  • Spaghetti Aglio E Olio is simply translated to spaghetti with garlic and oil. It's the simplest pasta you can make. And though it is super simple pasta, its can be very hard to perfect. But the technique used to make this is the bases for many classic Italian pasta recipes and its teaches you how to make a pasta sauce with pasta water. Spaghetti aglio e olio is great with peperoncino or red pepper flake. And there is no cheese in these dish.

    I went to Rome on vacation some years ago and tasted this pasta dish which I’ve never heard of in my life before. It was the last day of the trip, and it was the best dish I’ve ever tasted in my whole life. So garlicy, spicy, and just amazing.
    Ever since that dish I’ve tried to make it at home, but it felt very off and completely wrong, I was so careful and still felt like I burnt the garlic or something, because of the different taste.
    Then I thought for myself whynot watch someone make it on yt instead of following a recipe on the internet. This video made me 10x step closer to making the perfect aglio e olio in my book! This video saved me from not giving up on this amazing dish!! ❤❤❤ Thank you!

      Thanks Zach and Luis, I’ve thought about recipes and cooking show and the act of teaching cooking for many years, I’m trying to takes what’s good about cooking shows, recipes videos, TH-cam’s videos, and make something in the genre that’s uniquely youtube.       I use a mixture of fresh basil and fresh Italian parsley. And I sprinkle mine with a bit of Pecorino Romano. But I'm not Italian so I can get away with it.

      There are a few good ones. My favourites are Maangchi and this channel. I also love Seonkyoung Longest, Chef Dai, and Russian Sato (who is originally a big eater, but she cooks as well and gives me great ideas about styling food), but this channel turned me towards Italian cooking, because it made it interesting to me. I love the simplicity, the passion and the devotion.

      I went to several local Italian restaurants in my town.
      They all (2) refused to do it.
      They said it did not exist in Italy.
      Which is absurd because i have been to Italy several times and they do make this there..
      Ironically they both served alfredo sauce. Something that is not served in Italy..

      Chance Whistler Well that‘s not true... it exists and it is very popular. But in restaurants actually it‘s hard to find, cause it‘s seen as a too simple receipe. You normally cook this dish when you come home wasted at 3 o‘clock in the morning and you and your buddies feel hungry! ;-)

      @@Epimenides6 Yeah I wouldn't even concider this Dish at a Restaurant, ingredients are dirt Cheap and it's so easy and QUICK that anyone can pull it off, don't see the point of paying someone to make it for me, especially in a Restaurant.
      But at home.... It's the perfect "fuck I'm starving and I ain't got any ingredients" Dish. I allways have good Olive Oil, Pasta, Garlic and Spices on hand and I got a Parsley Plant. And I also got Parmesan or Peccorino - just like to finnish it with it. With prepping and anything it takes MAX 20 Minutes if you are slow, tastes bloody fantastic and I never screwed it up. Perfect dish.

    I’m a former professional cook, just trying to make delicious food for my wife. The hardest things to perfect are often the simplest; It’s like learning to weld, or throwing a football. Nobody can truly teach IT, you have to do the repetitions until you nail it, and then keep doing it. And it’s not necessarily like riding a bike.. Thanks for putting this out there in its purest form, because I find myself coming back to it when I need to shake off the cobwebs 👍 Your brief montages are the perfect format for me.

    This is the second comment I write about the cooking times. I love how you're actually nailing the boiling time of the pasta, it takes courage to drain the pasta when is still a little stiff in the core, but that's how it's done! You're great! Just a thing, like many told you, go a little easier with parsley not by much though...

    Yum... My mom made this a lot, especially when I was young and came home late. She'd get up and throw this together even at 11pm ; ) She didn't use parsley, (though I do if I have some) But she'd throw in some broccoli to the pasta water and blanch it quick. I love the smell of this pasta dish!! I do like romano cheese on mine, and I do make it a little wetter with the pasta water, or as my Mom used to call it, the 'juice'.... It's good for soaking up with Italian bread.

    Hey, I have been putting the pasta directly from the pot into the oil, garlic, and chili flakes and adding pasta water as needed. It's been good - but today I grabbed some pasta and tried it as you instructed. Makes a big improvement! Thanks a stack!!!

You really seem to "get" whats important when making really good Italian pasta dishes, and clearly understand that even with very few ingredients and the right way to go about it, you can make some fantastic, simple Italian pasta dishes.     Stephen, love your channel and you nailed this one. My mom was 1st generation from Calabria. We have this often. I have a variation you may want to try: for a heartier dish I add a can of undrained garbanzo beans instead of pasta water to stop the garlic from getting too brown. Then I mash about 1/2 of them and finish the pasta in the sauce. Aglio e olio is a great dish to make variations with! Keep on cookin!

    Made this for the first time today (literally just finished wiping my mouth with a napkin) and I’m blown away at how delicious it is. I’m a huge cheese lover, but this recipe honestly doesn’t need any cheese at all. Think my takeaway from this is to really make sure the water is salted properly. That’s what made me not need (“need”) cheese with this. Really fantastic stuff.

