Nan, you are so inspirational! I started my WFPB journey in April of this year (cold Turkey) after going through a tumultuous divorce, and loosing my mother in July! I knew if I want to live an abundant life; I had to start taking care of myself now at 65! Thank you for being a glowing example of wellness!🌟🌺

I had to watch this video again, I will start learning how to make my own broth, My gut/stomach health feel so good, no more stomach issues. I had some pinto beans today and just threw lots of veggie and brown rice with it..... I need to start cooking in batches, Have an awesome weekend,

Very helpful video. Soups, chilies, and salads are some of my favorite meals. You mentioned that you eat a 1 1/2 lbs of salad. I was wondering if that is before or after being chopped?
Hi Tracy, that’s after being chopped, and then topped with additional vegetables, beans, fruit, and sometimes chopped pickles. As I’ve gotten older, I think I’ve cut back a little because I get full more easily. I think my solid now is closer to a little more than a pound.🌻🥰🌻
Love these videos on soup ideas as my spouse and I enjoy so many soups as well. Do you have any soups or entrees with the Scarlet Runner beans? You got me hooked on Rancho Gordo and I’m receiving my first dry beans order from them today. I bought the yellow eyed peas and I’m going to make your Hoppin John soup tomorrow…. Next I’m getting those Scarlet Runner beans! Great tips and advice from you… thanks!
It’s good to hear from you Suzanne. I have a Scarlet Runner Bean Ragout on line that I really like. I also make them, and then freeze them in 1 quart freezer bags to have on salads, or to mix with Try sautéed mushrooms, greens, and garlic for a quick dish with brown rice.
You’re right about the oil, I get them from Trader Joe’s, or Costco, but they’re not necessarily oil free. The olive oil hardens in the cold and it’s easy to get rid of.

@@NanSimonsen Thanks Nan! I’m going to try that ragout. I also meant to ask what kalamata olives do you buy? So many I see have oil in them.
