⭐️CHARRO BEANS RECIPE (beans used in the video)

INGREDIENTS
2 1/2 LBS (1.13 kg) beef skirt meat (or flank steak)
8 oz (236 mL) juice of orange
4 oz (118 mL) juice of limes
1 Tbsp (15 mL) Maggi seasoning sauce (or soy sauce)
1 1/2 tsp salt (or Lawry's season all salt)
1/2 tsp black pepper
1 tsp granulated garlic powder
1 tsp granulated onion powder
1 small onion sliced
3 cloves whole garlic
NOTE: The marinade for this recipe works well for up to 3 lbs of meat
FOR THE TORTAS
French Sub Rolls
Refried Beans (I used homemade charro beans)
Shredded melting cheese of your choice
Mexican sour cream
Salsa or hot sauce of your choice
Fresh sliced lettuce
Fresh sliced tomato
Fresh sliced avocado
Sautéed onion
INSTRUCTIONS
If using inside beef skirt be sure to start by removing the membrane from the meat
Then score your meat and cut in to manageable medium to large pieces
In a bowl combine fresh squeezed juice of orange and lime, Maggi sauce, salt, pepper, garlic powder, onion powder and mix well
In a large gallon food storage bag, layer the meat, sliced onion, whole garlic and marinade
When all the meat is layered, pour the remaining marinade in the bag
When closing, try to remove all the air to ensure meat is submerged in the marinade
Refrigerate and marinate the meat for at least 6 to 8 hours, overnight for best results
NOTE: If using a more tender cut of beef, you can marinate for at least 2 hours
Once meat is marinated, place on your counter top for 20 minutes to remove the chill
Preheat a cast iron griddle or pan on a medium heat for 5 minutes or until griddle is hot
Remove meat from marinade
Once pan or griddle is preheated, you can begin to cook and sear meat
Cook until desired doneness
Then rest the cooked meat for at least 15 minutes
Slice and use for tacos or tortas
TORTA ASSEMBLY
Slice french sub rolls in half and butter both sides
Place sub rolls on griddle and toast each side
On one side of the bread slather refried beans and then add shredded cheese on top
Then add sliced meat and sautéd onion on top of cheese
Now remove both sides of bread from griddle and start adding desired condiments
I like to drizzle Mexican sour cream, salsa, fresh sliced avocado, lettuce and sliced tomato
Then I like to slather more refried beans on the other slice of bread and top the sandwich
This carne asada recipe will easily make at least 4 to 6 tortas

Carne asada burritos are among the best meal-in-a-sandwich experiences ever. It has everything in it including guac, sour cream, a bit of refried beans, lettuce, shredded cheese. Oh God, it is SO delicious.

I use a mix of 1/2 cup Oj, 2 limes squeezed, 1 tsp pepper, 1/3 cup soy and top off the cup with Worcestershire

Thank you for explaining the difference in the crema. I always wondered about that. I know I like one more than the other, just don't know which one it is, now I will have to pay more attention now that I know the difference.
A Doctor Friend of my father used to live in Chihuahua Mexico, but moved to Arizona to make more money. He and his family went home a few times a year to see family and he would always bring back this cheese from Chihuahua. It was a white cheese, about the consistency of Muenster Cheese from Germany, but it tasted better to me. After doing some research to try and find that cheese I came up empty. One person I talked to thought it was Queso De Morman, but I haven't been able to find that to see if that was it. Any idea what it was? Unfortunenatley the doctor and my parents have all passed away so I have no way to find out what it was from them. Thanks for any help you can provide and thanks for all the great recipes! And, could I request Albondigas next???

I just buy marinated fajita steak. I can’t replicate the Mexican stores seasoning. It’s so delicious.

My best fajitas? Everyone raves about? Two days marinating in plain lemon juice (6), lime juice (6), and salt (2tbs). People love the subtle twang. Works for beef, pork, and chicken. For seafood? Just one day. Same result.
Nice! I do have some family members that don't like the citrus taste so they add half of the citrus and add more soy sauce or Maggi sauce. It all works in my book. 😁

Flat iron steak would be a great choice of meat as well. H-E-B sales it but you must ask the butcher for it because it's normally not out in the meat case.

I have that on my long todo list. 😁👍 The marinade is a cross between al pastor marinade and carne asada marinade. I'll try to get to it soon.
I wonder how well it freezes cooked or uncooked. I marinated too much Bulgogi last year and froze the leftover uncooked meat. After thawing a couple weeks later I threw it on the BBQ grill and it was still amazing. I like to cook or prep ahead and this looks like a potential "meal in a bag" dinner rescue...Tacos, Tortas, Fajitas, burritos...my salivary glands hurt.
