i made the Italian ones (3 times already) and they are excellent! i blended the fresh garlic with the wet ingredients in my Nutribullett, and i made my own oat flour using the NutriBullet too. Also, i just used enough foil to cover the sausage. i HIGHLY recommend this recipe, and i'll be trying out the chorizo soon.

I recently had a vegetarian sausage with onion and paprika and chili peppers made from gluten-free corn flour. after everything is mixed well I put it with the sausage filler in a vegetarian sausage casing (edible) 23mm. I'm an old-fashioned butcher and I didn't want to know anything about vegan, but I tried it anyway and I have to say it's delicious, I'm going to do this more often and add it to my sausage assortment.

I'm pretty sure any flour will do, as for the nutritional yeast it is used because it has a nice cheesy flavour and a pleasing consistency but you can definitely skip it or replace with some finely ground nuts

Since the recipe website is broken, I made it according to this video. Unfortunately, it did not go well. The taste isn't like that of sausages. But, what most went wrong is that even after hours (more than 5 hours) of steaming, evaporating of all the water and steaming again, it still did not cook or become solid from the inside and I had no choice in the end and put it in the oven. The final taste is far from sausages, and less tasty.
I hope I will find time to make these sausages! But could there be a way to do this without the plastic and the aluminium foil? I know that alginate sausage casings exist, though i don't know where to get hold of them.
