I am 42 and remember watching reruns of his show as a kid. The one thing I noticed watching many of these on youtube as an adult is he cooks with precision. You may think he is a simple Cajun style cook but I see a guy as skilled as the best chefs in the world then and now.

Back when we only had 4 tv channels and of course no internet. Funny how the really great shows stood the test of time. His shows ran on the public channel in N MS, Ch 10 iirc, and I loved em. I'm going to make his venison piquante tomorrow.

Great memories! My favorite cooking shows growing up were Justin Wilson and Martin Yan's Yan Can Cook. I remember when Justin said, red wine with beef and white wine with fish, NO. You drink the kind of wine that you like to drink. They both showed that cooking can be fun.

So I went to Penn State, having grown up in Jersey, back 99ish... Almost all my bros were either NJ/PA/NY guys, except one came up from outside New Orleans, LA .... ( he thought he'd avoid trouble by avoiding LSU and driving 1000mi to PSU... LOL...FAIL...anyway...) he dropped the "I gah-=ron-tea!" , with an accent, on us a few times before we were like ... WTF are you talking about ?? JUSTIN WILSON!!- What??? The famous chef!!! Who?? He couldn't believe we had no idea who he was - none of us - and we would wind up lying to him , Ohhhright uh, , that guy, .....right...yeah... the chef, did you say? Right ..... none of us, never had any idea who he was until watching these videos...at least now I know lool.

When he saw me an Lafittes Landing he recognized me and asked if I could wait on him. He asked me if i remembered what he had ordered at "the other place" where i had waited on him before, and i answered " A nice ribeye and just knock the horns off of it" lol

That story he told about notching the boat railing is an old Zen koan. Master Dogen wrote a capping phrase,
“On the path it is rare indeed to meet with a pierced-eared travelled, much more common are those who notch the boat.”
This being a reference to the original story in which a sailor drops his sword by mistake into the sea and cuts a notch in the boat rail to come back for it later.
