    Wasn't sure how these sausages would turn out, but I made them & they were very good! Have some in the freezer. I increased the sugar & salt to 1 teaspoon each, added 1/4 teaspoon garlic powder, 1/2 an apple (peeled), & 1/2 teaspoon anise seeds. I only used 1/4 teaspoon cayenne. Only needed 1 cup vital wheat gluten. I left the mix in the fridge overnight. Next day, I wrapped the sausages in pieces of parchment paper, then again in pieces of foil. Then I STEAMED them in a basket set on a round rack in a large stock pot with the water to the level of the rack. I let them cook 50 minutes over low heat, adding water about every 15 minutes. When I unwrapped them, they smelled sooooo good! I could eat them raw! They were delicious browned in skillet & served on a bun with BBQ sauce & lettuce. I like that they are low in fat, too. : )

    I love videos like these. Shows that there is nothing more fake or processed about vegan meat alternatives than in the process of baking bread or a cake. Will definitely give this ago.

      Yes, but this is something all together different than anything made up in a factory. Beyond meat and impossible burgers, etc are not at all what they appear.

      @@misskriss848 Agreed but we have to accept that when things are mass produced things have to be added to stabilise a product to give it shelf life. If people can cook from fresh that will always be better and less processed but in the absence of that, we have to be realistic about how food is brought to us.

      @@evafontaine3440 It's better to cook from fresh and using whole foods ingredients and I rather abstain from meat alternatives than buying meat alternatives in shops as they are too processed with too many additives. It's the same for meat, better buy a steak or a piece of meat rather than processed patties or chicken pieces. To me, it means just frying pieces of tofu in the pan when I can't cook something like this recipe.
      It's better to abstain from processed food, whatever they are and eat simpler, whole foods and if you really crave something like sausages then make it yourself, you would have the drive to make it!
      Ps : the you I use is not referring to you @evafontaine3440, it's a general you.

      Store vegan meat look almost same as real meat I'm afraid the hell know what they put in it right, may be real meat or ton chemicals hormones preservatives? At least we can make at home be lot safer.

    Thanks for sharing this recipe! I just found your channel and have subscribed. I cannot wait to give these sausages/frankfurters a try. I went vegan 4 years ago and hubby and I believe in cooking from scratch with as little processed food as possible. We even make our own tofu, which was so much easier than we had thought. I think after trying it as you have made it I would play around by adding some yeast extract. My other change would be to wrap the sausages in parchment paper before wrapping in the foil. Thanks again for the recipe.

      @@lisetteem588 It had me worried the first time I saw it being made and was consider trying it. But I tried it anyway, figuring if I did not like it that it would be good for my compost. I was worried that it would taste funny or even have a fuzzy texture. But honestly, it doesn’t, and it is delicious. I did a lot of research before I made my own and there was lots of info on how to tell if it was not growing the correct mould. Basically, work with sterilised items and the culture and you are not likely to go wrong. Really, it is no different than working with the culture to make your own yogurt, be it vegan or dairy, if you have ever made your own yogurt from scratch.
      I make mine own tempeh in a slow cooker, so it does not take long to make, I am able to give it the warmth it needs, and I know I can keep the environment sterile that way. There are some great videos here on YT showing you step by step how to do it until Irene decides if she wishes to make one. Once you start making it though, you will probably not go back to store bought unless in an time emergency, as it is so much tastier and you have full control on how far you let the culture grow which affects the flavour, giving you so many more options. I found it to be creamier inside as well. So it would get great texture on the outside with that creaminess from the bean. I have experimented using cannelloni beans (white kidney beans) and chickpeas with the culture too, not just soy beans and they turned out great too.

    My family isn't too keen on mushrooms. My husband and I want to eat healthier, but the other 4 of my family are not so into it. Three are kids under 15.       Here's a way to get people to think of vegan or vegetarian as just another food to choose from. I saw a video tonight where she said she ate vegetarian burgers with strip of bacon. Great way to introduce vegetarian food.

    These were delicious! I added some all natural Hickory liquid smoke and these "bratwurst" were great. Had the together with "carrot hotdogs" as second option. Second time I sprinkled your brats with curry as are popular in Germany and they were also 🎉. Thanks!!

    Using tapioca starch and tempeh also works. I tend to marinate the tempeh and sometimes bake it as well, since it heightens the flavour of the marinade. The veggies can also be oven-baked before blending, same as you do when making certain soups. :)

    I would recommend letting it sit at room temperature 24 hours and it some fermentation go on tastes much more matured

    Can something else be used instead of the aluminum foil? That's the only thing about this recipe that I wouldn't want to use... it can leach into the food. Otherwise, this looks very good!

    Delicious!! I don’t have onion so I double the mushroom quantity using 2 kind of mushrooms. Being lazy, I put the dough in the instant pot high pressure for 30 minutes. Once cooked, I slice it and fry it in pan. So yummy!! 🤤

    A food processor would be a much better choice than a blender for mixing all of that up.
    Also, never let your food touch aluminum foil. Aluminum is a neurotoxin.
    Just shape them into whatever shape you want and cook them in the microwave without any oil. Keep it healthy!

    This is a great recipe. I’ve always dreamt of making my own vegan sausages. I love garlic and would probably add that to it. I wonder why you chose to use cabbage , and would it be ok to use an apple or pear to create a sweet savory taste.

      This is a very good way to eat your vegetables. Cabbage is one of the cruciferous vegetables. They have health properties that most people never get enough of. It was genius to shred the cabbage before cooking. And then letting it wait, to give it time! Doing that allows for formation of a chemical called sulforaphane. It optimizes brain function. 😊👍

      Its vital wheat gluten, not wheat flour. And to my knowledge there aren't any alternatives to vital wheat gluten. It is the protein component of wheat that is wholly responsible for the "meat" like consistency in plant based meats, such as seitan.

      Some did with chickpea flour, tapioca flour and sweet rice and rice flour.

      I'm gluten free too, and I am going to try these with some oat flour, maybe add some xanthan gum or another binder...we'll see how it comes out, I already shredded cabbage and carrot and need to use them up, lol...Blessings on your journey.

      Try google gluten free seitan to replace the vwg in the recipe. Alternatively if u can find , use pea protein powder as alternative.
