Probably already in the comments somewhere but when I try it I'll be adding about 1/4 teaspoon of black salt ('kala namak' - available in most Indian stores), to make it more eggy.
@@karimylo4002 when I use black salt I generally (instead of adding it to the mixture) I sprinkle it on top. Less is needed for the same amount of egginess flavor. This looks so good, trying it soon.
Just made this for lunch (were I live lunch is the biggest meal of the day and always warm), sadly did not have chickpea flour (even though I love it and I'm sure it would have been even better with chickpea flour) so I used wheat flour, and I used fresh chives instead of green onions. Added some black salt too, and it tasted amazing! With the help of two spatulas I even got it in a square shape without a square pan. Family loved it! 🥰🌱

@cindy You probably know this but just in case: Chickpea flour + water = an egg substitute (not for flavor, but as a binder). Useful if you don't or can't use eggs.
This is a vegan cheese omelette! I need to try it with the filling I used to put in veggie omelettes. It was a mixture of sautéed onions, mushrooms, sweet peppers, and sometimes, olives. I'd love to have omelettes back on my menu. They are such a quick and easy dinner.

Saw this today and made it for dinner tonight. It is a keeper. I did use Wondra flour instead of chickpea flour because I have to stay low protein. I chopped a piece of fresh jalapeño pepper in addition to the onion and carrots. Family loved it. Looking forward to trying more of your recipes.

No, we did not see the flipping step actually being done. It is not in video. Would have been helpful to see how it was flipped. Because in my case, there was no chance it would even remain intact, forget about flipping. So I ate scrambled tofu, which was ok. Atleast didn’t have to throw it away.
@@WeCookVegan Sorry, I didn't see your message before. I saw at 3:18 that it wasn't cooked well before you added the cheese. It is very thick so I don't know if it can cook well inside. I still haven't tried cooking it but I'll give you a feedback when I do. Maybe it could be spread a bit thinner so the upper part dries up (like pancakes) before adding the cheese. It's just an idea.
This is so close to the tofu scramble I make in a lot of ways that it feels like the final result miiight end up feeling like a good vegan equivalent of a french toast omelette sandwich. I'll definitely have to check this out

We made this with the pan you used, but as others have experienced, when flipping everything was mushy. After the tofu was cooked, we put it in a baking dish with sliced tomatoes on top and baked at 375* for 20 minutes. Result? Great!

It’s called tamagoyaki pan, and it’s used in Japan to prepare omelette rolls. Tamagoyaki means grilled eggs. It’s very popular! Hope this keyword helps you find them
Thank you for the recipe! I have now attempts this twice, without much success. I was wondering if I could ask a couple of questions. 1. How cooked (or how wet) is the inside when this is done cooking? I think it needs to be relatively cooked, since the batter doesn't taste good raw? 2. How long are you cooking it on each side? My experience so far is that I'm ending up with burned outside and undercooked inside, which makes me think maybe I need to cook it for (much?) longer at lower temperature, but I'm already doing a few minutes a side. Any advice welcome! It looks delicious in your video.
Hello! Thank you for your questions. 1. The inside should be cooked. 2. You need to cook it on a medium low so it does not get burned outside and cooks better inside. Also do not make it too think. I suggest to make it rather thin as I show in the video. I hope it works for you! 😊 💖
I bet you could also leave out the diced vegetables. Sometimes vegetables, since they are raw, will leak water into the mixture. Also: try putting a lid over it after you do the flip. A lid should intensify the heat in the center.
Just made this again but remembered to use my black salt. Also gathered some lambs quarter and fried with some onion and fresh garlic and pickled Serrano in the tofu. Can’t wait till it’s done. 😋 yum

Hi John, well done for being vegan! This type of pan called "Japanese Omelette pan" or " Tamagoyaki pan". My pan does not have a brand name on it but you will find a lot of options online I am sure. When making this dish please press it down with a spatula several times on all side, it helps to hold it together!

