Also, i just used enough foil to cover the sausage. i HIGHLY recommend this recipe, and i'll be trying out the chorizo soon.

I'm pretty sure any flour will do, as for the nutritional yeast it is used because it has a nice cheesy flavour and a pleasing consistency but you can definitely skip it or replace with some finely ground nuts

Add all wet seitan ingredients into a large mixing bowl and whisk together. Also, add in the dry seitan ingredients and whisk until a dough starts to form. Knead using your hands for 4 minutes. No more, no less for the perfect texture. Roll dough out into a long log. This may require a bit of squeezing in order to stretch out. Seitan dough can be a bit tough. Cut the log into 4 even smaller pieces and roll each piece into sausage shape logs. Roll each sausage piece in plastic wrap tightly and then roll that into aluminum foil. Twist the end like a candy wrapper and steam all for 1 hour. Remove wrapping and use as you wish. Store in the fridge for up to 7 days. Notes The base of this recipe is for one sausage flavor. If you would like to make both sausage flavors. Make 2 of the seitan dough mixture.

Such great recipe! I made both. The second recipe I added extra hot thai chili powder because I am a spicy eater, after steaming....I let it cooled and grilled them on my Ninja grill. OH SO YUMMY. We had it with grilled peppers and onions on toasted italian subs. Thank you Rose. Love you!

1/4 tsp crushed red pepper flakes
1/8 tsp ground fennel seed
1/8 tsp dried oregano
1/8 tsp dried thyme
