Real Cajun Crawfish Fettuccine (ABSOLUTELY DELICIOUS RECIPE)

Crawfish Fettuccine
Ingredients:
3 onions chopped
3 stalks celery chopped
2 bell pepper chopped
2 cloves garlic
3 sticks butter
1/4 cup flour
4 tbps chopped parsley
3 pounds crawfish tails
1 pint half and half
1 pound velveeta cheese
Nunu's Seasoning or other cajun seasoning
16 ounces fettuccine noodles cooked and drained
Parmesan Cheese
Recipe
Saute onions, bell pepper, celery, and garlic in butter until soft (about 15 minutes)
Add Flour to thicken, stir for about 4 minutes
Add half and half and velveeta cheese
Cook for 30 minutes
Add Nunu's seasoning or salt and pepper
Add cooked fettuccine noodles and mix thoroughly
put in a casserole dish and top with parmesan cheese (optional)
Bake at 350 degrees for 20 minutes covered

Hello! Well, I lived in Lafayette with my uncle and aunt almost 20 years ago, now I live in Mexico City and I would love to cook more cajun food and remember all the great moments. I loved the rice with ground meat, fried shrimps, po boys, etc So if you could make a video on how to cook those delicious dishes I will be so happy! thanks again and have a great week!

I'm glad I stumbled across this recipe. It's great after a big crawfish boil with the left overs and I've also applied this to leftover bbq porkchops, adding a little smoked sausage and some tasso. I may not live too long eating this dish, but every time I make it people think I should be a chef. lol. Hit of the party indeed! I tried shaving the boiled corn from the crawfish boil and throwing that into the mix and people kept talking about how the corn made the difference. Also added shredded parmesan cheese after cooking in the oven, then throw it back in for another five minutes with no cover foil. Adds an extra gooey layer. Top with crushed red pepper for color and spice. Thanks for the recipe.

You never mention the other pot with the half stick of margarine in it... what did you do with that?

I never 'bake' mine. Leave it simmer on Low heat on stove top for 20 min...just watch it carefully...turns out perfect. Thanks for your video.

True. But it works well. The oil content helps with the roux in my opinion.