I translated it for you: Vegan mozzarella: 80 g white tofu (Sunfood, Lunter) OR soaked cashew nuts OR a combination of both 20 g tapioca flour (3 tbsp) alternatively cornstarch but tapioca works better 10 g salt (2 tsp) 10 g agar agar (4 tsp) 2,50 g of nutritional yeast (2 tsp) 2 g sugar ( 1/2 tsp) 1 g citric acid (1/4 tsp) alternatively vinegar or lemon (2 tsp) 400 ml water 60 g unscented coconut oil alternatively other neutral oil - I like olive oil since mozzarella is an italian cheese after all 4 g psyllium plus 30 ml water optional - for making the cheese more stretchy Preparation: Mozzarella cheese is very white in colour and neutral in taste. That's why I use unscented coconut oil, citric acid (you can get it at any grocery store for boiling supplies), tapioca flour (you can get it at a health food store, but you can find cornstarch at your regular grocery store, which is also fine) for thickening, and tofu. If you don't have any of these ingredients, feel free to substitute, but it will change the meltiness, color, or flavor of the cheese a bit. Mainly the tasteless/flavorless oil and citric acid make for a neutral flavor. I just lightly season the mozzarella with nutritional yeast. You can use more of it if you want a stronger flavor. You can find nutritional yeast in health food stores, but it's now appearing in larger supermarkets. If you had vegan lactic acid at home, that would be ideal for flavouring plantbased cheese - that's for very keen cooks. Agar agar is a vegetable gelling agent and an alternative to gelatine. It makes the cheese harden beautifully and can also be grated. Some brands have slightly different properties but all should work. Some take longer to melt beautifully, some just don't. Ideally use pure agar agar powder. Vegan mozzarella cheese without tofu If you have an allergy to soy, replace it with cashews. Just soak the cashews in water overnight or boil them in hot water to soften them. Stretchy vegan mozzarella cheese Psyllium makes vegan cheese more stretchy when melted. It has a light brown color and the vegan mozzarella isn't as beautifully white afterwards, so only use it when you're more concerned with stretching than appearance. You can get it at health food stores or pharmacies. Mix 4 g of finely ground psyllium (1,5 - 2 tsp) and 30 ml of water. Allow the mixture to thicken for a minute and add to the other ingredients before blending.

Odorless coconut oil should result in a shreddable / slicable block but I never tried it. The original recipe calls for a lot of oil btw. You can reduce that if you like.

Wow, but at 2:50 minute the compound like quite different from that video show at 2:55 minute; the last seems more fluid like as it would be add more milk in the recipe.
I tried this just now and it turned out more like scrambled eggs. How do really get that texture when it cooks at 3:00 and 3:26? (I didn't have nutritional yeast though. I replaced with curry powder)

I decided to eat a plant-based diet two weeks ago and there's so much I'm discovering - such as nutritional yeast. At the organic food store in the small town near where I live I bought my first bag of it this morning along with chickpea flour and then I made this galette. I decided I would use up the last of the cheese I had in the fridge so that was goodbye to a few slices of Gruyère and the last of the real Mozzarella. It was DELICIOUS. Thanks for this recipe. Though I used my old cast iron skillet and not anything like that weird coal scuttle thing you used lol!

I made this video over a year ago and can not recall what cheese brand I used for this particular recipe. I suggest to choose the cheese with "melts well", "melts beautifully" etc. on the package. there is not a big choice of such cheese in UK, just a few brands. I'm curious how the texture changed from scrambled/egg salad to undercooked omelette between the times of 2:54 and 2:55. I only ask because my Mom tried this recipe, followed it to the T and the texture never changed, it dried out and made flipping it hard. Yours seems to go from this semi wet texture to almost egglike and we dont understand how that happens are we doing something wrong?

You can ground the chickpeas in a coffee grinder and make chickpeas flour. I made lentils flour in this way.

@clara With respect, chickpeas are a lot harder than lentils; I think one would need a heavy-duty blender, like a Vitamix.

Saw this today and made it for dinner tonight. It is a keeper. I did use Wondra flour instead of chickpea flour because I have to stay low protein. I chopped a piece of fresh jalapeño pepper in addition to the onion and carrots. Family loved it. Looking forward to trying more of your recipes.

No, we did not see the flipping step actually being done. It is not in video. Would have been helpful to see how it was flipped. Because in my case, there was no chance it would even remain intact, forget about flipping. So I ate scrambled tofu, which was ok. Atleast didn’t have to throw it away.
I tried this recipe the way this person showed it. But all I could taste was raw chick pea flour. What a waste. Thumbs down
@@WeCookVegan Sorry, I didn't see your message before. I saw at 3:18 that it wasn't cooked well before you added the cheese. It is very thick so I don't know if it can cook well inside. I still haven't tried cooking it but I'll give you a feedback when I do. Maybe it could be spread a bit thinner so the upper part dries up (like pancakes) before adding the cheese. It's just an idea.
This is so close to the tofu scramble I make in a lot of ways that it feels like the final result miiight end up feeling like a good vegan equivalent of a french toast omelette sandwich. I'll definitely have to check this out

We made this with the pan you used, but as others have experienced, when flipping everything was mushy. After the tofu was cooked, we put it in a baking dish with sliced tomatoes on top and baked at 375* for 20 minutes. Result? Great!

It’s called tamagoyaki pan, and it’s used in Japan to prepare omelette rolls. Tamagoyaki means grilled eggs. It’s very popular! Hope this keyword helps you find them

Thank you for the recipe! I have now attempts this twice, without much success. I was wondering if I could ask a couple of questions.
1. How cooked (or how wet) is the inside when this is done cooking? I think it needs to be relatively cooked, since the batter doesn't taste good raw?
2. How long are you cooking it on each side? My experience so far is that I'm ending up with burned outside and undercooked inside, which makes me think maybe I need to cook it for (much?) longer at lower temperature, but I'm already doing a few minutes a side.
Any advice welcome! It looks delicious in your video.

1. The inside should be cooked.
2. You need to cook it on a medium low so it does not get burned outside and cooks better inside. Also do not make it too think. I suggest to make it rather thin as I show in the video.

