Delish!! I make my frittatas in the same red dot pan! It's the best for large egg dishes. This is so good in the spring and summer with fresh veggies from the garden, it is always a seasonal dish!

My mother soaks pieces of old leftover bread in the eggs, this gives the frittata a bit more substance. Another great: serve the fresh frittata with a simple Tomato sauce - in Gennaros words: incredible!
I just made the pancetta and onion one but without spinach. I added tuna and tomatoes as well, trying to use stuff up that was in the fridge, and I also added some herbs to the egg mixture. It was soooo good! Thank you!
