type. You have to have the silicone cupcake molds to make them in the air fryer. I do them at 350 for 11 minutes. I checked with a toothpick to see if the toothpick comes out clean and if so they're done. If I were you I wouldn't get too small of an air fryer because when I use my air fryer it is big enough cook everything at one time I don't have to cook in batches. There is a learning curve to using an air fryer but I love mine and use it most every day. I hope this helps
@@wendyneal4900 I have an air fryer with 4 stainless steel racks! You can remove any that you want so I have baked a chicken in it! 16 stuffed jalapeños wrapped in bacon!

I have to try the chili cornbread one! My brother in law made chili last week & he used onions, red kidney beans 2 cans & I bought 4 pks of Walmart's brand chili seasoning he used 2pks & 2 pounds ground beef, 1 can of diced italian style with basil & oregano 15oz & 1 jar of their sauce with meat. It was delicious! Had some heat & I also shop at Aldi's so I put a big spoon of clancy's cheese melt in it & WOW I loved it. It was even better the next day. I don't usually like spicy but the cheese in the chili reminded me of Wendy's chili & cheese! I will be making it next.

I use that cornbread and when I took mine I put Jalapenos in Juice now I don't use the juice but I will cut their jalapenos up and you will get the flavor of the jalapenos I also make a cornbread stuffing and I use I have a whole can of cream of corn it depends if I'm making a medium size for half a full size pan for full corn and my hamburger meat fry up with onions I will mix my corn in the cornbread I stirred up I cook my hamburger meat and onions and then I will drain it what I do is pour half of the cornbread mix in a pan and then layer my hamburger meat .it already cooked and then I will chop some jalapenos up it has been in juice. I will layer that then I will put the rest of the cornbread on top and spread that and then cook it until it's golden brown thank you for your cornbread recipes I love it

I forget some ingredients seems like everytime I want to impress my family. But I remember as soon as I put it in the oven also. I would love to try all these recipes cause I love cornbread muffins. The chili one looks delicious too, never saw anyone do that.
One year for Thanksgiving, I made 5 different desserts. I made the traditional pumpkin & pecan pies, a pumpkin cake, a bread pudding with crem anglaise, and a turtle cheesecake (ALL from scratch). I did great on everything except...I forgot to put the sugar in the pumpkin pie 🤦♀️🤦♀️ so yeah, I forget ingredients too! Love you & thanks for the great recipes!

I was making a little pound cake the other day and I forgot to put the butter in it and I did what you just did I took it out and put it in and put it back in the oven and it turned out great.
Great variations using Jiffy a girls best friend. I add a can of chopped green Chiles or the hot green Chiles and the cheese two eggs instead of one and viola, good taste and texture. Thanks for sharing. 👍🇺🇸
Mandy, I have to say these are some AMAZING recipes!! I made the Cornbread Chilli one but I used canned chilli and OMG!! It was SCRUMPTIOUS! I added hamburger, canned diced tomatoes and onion to the chilli. It was soooooo good!! Thanks for the switch up from the mundane 🙃 lol
I had beans in the crock pot when I came accross them they became chilli so that I could make the chilli bake OMG that was just so good...I did add a can of green chilies to my chili when are mild but gives it a great taste...I think I will use them in place of Jalapenos too when I make those..

I have already made the 3rd batch of the Bacon Pimento Cheese Corn muffins (made in a ring pan). I can't believe I lived 69 years without knowing this recipe. I'm crazy about it. And, I've found a trick to kick it up a notch. I add a poached egg, or two, or a couple of poached egg yolks to a crumbled up corn bread serving. Talk about heaven on Earth. Makes the best breakfast I've had in years.
Those all looked so good. I once left the chocolate chips out of my cookies dough for my first batch of cookies but when the cookies came out of the oven o just added the chocolate chips on top they were still good and I then added the chips to the rest of the dough. OMG!! I made the chili cornbread casserole and it was out of this world! We both went back for more! I thought I had all ingredients in the pantry, but I was out of tomatoe sauce, so I was looking for a substitute. I had 2 small cans of enchilada sauce, and the first ingredient was tomato sauce, so I used that and we like super spicey like you, but at the end it didn't really make it more spicy. It might have, but we are so used to spicy we don't notice it. This is definitely a family favorite and also going to make this for church pot luck!!!
I always tweak the recipes for my family , I didn't put creamed corn in the cornbread, I put a small can of Mexican corn. But instead of milk I put half a cup of half and half creamer. Made it super creamy! That doesn't look like a word. But it was so delicious ! Thank you!
Hello. Love your recipes. I was so excited to make your chili casserole and thought I had memorized it. I decided to turn on the video again just to make sure I was doing it right then realized that I had forgotten to put the cheese in with the cornbread mixture. I’m gonna try this casserole but my son and I are vegetarians so beef is always substituted with beyond beef…ok I’m gonna try the pimento muffins but instead of bacon I’m gonna use some smoked paprika, onion powder and some croutons…I’ll let you know…cause I love pimento cheese!
I love Jiffy! I have used jiffy cornbread mix as a topping for a chicken pot pie 🥧 before… I’ll have to say it was really good surprisingly 👍 so I made the stuffing of the pot pie (traditional chicken, cream of chicken soup, and veggies plus whatever seasoning you like) and stuck it in the bottom of the pie pan, then just mixed up the jiffy as normal but added some Tony Chacheres in the mix before pouring over the top of the filler…. There’s just so many possibilities for Jiffy! 😅