I bet you could also leave out the diced vegetables. Sometimes vegetables, since they are raw, will leak water into the mixture. Also: try putting a lid over it after you do the flip. A lid should intensify the heat in the center.
Just made this again but remembered to use my black salt. Also gathered some lambs quarter and fried with some onion and fresh garlic and pickled Serrano in the tofu. Can’t wait till it’s done. 😋 yum

Hi John, well done for being vegan! This type of pan called "Japanese Omelette pan" or " Tamagoyaki pan". My pan does not have a brand name on it but you will find a lot of options online I am sure. When making this dish please press it down with a spatula several times on all side, it helps to hold it together!

I absolutely love this comforting and rich breakfast! Unfortunately where I live vegan cheese is still rare or very expensive. Silken tofu scramble may be a nice substitute for a creamy interior.

I translated it for you:
Vegan mozzarella:
80 g white tofu (Sunfood, Lunter)
OR soaked cashew nuts OR a combination of both
20 g tapioca flour (3 tbsp)
alternatively cornstarch but tapioca works better
10 g salt (2 tsp)
10 g agar agar (4 tsp)
2,50 g of nutritional yeast (2 tsp)
2 g sugar ( 1/2 tsp)
1 g citric acid (1/4 tsp)
alternatively vinegar or lemon (2 tsp)
400 ml water
60 g unscented coconut oil
alternatively other neutral oil - I like olive oil since mozzarella is an italian cheese after all
4 g psyllium plus 30 ml water
optional - for making the cheese more stretchy
Preparation:
Mozzarella cheese is very white in colour and neutral in taste. That's why I use unscented coconut oil, citric acid (you can get it at any grocery store for boiling supplies), tapioca flour (you can get it at a health food store, but you can find cornstarch at your regular grocery store, which is also fine) for thickening, and tofu. If you don't have any of these ingredients, feel free to substitute, but it will change the meltiness, color, or flavor of the cheese a bit. Mainly the tasteless/flavorless oil and citric acid make for a neutral flavor.
I just lightly season the mozzarella with nutritional yeast. You can use more of it if you want a stronger flavor. You can find nutritional yeast in health food stores, but it's now appearing in larger supermarkets. If you had vegan lactic acid at home, that would be ideal for flavouring plantbased cheese - that's for very keen cooks.
Agar agar is a vegetable gelling agent and an alternative to gelatine. It makes the cheese harden beautifully and can also be grated. Some brands have slightly different properties but all should work. Some take longer to melt beautifully, some just don't. Ideally use pure agar agar powder.
Vegan mozzarella cheese without tofu
If you have an allergy to soy, replace it with cashews. Just soak the cashews in water overnight or boil them in hot water to soften them.
Stretchy vegan mozzarella cheese
Psyllium makes vegan cheese more stretchy when melted. It has a light brown color and the vegan mozzarella isn't as beautifully white afterwards, so only use it when you're more concerned with stretching than appearance. You can get it at health food stores or pharmacies.
Mix 4 g of finely ground psyllium (1,5 - 2 tsp) and 30 ml of water. Allow the mixture to thicken for a minute and add to the other ingredients before blending.

@@alcyonae you're so welcome, I saved it so I can share it with other english speakers, too. If you use olive oil, the cheese is going to be softer. Odorless coconut oil should result in a shreddable / slicable block but I never tried it. The original recipe calls for a lot of oil btw. You can reduce that if you like.

Nutritional yeast has a unique savory flavor that resembles cheese. Yo, I actually have all these ingredients on hand, making this right effing now. I have lactose intolerance, and unless eggs are cooked a specific way they make me super sick. I decided to eat a plant-based diet two weeks ago and there's so much I'm discovering - such as nutritional yeast. At the organic food store in the small town near where I live I bought my first bag of it this morning along with chickpea flour and then I made this galette. I decided I would use up the last of the cheese I had in the fridge so that was goodbye to a few slices of Gruyère and the last of the real Mozzarella. It was DELICIOUS. Thanks for this recipe. Though I used my old cast iron skillet and not anything like that weird coal scuttle thing you used lol!

When I tried this the complete thing fell apart when I tried to fold it over the cheese. Besides that it was yummy.

You need to push each side and hold for some time (20-30 seconds each side) when frying, it helps to hold everything together. Also Japanese Omelette pan like I use in the video helps a lot! I made this video over a year ago and can not recall what cheese brand I used for this particular recipe. I suggest to choose the cheese with "melts well", "melts beautifully" etc. on the package. there is not a big choice of such cheese in UK, just a few brands. I'm curious how the texture changed from scrambled/egg salad to undercooked omelette between the times of 2:54 and 2:55. I only ask because my Mom tried this recipe, followed it to the T and the texture never changed, it dried out and made flipping it hard. Yours seems to go from this semi wet texture to almost egglike and we dont understand how that happens are we doing something wrong?

Make sure you press and hold tofu toast with the spatula on each side repeatedly for about 10-20 seconds each time, it makes it hold together and helps to cook it through.
