Hi Marilyn, what a sweet comment about the flowers. Of course I get them from Trader Joe’s too. It’s a super store isn’t it? And it is less than five minutes from my house. So glad I was able to help with your decision about the Beech mushrooms. The way I cooked them in the video gave us a wonderful result. They were actually cooked my Breville Hot Air oven at 375 on super conduction, which is close to the 400° oven temperature that I referred to. Though it seems a shame to heat up the entire oven for that little bit of mushrooms. We decided that when I buy them in the future we each get our own bunch😃

That looks delicious!! I love soups too. Well, I guess I have you beat, I've had my instant pot for about 2 years and haven't used it yet!!!🤣😂I know, Isn't that ridiculous! I've never heard of beech mushrooms but they sure look interesting! They sort of look like enoki mushrooms but enoki's have smaller caps. I think I heard a few "kitty voices" in the background!😺😺Love that!
Hi Cattitude! It’s time to break out that Instant Pot. And for quinoa, rice, batch beans prep, batch, cooked potatoes for the week, soups, etc. It is simply too easy once you know how to do that, rather than anything else. I had never heard of Beech mushrooms either. Though they look like enoki they do have a different texture, and they baked beautifully. Other than at Trader Joe’s, I wouldn’t know where to find them.. These cats of mine, especially Booty the leader, are very vocal. Dinner time is a screech fest😳😃🤣. Have a great week 🌻🥰🌻
There is an amazing greek cookbook by vefa Alexaidou. Called Greece the cookbook. It's more like a lifes work of recipes and details of all things greek food. I think it's pretty much the best for English speakers. She is a very famous cook in Greece. Instapots and ninjas are great. I cook bean soup or eat it every day. You do need to precook the beans until tender first. Then also you can use some of their cooking liquid in the stock. Makes the soup a better stock. About 40% of calories in Greece comes from olive oil. I get a bottle from my farmer, it comes in a recycled Fanta bottle! Very thick. You do need to use a lot olive oil to get the benefits of the diet. Please reconsider adding about 1/4 cup of cold pressed olive oil when saute.

I follow the directive of Drs Dean and Ayesha, share the neurologists, as well as Caldwell Esselstyn, the cardiologist, Dr Gregor of Nutrition Facts.org, and many others, who recommend little or no added oil. I get lots of healthy fat and nutrition from eating olives, avocados, seeds, and nuts. The College of Lifestyle Medicine after which I take my recommendations also recommends low, added oil of any kind. Thanks again for your thoughts. 🌻🥰🌻
@@NanSimonsen I made bean soup in my ninja today. I do not know these drs although I have of Dr greger. I know there has been a lot in the past year of the Mediterranean diet. And Mediterranean plus which adds nuts and berries. It's all delicious I am sure. It is sometimes problematic where people talk about the diet, who are not from the region, say it's the Mediterranean diet and it clearly isn't. You haven't done this. But really we eat a lot of olives and olive oil. We cut back if we need to lose weight. The blue zone study videos show this. I hope you can visit one day. You will love it. It's also a lot more than diet, lifestyle is really hard in the past. This soup was basically what people lived on. That and lots of goat milk and cheese from goats or sheep with pork or goat etc every now and again. Lots of manual work offset the calories. Life is still like this for some, for some on the islands but time changes.

This past October we spent time in Italy, including Sicily (with its Greek influences), and sailed down the Aegean visiting Croatia, Montenegro, and several other stops. We will visit Greece again someday. 🌻🥰🌻
