Mexican Enchilada Casserole with Homemade Enchilada Sauce-A Layered Version of Enchiladas -So Tasty!

- Mexican Enchilada Casserole with Homemade Enchilada Sauce
MEAT INGREDIENTS:
1 1/2 pounds ground beef
1 chopped red pepper
1 chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon pepper
1 teaspoon salt
4 ounce can green chilies
15 ounce can black beans, drained & rinsed
ENCHILADA SAUCE INGREDIENTS:
3 Tablespoons melted butter
3 Tablespoons all-purpose flour
2 1/2 Tablespoons chili powder
1 Tablespoon paprika
3 cups chicken broth, divided
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon ground cumin
15 ounce can tomato sauce
1 teaspoon chicken bouillon
1 teaspoon oregano
1/2 teaspoon sugar
1/2 teaspoon pepper
ADDITIONAL INGREDIENTS:
8 - 10 flour (or corn) tortillas
1 pound Colby Jack Cheese, shredded
Brown the ground beef with the red peppers and onions. Drain any grease. Add the garlic powder, onion powder, pepper, and salt. Cook about one minute. Stir in the green chiles and black beans. Warm through. Set aside while you make the Enchilada Sauce.
ENCHILADA SAUCE
Melt the butter in a large skillet. Over medium-low heat, whisk in the all-purpose flour and cook for one to two minutes or until it has turned a golden brown color. Add the chili powder and paprika. Cook, stirring constantly, for one minute. (It will become “lumpy”). Whisk in half of the chicken broth. Continue cooking and whisking until the mixture becomes smooth and begins to thicken. Whisk in the garlic powder, onion powder, and cumin. Whisk in the remaining chicken broth and the tomato sauce. Cook until it just starts to thicken again. Whisk in the chicken bouillon, oregano, sugar, and pepper. Cook one to two minutes. Remove from the heat while you shred the cheese.
TO ASSEMBLE THE CASSEROLE:
Preheat your oven to 350°.
Grease a 9” x 13“ baking dish. Dip the tortillas, one at a time, in the enchilada sauce to coat completely and use them to line the bottom of your baking dish. On top of your tortillas, place about 1/3 of the meat mixture. Sprinkle with about 1/4 of the cheese. Repeat layers of coated tortillas, meat mixture, and cheese. Repeat layers, one more time. If you have enchilada sauce left, spoon a little over top of the cheese on the casserole. Top with the remaining cheese.
Bake uncovered for 20 - 30 minutes or just until the casserole is bubbling around the edges. Allow to sit for 10 - 15 minutes before cutting and serving.

Yum!! My Mom used to make enchilada's she would use green onions and black olives with corn tortillas. Occasionally she would use flour tortillas and as a kid, I like those better. I will have to try this. Being so close to Mexico, and my brother was married to a Hispanic woman with a very large family, we made tamales every Christmas, Enchiladas galore, and yes refried beans are made from pinto beans and lard, lots and lots of lard 😂, homemade tortillas, their Mom tried to show us kids how to make tortillas and she would laugh, when we would burn the tips of our fingers flipping the tortilla over. "That Gringo meha" she would say while laughing then she'd encourage me to try again. I miss those days, I am Sixty one now and that was oh so many years ago. But yes, your Enchilada casserole looks yummy!!! Thank you for sharing your gifts with us all, I would love to come eat at your table someday!! ❤

This casserole is identical to what my late mother prepared. She cooked her own Pinto Beans from Dry beans with traditional. Mexican Seasoning as they cooked and hydrated. There were always several 50 # sacks of Beans in the garage.
She also added drained cans of canned whole corn and whole small black olives too. Sometimes stuffing the olives with cheese also. Lastly, inside the casserole were dolyps of sour cream scattered about.
My late Aunt used to make Chili Beans to sell at a local charity flea mart every month. For several years. People would plan their weekends just to stop by for her beans. She used the Las Plamas Enchilada Sauce In them.. Another secret was that she used grass fed Beef raised on her ranch. Actually every year they held back a Bull calf from castration and raised it to yearling status. About 1000# of "bull hamburger". Then the entire meat was made into hamburger. Resulting in about 500 #. Every year !!! ALL of which went into the Chili Beans for 12 months of Flea Mart Chili Bean sales at 50 cents a bowl. Always sold every bit of them too !

Pinto Beans are really better than the black beans.....make your own pinto beans, and make refried Beans.....and you have Pinto bean Dip also.🤣..so delicious.....

Oh my, another home run dish! Love that you can freeze it before baking! I’m a widow but I still love to cook! I would make two casseroles from this recipe. One for now and one to freeze! I do share share my meals with a sister in law about twice a week. And yes I’ll make the enchilada sauce from scratch! The only thing I will change is I like corn tortillas. And I fry them in a little oil before dipping! Just done this for around fifty years! But I can almost smell this casserole baking now!

