When you refer to cups do you mean a mug or the actual measuring cup? Also in your other recipes when you refer to tablespoons do you mean heaped or just a flat tablespoon?
After taking the rice off Dum, leave them for 5/10mins or so before you mix which should sort the colour out. Regarding the desi ghee, you may add a little less if you wish but in my opinion, every sweet rice I've seen, is slightly oily otherwise the rice will go hard & crunchy in the sugar syrup.
@@MyLittleKitchenRecipes tks. I used to make sweet rice years ago, I used to follow my grands routine. Anyway I followed your instructions but some how I had too too much syrup. So what I did was let the rice infuse in the rice on low heat for five minutes and drained the excess syrup and then I "dammed" the rice. My grand father used to do this process. Family said the sweet of the rice was perfect alhamdulillah.
I WATCHED YOUR,S RECIPE BUT I COULD NOT MAKE OUT WHAT ARE YOU COOKING FOR BECAUSE THERE ARE THREE TITTLES AS FOLLOWING :- MUTANJAN , ZARDA AND THIRD SWEET RICE . AS I HAVE BEEN FAILED TO SELECT WHICH ONE YOU WERE COOKING FOR . AS FAR MY KNOWLEDGE IS CONCERNED , MUTANJAN DOES INCLUDE MUTTAN AND THAT DIFFERENTIATES FROM ZARDA . I MAY BE WRONG , PLEZ SOMEBODY CORRECT ME IF I AM WRONG . ANY IT WHAT WAS A NICE AND EASY TO UNDERSTAND PRESENTATION.

How long do you boil the rice for and is it with lid on or off?
6/7 mins lid off. Please remember different brands require more or little time too. No two rice brands are the same.

Either cups as mostly the standard mug and measuring cup are pretty much the same. Total sugar needed is 375g

What can I do if my rice is undercooked?
I eat this a lot, mainly just the one with one colour & had no idea of the name of it. I always just call it sweet rice.