    Just found your show. Absolutely LOVE it. You are amazing. My grandparents were born in Italy (Naples and Florence). My Mom taught me to cook and used a mill. I bought one a few years, got lazy and now puree my tomatoes in the blender (don't hate me! lol). I have made your weekday sauce and it's wonderful. Thank you so much for your wonderful recipes. I plan to make so many of your recipes, especially the gnocci. My aunts lived in Lewiston, Niagra Falls and would visit us in New Jersey. They owned a bakery and restaurant. My Aunt Sabina would always make gnocci for us. I was in charge of rolling out the pasta and cutting. I was in grammar school (yes, I'm old - 71!) It was our favorite and one of my most fondest memories. Your recipe looks really delicious and plan on trying it soon. You had a show about "comfort" food when you're down. Mine is Pastina - just butter and Pecorino Romano, little salt and I am in heaven!!!!
    Another relative we visited every Christmas Eve - my uncles' daughters never married and lived with him. They would make "bows" or "crostoli". They were amazing - paper thin, lightly golden and melted in your mouth. I never got the recipe. Tried a few recipes from Pinterest, but just not the same. Have you ever made them? If so, I would LOVE your recipe.

    Great video and straight to the point, bravo! just a couple of observations: in Italy this dish is more commonly known as Aglio Olio e Peperoncino since it always includes chillies, if someone offers a plate of spaghetti Aglio e Olio then one takes it for granted that it does not include chillies. Secondly I would highly suggest to cut the garlic in half first and remove the "germ" which can give the oil a bitter taste. In italian they call it the "anima", soul of the garlic.

      @@sarthakpattanaikdas4760 A lot of great chefs such as Kenji J Lopez Alt have done blind taste tests on this and couldn’t tell a difference, I wouldn’t worry too much about removing the core unless the garlic is old and it’s quite large

    I’m Italian, the execution is perfect, but the complete name of the dish is: Aglio, olio e peperoncino. Just one thing: the parsil I think it’s not in the original recipe, BUT is a very nice touch. You can try it with or without. Great channel for Italian recipes btw 👌

    I tried to get the exact ingredients online but it's a little different with some additional like lemon, etc. So I decided to work side by side with the video. It was a success and quick! I loved it! The secret is in the water from the pot with salt and ofcourse fresh parsley and olive oil. Thanks and success to you! 👍

    That looks really nicely done. When I do it I wait until it reaches that creamy state where the pasta water and the pasta has created that magical sauce with just the right consistency. Don't rush it, and don't over do it.
    You can also add some good quality canned sardines or wild salmon to this dish. The liquid in the can of seafood adds a really nice touch of flavor.

    I was a little nervous trying this pasta cooking technique for the first time, but I managed to fumble my way through it and holy smokes it turned out marvelous! I wasn't very hungry when I dished up, but I cleaned the plate quickly and was rushing back for seconds. It was like fine dining.

    I've seen this Cooked on Another Channel, and the Guy (An Italian) finely Chopped the Parsley Stalks, cooked them with the Garlic and Pasta, and used the Parsley Heads finely chopped more as a Garnish, Either way, I'll definitely be cooking this Simple Dish 😀 😋

    I'm from Rome and as I said on your carbonara video you're the first american to master real pasta recipes, especially the "simplest" ones, that are the easiest to fuck up. This is the real thing, no twists, no complications, just experience and a few quality ingredients.
    If i could give just a couple of tips: that was a LOT of salt, maybe a little too much, and add the parsley in the end, on the plate, and then mix it up again. That's cause if you add it in the pan you might cook it and when cooked parsley gets a bit bitter, which is good for some recipes but not ideal for this one even though you added enough water that it probably didn't cook so much.
    Great work nonetheless, this is by far the best american channel for pasta recipes.

      Jurassic Park is awesome. Saw it all summer long in 1993, then went to Kauai in August 1993 to a conference on the making of the movie. All the lead tech guys were there. Winston, Muren, Tippett, & Lantieri. Best trip ever when I was 20!!

      tastes a billion times better with some parmesan and freshly squeezed lemon. Consider some black pepper aswell

    For an alternative version you can add toasted bread crumbs at the end like you would do with cheese, they will also absorb the oil

    I had some goodfellas vibes with the thin garlic cutting. Should of used a razor blade.

      I’m Italian, don’t do that. The melting garlic is a legend spread out by Goodfellas. In reality garlic doesn’t melt, it burns instead. The problem with thin garlic is that it burns real quickly and it’ll mess up all your sauce. Nice video btw 👍

      When I stayed in the Sicily region for one month, we stayed in palermo for 3 or so days. It was a gritty old city, but I loved everything about it! The old buildings, the darkened streets, the midnight music, so charming. Will definitely go back.

      I make this with lemon, but i'm thinking i might have to add 1 or 2 anchovies into the oil to begin with now! can't believe it never even crossed my mind and i add anchovies to so many other dishes in the same way!

    It's my absolute favorite quick pasta dish. I love the 4 Roman pastas as well, but I always come back to the Aglio e Olio. Some Italians make it as a midnight snack!