one of the last cooking videos I did "cheesy taco mac" I forgot to add the taco seasoning to the meat so I added it to the almost finished mac cheese and beef.. It was the best ever, my grand sons devoured it

You should try cornbread recipes in a waffle maker. So good. You get lots of crispy edges and you can use it like a sandwich.

Those all looked so good. I once left the chocolate chips out of my cookies dough for my first batch of cookies but when the cookies came out of the oven o just added the chocolate chips on top they were still good and I then added the chips to the rest of the dough. When we were first married I made a dish similar to the chili one, Mike loved it! I might have to give it a try, since I have the PC mix;)
When you put a cup of jalapenos in the first one my eyes popped!!!
We do the jalapeno cheese one in our house, but we add creamed corn to that one. It's really good!
My dad made this when we were growing up, but put the cornbread on the top. So good either way.
I look up recipes each week, always trying new things. I make a menu for the week and add one (or three!) new recipes each time so I can fill up my recipe box and find new foods we enjoy. OMG!! I made the chili cornbread casserole and it was out of this world! We both went back for more! I thought I had all ingredients in the pantry, but I was out of tomatoe sauce, so I was looking for a substitute. I had 2 small cans of enchilada sauce, and the first ingredient was tomato sauce, so I used that and we like super spicey like you, but at the end it didn't really make it more spicy. It might have, but we are so used to spicy we don't notice it. This is definitely a family favorite and also going to make this for church pot luck!!!
I always tweak the recipes for my family , I didn't put creamed corn in the cornbread, I put a small can of Mexican corn. But instead of milk I put half a cup of half and half creamer. Made it super creamy! That doesn't look like a word. But it was so delicious ! Thank you!
Hello. Love your recipes. I was so excited to make your chili casserole and thought I had memorized it. I decided to turn on the video again just to make sure I was doing it right then realized that I had forgotten to put the cheese in with the cornbread mixture. Added it in after the cornbread had been in for 5 minutes. Anyway, you are not alone…lol. Waiting for husband to get home from work so we can dig in. Thank you!

I made the chili and cornbread casserole. I’m not a huge chili fan but I do love cornbread!!! I loved this dish! This was so good! Such a comfort dish and so easy!! 😁

You could also make the chili and cornbread like a poke cake. Make the holes in the cornbread before pouring the mixture over. Even better.
You are a great cook! I’m gonna try this casserole but my son and I are vegetarians so beef is always substituted with beyond beef…ok I’m gonna try the pimento muffins but instead of bacon I’m gonna use some smoked paprika, onion powder and some croutons…I’ll let you know…cause I love pimento cheese!

I love Jiffy! I have used jiffy cornbread mix as a topping for a chicken pot pie 🥧 before… I’ll have to say it was really good surprisingly 👍 so I made the stuffing of the pot pie (traditional chicken, cream of chicken soup, and veggies plus whatever seasoning you like) and stuck it in the bottom of the pie pan, then just mixed up the jiffy as normal but added some Tony Chacheres in the mix before pouring over the top of the filler…. There’s just so many possibilities for Jiffy! 😅

one of the last cooking videos I did "cheesy taco mac" I forgot to add the taco seasoning to the meat so I added it to the almost finished mac cheese and beef.. It was the best ever, my grand sons devoured it

That chili cornbread casserole looks really good. But that is the same way I eat chili anyway, I put a cornbread Square in the bowl and put the chili right on top. It's so good like that.