I agree Tom, the Las Palmas is a good substitute for home made. I agree Melissa, sour cream by the spoonful. 😅 Corn tortillas are a healthier option and since you haven't rolled them the breakage is minimal. The only thing I would add is Cotija sprinkled on top after baking. Thanks for sharing.

I live in El Paso home of some of the BEST Mexican food. We use a lot of Las Palmas sauces here. Very authentic!

While on our way to Texas (Austin) we ate at a wonderful Mexican restaurant in El Paso, I can’t for the life of me remember the name of it, and if you know the one I’m talking about, would you give me the name. I know it’s been around for a long time.
Pinto beans would go well in this.
Pinto beans are used to make refried beans. When I make beans and cornbread I freeze the leftover beans to make refried beans.
A layer of refried beans would also be good in this casserole.
I’ve been making enchilada casserole for years and years. I use a can of enchilada sauce, can of tomato sauce, can of Rotel, can of green chilis, ground beef, onions, fresh peppers of some sort (bell, jalapeño, Serrano) garlic, and cheese.
This sounds really good too.....

My sister snacks on sour cream and chips. She will eat it by the spoonful. Don't really like black beans but if I can find Hunt's small red beans, I would use those. My Mom used those in her chili. This looks really good, printed it out. Plan on making it soon. Thank you for sharing.

about the leftover sauce, and the beef filling if any left ~ try some in an omelet, with or without cheese.
i've used leftover chili for omelets & it's very tasty. i know chili is a "different critter", but still close enough in regard to the flavor of the spices.

oh, also -- those crocheted holders are a nice gift 🙂 . i don't know if those are made with acrylic or cotton, but cotton is the better choice for using near the burners than acrylic. i used to make some "panhandlers" (as i called them), & used acrylic yarn, not having thought that it could be more quickly flammable, at the time. thankfully i never had any incident with them, but still, once i knew, i wanted to be more careful.. especially if leaving the holder on the pan while the pan is still on the active burner. just a thought. ❤

Wow, these look sooooo good lol!!! I love enchiladas but never thought to put it together as a casserole, scrumptious idea! When my daughters were still living at home I made a Texas lasagna, which was like a taco casserole, and they went nuts for that. And you can dollop lots of sour cream on top of that, Melissa, like I do mmmmm1!! God bless you both, loved this one!
This looks delicious! I make green chile chicken enchiladas, I do like mine rolled; I always rinse my canned black beans thoroughly also; however, if you cook them at home, you won’t have to rinse; my husband prefers the red sauce with beef, I prefer the green sauce with chicken; I usually do both to satisfy everyone, as you said, they are not complicated at all, so fixing both dishes isn’t difficult and we have dinner for a couple (maybe 3) days! Thanks for the Mexican recipe, we sure love the Mexican cuisine!❤
Great recipe and love enchilada casserole. My family used to mske the most delicious black bean soup from scratch. No canned beans. Not too many fancy ingredients, perfectly seasoned. Good memories. Good video. 👍

Thank you for this great recipe. My husband absolutely loves this casserole. It is like a Mexican lasagna. There was plenty left over so I froze it in dinner sized portions for the two of us and will see how it heats back up when completely cooked. I also like the idea of freezing it prior to cooking when needing to bring it to a gathering. Although the enchilada sauce is definitely not authentic it is delicious. It was delicious on our eggs this morning. We have enough leftover to freeze in portions to use on the casserole portions we froze!

Thanks to both of y'all for sharing this, it's a delicious, versatile dish. I have used a popular canned sauce, but I prefer to make it with Guajillo and Ancho peppers along with other ingredients that results in a delicious sauce when made.

I always hesitate to say how many servings a dish has because that really depends on how big of a portion each person takes, but I consider this an 8 serving dish. If you're serving it with Mexican Rice, chips and dip (queso, salsa, guac, etc.) it goes a lot further. Enjoy every bite! Thank you so much for watching our videos and supporting our channel.

Thank you for the great easy recipe, I Love Enchiladas. I'm from California and we often leave out the beans and have re-fried on the side (Pinto Beans) along with some Mexican-style rice. Maybe this seems odd, but many people who make enchiladas in California like to add sliced black olives in every layer or just on top, which adds a nice flavor, like your idea of cutting the tortillas in half.

Another winner! We just loved this recipe and YES, I made the homemade enchilada sauce. The only thing I did differently is I used a deep dish pie pan to construct the casserole in. It made 2 enchilada pies. One for now and one for the freezer.

You should try Frontera red chili enchilada sauce. You won’t want to make your sauce anymore. It is the best sauce I’ve ever tasted even homemade. I’ve always used refried beans, pinto beans or my favorite Ranch style beans in my enchilada casserole. Leave the ranch style sauce in them it’s kind of a chili sauce. They make them with sweet onions or jalapeños and they’re so good.
