I'm Italian and I'm serious. This is actually pretty good. If I were you, I'd put no cheese (or whatever that was) and create the "cream" using the pasta's water. It contains the starch from the pasta and if you mix it in the pan (medium heat) correctly you'll have a wonderful dense condiment. ^ That's the trick for pretty much everything, don't add cheese/cream/parmigiano, do that instead. It works wonderfully with carbonara, pasta alle vongole and tons of others. (but you shouldn't use it with any tomato souce) Still can't understand how that amount of garlic isn't too much for you.

The best part about this customized recipe is that you can customize it further! Add shrimp to the pan or mussels or chicken, sausage, zucchini, eggplant, mushrooms, cherry tomatoes.. it's an excellent base for a delicious pasta.
I made this for dinner today and it turned out to be beautiful. I added some oregano as well with chilli flakes which added more flavour. My first attempt & it was unbelievably good! My family loved it too. Thank you! I'm excited to try more recipes by you now.

sometimes i use lemon instead of parmesan and add extra chilli flakes, the taste of wild spicy garlic and thyme plus the freshness of lemon is truly one of the best taste 😍

I can vouch for his recipe. I first tried this recipe after watching the movie "The Chef". It's one of my favourite quick meals! LOW HEAT is a must! (If your garlic is completely brown, you better repeat.) The only complain I have about his recipe is that he got way too much pasta for the amount of garlic sauce he made. The proportion isn't right, and I've cooked this dish many times myself.
i'm always so impressed when chefs toss their food in the pan, like at 3:04....i'm clumsy af so i won't even attempt that because half of my food would land on the floor😅😅
that's because you have never cooked it right maybe.I can assure you that if you come to italy this dish is only done with garlic, oil, and chily. sometimes anchovies. that's it, and it's still super tasty. But i have to say that very humble recipes like this are often tricky. pasta is not very tasty on its own but it will soak up beautifully every flavour in the pan.
no cheese in the AOP (aglio olio e peperoncino). the herbs, even though not included in the original recipe, are welcome, but the cheese changes the concept of the dish. not saying it's not good, i'm saying it's something different.
