INGREDIENTS:
1 cup canned albacore tuna
1/2 cup diced red onion
1/2 cup diced celery
1/2 cup diced kosher pickle
1 handful on baby spinach
2 slices of bread
2-3 tbsp mayo
1 tbsp dijon mustard

I add celery and red onion to mine too, but gotta try the pickle next time. I also like to add diced fuji apple for a sweet crunch.
OMG I thought it was weird at first to put Fuji apples but it's DELICIOUS!
I wouldn't be surprised if you hated it, either! Fuji apples give a rich taste and smell and sometimes can taste horrid with tuna!

I made something similar to this. I call it 'tuna surprise'. Finishing with a layer of cheese then grilling it. Yum
