How to make CLARIFIED BUTTER at home: • How To Clarify Butter ...
(Serves 4/6)
Ingredients:
1kg Lamb on the bone ( I used leg)
450g tomatoes
60g fried onions
3 tbs garlic & ginger paste
250ml clarified butter
4 bay leaves
2 cinnamon sticks
Spices as follows:
2 tsp salt
2 tsp Kashmiri chilli powder
1 tsp cumin powder
4 tsp coriander powder
1/2 tsp turmeric
30g unsalted cashews
8 green cardamom
8 cloves
1/4 tsp nutmeg
1/4 tsp mace
4 green chillies
500ml water

I just subscribed yesterday. I was looking at all your wonderful dishes and this lamb and curry is right up my alley. I love lamb and I love curry, especially when it has some heat. I will definitely give this recipe a go. We have some wonderful Asian markets here, so I will have no problem finding any of these ingredients.

I used to go to the Mughal restaurant and they used to do something very similar and what a nice meal it was. In fact I think it was probably the best lamb curry I have ever eaten. The recipe looks simple enough so I may yet get chance to revisit my youth :)

@@MyLittleKitchenRecipes made this today , great flavours all round, used neck lamb, and added some chicken to give some more meat, a little more cashews,onions than needed, and down to 200ml of ghee[my mother doesnt like it so oily] and it came out fine...the dosa's i hoped to make didnt, so supplemented with some bhajis to happy reviews all around the family...thanks for the recipe :)

Watched a few of your vids over the past couple of months. I found your channel while looking for pressure cooking help. I now have one but haven't used it yet. I usually do Latif's inspired or Al's Kitchen curries but tonight I'm doing this one as i know Big Eid is around the corner and so far I'm really impressed. I'm at the onion paste adding stage and it already looks and smells amazing!! x

Oh my gosh! I ditched the pressure cooker as I wanted to make it exactly like yours. Made it this morning and it tastes so incredible! Your recipes really knock it out the park every time ❤. I always serve the meat the next day as my mums rule is the meat absorb even more the next day. Not sure if you do this? Seriously you're one amazing cook 🙌

Yes you can! But be careful as you don't want to overcook it.

Hi, my local butcher cuts up my leg of lamb... I tell them the size I want the meat cut to.

It should do, follow my steps and test it out and let me know.
Looks delicious. Do you think lamb shanks would work in that dish?
They could, but the cook time would be much longer to cook, and you would need to put the cashew mix in near the end.

Hi Shamza. This looks fabulous. I don’t have any lamb, would this work with kid? (I do mean a young goat not a child).
I've never tried it but Im sure it'll be similar, adjust the cooking times to suit the meat your using.
@@MyLittleKitchenRecipes Goat aka chevon meat is very similar to sheep but has a stronger and slightly more gamey flavour. Kid is similar to mutton in taste but tender like lamb. A lot of middle eastern recipes now use lamb but were originally made with goat meat. I’ll give it a try, my only concern was that the kid might have too much flavour and overpower the spices. Thanks for replying.
What did you grind the whole spices and cashews in? I don’t think I have a machine that would grind up the cardamom pods enough.
I use magic bullet or ninja. It may require more than 2 tablespoons water

Yes you can! But cooking times will be reduced so check as you go to make sure the meat doesn't overcook.

Yes you can, add around 50ml double cream to substitute.
Can the lamb be swapped out for chicken or beef?
If I want to make double the amount do I just simply double the recipe ? I have found with some recipes that doing so can spoil the end result by making it a little too strong. May sound a little obvious or simple but don't want to ruin the end result
I'd say yes, although with the water add as you go to get the correct consistency.

If I use beef will it take 30 to 45 minutes to cook it like lamb?
I'm not sure, I think beef could take a little longer, but depends on the cut of beef, best to check as you go, follow my video so you know how it should be when fully cooked.

Divide everything by half, that will give you around 2-3 portions, depending on how much you like to eat.

Recipe is nice but 250 ml of ghee along with cashews and fried onions is too much cholesterol and fat for me :( :( May be once in a year!!
Yes it's a heavy dish, but one for special occasions, not a daily thing. Great for family get together if you want to wow your guests.
Out of interest how much are you paying for a kilo of lamb on the bone? I presume this is from a Halal butchers ? Would mutton work , just a longer cook?
It's around £16 a kg around here at the moment, it's gotten expensive as of late. Mutton can be used and would just need a longer cook.
