My father made Jiffy corn muffins to bring to church events. He would add blueberries sometimes. Now, I donate boxes of the mix to the town food bank in his memory.

I am a first-time watcher; thank you for the video. I love Jiffy hacks, and these all look really yummy! I do have a couple of suggestions that have made my cooking life easier. Get a scale. It is soooo much easier to half things! I do it a lot, and accuracy is incredibly enhanced if you are not guessing. Scales are very convenient for measuring shortening or lard too. No mess--just jot down the first time you do it how much a, say, cup weighs, then scoop it out onto a piece of wax paper. Very easy cleanup! Then, mix your egg and liquid and misc spices, THEN put in the mix. Faster, easier complete mixing. Last, use a spatula not a spoon to scrape out the bowl! Thanks agai. --a retired grandma.
Thanks! I actually have a kitchen scale and use it at least 3-4 times a week. I weigh out a lot of what we eat for portions and also use it to weigh out ingredients for sourdough

Hi- I just found this channel while watching another Christian coooking channel. I enjoyed your recipes/presentation very much. It's funny how different people's tastes can be. Whereas the young lady in the video said she'd probably cut back the amount of cornbread mìx, I would cut back the amount of enchilada sauce & chicken, plus I'd definitely put in some corn & add black or pinto beans. That's what I love about these types of recipes- adaptability. I look forward to trying this one soon. I'm old enough to be your mom, & was so happy to see the younger generation using some of the "old" products that I grew up on. My mom always used Jiffy muffin & cake mixes when I was growing up. She was widowed, so she was cooking for just the two of us & the full-size Betty Crocker or Duncan Hines cake mixes were too big (& too expensive!). She also used the Jiffy muffin mixes frequently. I look forward to seeing more from you!

Being an Arizonan, for the tamale pie, I would add a can of Rotelle tomatoes with Jalapenos and some medium black olives and a little oregano to the chicken mixture.

1/3 cup milk in Jiffy ..on the tamale pie you should use half of the cornbread mix on the bottom then top with chicken mixture then the rest of the cornbread mix then BAKE...more like a tamale
Yes, also it would be less thick with cornbread on the bottom. So the adjustment isn't to make less cornbread mix but to layer it more when putting it together, great idea! This looks so yummy.
I've been "stuffing" different foods in between layers of cornbread mix for many years, as you suggested here. It works out just fine to bake everything all at once. One of our favorites is pinto beans or black beans sauteed with onion and garlic, then layered into a spiced cornbread like in the video.
My husband made this but mixed unit all together! So it looked more like Mexican Cornbread.

Nobody said anything about Amber.. we know she's making her recipe, and she does say to feel free customize it to your liking... these comments that your referring to, including my own, are sharing suggestions on how to alter the recipe to those who may be interested, to offer an idea. Amber herself would most likely appreciate reading suggestions on a different spin on her recipe, she may even try it -- who knows?
I love to have a simple meal about once a week that is pinto beans and Jiffy muffins. I've found I can fix the Jiffy muffins without any eggs by adding the bean water from my can of beans to the mix. The muffins turn out great, don't taste like beans at all. With eggs in my area having been as much as $7 a dozen in recent months (they are a bit over $4 now) it's been an easy way to save money. I couldn't believe how well it works.. and to think all of these years I'd been throwing out my canned pinto bean water all of these years. Duh.

Preheat oven to 400°
Shred 2 large cooked chicken breasts, add 1 10 oz can red enchilada sauce and mix well
In a separate bowl, add
1 box Jiffy cornbread mix
1 can corn drained, optional
2 eggs
1/2 c milk
1/4 tsp paprika
1/2 tsp cumin
1 tsp chili powder
1/2 tsp onion powder
1 c shredded cheddar cheese
And mix well.
Using an 8x8 pan
Grease pan, add cornbread mix bake for 10 to 15 minutes.
Remove from oven, add chicken mixture, top with 1 cup shredded cheddar cheese.
Bake for an additional 15 minutes. Top with parsley, if desired. Serve and enjoy

We make a taco casserole somewhat similar to your enchilada casserole. I put corn kernels and black beans in with the taco meat and put our cornbread batter on top. I don’t use boxed cornbread mixes, I usually just make it at the time, but I could easily stir together a few batches of it and store them in mason jars for convenience.

