It came out pretty good with some variations: brown rice paper, pressed the tofu a bit, Napa cabbage, added some watercress, substituted the chickpea starch with fresh ground flax seed and arrowroot. Used avocado oil w a little sesame oil to fry. All this just because it’s what I had in the house.
I made these today, and it was much faster and easier than I thought. I had only my perpetual cabbage so I skipped the salting step, and had chickpea-lentil gram flour, which worked well also. The most delicious dumplings I ever made! Thanks for the recipe.
Rice paper is a great substitute for dumpling dough👍. It does have a lot of carbs, but stuffing it with lots of veggies helps cancel out the carbs. I would try the tofu but leave out the green onions and use leeks instead.

These look delicious. I'm trying the recipe right now. Is 80 g the right measurement for the spring onions. It looks like 2, maybe 3, onions in the video, but when I measure 80 grams it was 6 onions. I'm doubling the recipe so I can use a whole block of tofu, so that would be 12 onions. Thanks!

The hard wrapper the cook wrapped the tofu-vegetable filling in is "vietnamese rice paper". It's hard and crumbly when dry, but softens up a little when moistened with warm water. Don't use very hot water and don't soak it for too long, otherwise it'll become too soft and very sticky, and very difficult to work with. It only needs to become a little pliable to wrap up the filling, then becomes crispy and crackly when pan-fried. Hope that helps.
I love these rice paper rolls. I noticed that your made rolls are quite dry. The rolls I make are always quite wet, this means they stick to everything they touch! Do you have a trick to share in getting them dry enough to handle?

Thank you for an interesting recipe. Can the ready rolls be frozen before frying? If they can, should I fry them frozen, or thaw first? If freezing before frying is not a good idea, how about after frying?
tried a recipie similar to this using rice paper. the crispiness doesn't last long afterwards it becomes chewy almost licorice candy texture or a jerky
