Always loved spreading my tacos with some room temperature lard before grilling and to finish carne asada I highly recommend red onion soaked in lime juice and salt.

Good job, i do salsa verde on my tacos instead of pico de gallo cause i like the heat, and prefer a serrano based salsa instead of jalapeño based (serranos are a little spicier and i just like the flavor a lot better than jalapeño)

You shouldn’t marinate beef in lime juice overnight because the acid will cook the meat. Notice when he lays the flank on the grill it looks partially cooked.

There have been plenty of tests/studies that show that marinating time should be about 30 minutes for all meats. Penetration will only ever be 1-3mm. But after about 30 minutes there is diminishing returns. After a few hours the meat that has been penetrated can start to become mealy and mushy from too much acid breakdown of proteins. Overnighting in a fridge typically works because it's cold and all such processes are slowed by cold. Especially if it goes in immediately after coating. But you basically get nothing out of an overnight fridge marinade that you don't already get from just letting it sit at room temperature for a 30 minutes.