I make pancakes with a box of Jiffy cornmeal mix, 1 egg and 1 can of cream style corn. Mix together and cook like pancakes.

I don’t have an air fryer so I won’t be able to make the last recipe but I’m definitely going to make the first 2! And I’ve gone to my Canadian Amazon site and saved those herb scissors to my wish list! They look awesome . I use my kitchen scissors to cut up things all the time. It’s so much faster than digging out, a paring knife, and a small cutting board . And you can cut directly into whatever you’re making. My only other comment is about the bacon that you have cooked up in your fridge. I could never do that. Never mind trying to resist the impulse of munching on the bacon that is waiting in the fridge. It wouldn’t make it to the fridge in the first place 🥓🥓

On second recipe 2 ways I make them.... 1) fried crumbled sausage and yellow cheddar cheese. 2) diced cooked ham with dice swiss cheese or provolone .

I never prebake my cornbread for the tamale pies. I usually put the filling in the dish first and the cornbread batter on top. Have not made a chicken version yet but will try this soon.

I've made a " ground meat Tamale Pie " Casserole, ( I use organic grass fed beef ), and I usually add the Cornbread mixture on top, bake, and add Shredded cheeses, such as a Colby Jack/ Pepper Jack and Sharp Cheddar, on the top during the last 5- 10 minutes of bake time. :)

My family loves Jiffy cornbread. It's usually about $1/box, but i can sometimes find it on sale for $0.69. It's always so good that it feels like the best dollar i ever spent! I always swear im gonna go find the bestest damn cornbread recipe on the planet, but then i never do because Jiffy is already the best. We like this cornbread with chili, soup, hamhocks&beans, etc. I usually make a double batch because i eat leftovers for breakfast slathered in butter and honey or maple syrup.

I make similar muffins , what's different about mine is I add a half of a red pepper chopped . I also don't bother with the mess of cooking bacon , I buy Cooked crumbled bacon it comes in a pouch it's so convenient .

My favorite Jiffy recipe was inspired by a Velveeta Meal box, I call it Chili Corn Dog casserole. Make a batch of chili or used canned or 4Alarm frozen chili and pour into a baking dish. Next is a cheese layer: you can use shredded cheese, sliced cheese, or Velveeta sauce (pack or homemade). Next, mix a box of Jiffy with a can of creamed corn, pour on top of everything in dish, then take a pack or two of hot dogs, slice in half, and stand up in the mix. I bake at normal temp for Jiffy mix, but for around double the time. You can just mix Jiffy according to directions instead of using the corn in it. It is definitely a decadent treat.

The jiffy box only get about six muffins 😊 always use jiffy mix. Like the jiffy muffin mixes, brownie mix and cake mixes aren’t bad either, use make frosting but can’t find in stores anymore.

I’d probably add diced chilies and canned creamed corn to the jiffy mix in the recipe of tamales pie. And because I love corn bread I would do the whole box

The adjustment I would make to the tamale casserole is to mix the chicken in with the cornbread mix and add green chiles. I like the idea of the cornbread being mixed throughout the casserole instead of being the base.
I agree with an extra egg for the breakfast muffins. I'd "quadruple" the recipe by using two boxes of Jiffy.
For the hush puppies, I'd add the dehydrated minced onion to get the onion flavor. The onions will rehydrate while the batter sits.
One other question: where did you get that air fryer from?!?!?!?!

I tried it! However, I do think that my bacon was cooked a little too much and I was afraid it was more than the scissors could handle.
It would honestly probably be fine, but it was right when I got them that I tried it and I didn't want to risk it week 1. lol

We got lots of eggs here, under $3 a dozen too. One grocery store has them for over $5. 2 grocery stores in my small town Iowa.
