    2 Chicken Legs
    1 tsp curry powder
    1 tsp smoked paprika
    1 tsp chili powder
    1 zested lemon (Reserve juice)
    1 tbsp olive oil
    salt & pepper to taste
    ------------------------
    1 fennel bulb
    1 green pear
    2 branches of celery
    1/4 cup sliced scallions
    1 tbsp dijon mustard
    3 tbsp mayonaise
    1 tbsp curry powder
    salt & pepper to taste

    I love the endings of his video, the way he talks about the item that he made as if someone else made it and he is giving his opinion on it. It could have sounded like he is bragging about his cooking but it totally doesn't come off that way.

      You should probably take some lessons in efficiency of movement if you think this takes three hours. All in all, it takes just barely over an hour to put it all together. Preparing the condiments and the bread takes ten minutes. Majority of the time spent would be on waiting for the chicken to come out of the oven.

      +hootypatootie when im baked i like these slow and chilled food videos with good camera work and chilled tunes but then also i like gordon ramsays fast videos when i want to learn a recipe in a reasonable amount of time :)

      I mean if you enjoy cooking then it's okay. I personally like putting work and effort into food. Plus it gets my mind off of things. 💕

    And now you know why when you go to a restaurant and buy a gourmet sandwich, it costs as much as it does. This is the kind of effort chefs will go to. Obviously in a restaurant they do things more in batches so in reality it doesn't take as long as this video, but ultimately the effort of preparing the food this way is the same.
    Want to make this sandwich and save time at home? Use leftovers from a roasted chicken you had the night before.

    Hi Byron, I read in your bio that you had worked as a chef at Inn of the Seventh Ray in LA. I loved that restaurant and miss it now that I no longer live in LA. They had an open faced vegetable sandwich with a cheesy kind of tahini dressing on their menu that was the bomb. I wonder if you could do a version of it. All your vegetarian fans would love it.

    I recently added you to my subscriptions.
    Even though I don't cook often, I do enjoy good food.
    And as even the most casual cooker than I am mostly purely out of necessity,
    I really enjoy watching your videos. I admire your craft, the quality of the presentation, and just the format you use to showcase your talents.
    Please keep doing what you do because it's a good way for me to wind down after a long day of work and watch you do your thing.

    It's a lot of work but I made this a few weeks ago and it was absolutely delicious. Wouldn't mind doing it again. Perhaps one of the best sandwich taste ever

    that pear and fennel salad is easily my favourite part of this. The chicken salad looks absolutely amazing, but I'm loving that salad for sure!

    Put this together tonight. INCREDIBLE! I used leftover chicken from previous roasted whole chicken. Make no never mind though as I would personally cook chicken specifically to make this he next time. First time eating fennel too. Great job!

    I just made this using rotisserie chicken from my local supermarket and it turned out great!! Thanks Byron - making me feel like a professional chef haha. When I have more time, I will try making the chicken myself.

    I'd like to know is it absolutely necessary to oven roast the chicken after grilling it? I tried making the sandwich just by grilling the chicken.... Tourney out pretty awesome....

    How do you get the bread to slightly toast on one side only? I got mine pretty much like yours but put them on a dark teflon baking sheet and both sides got slightly toasted. I will have to adapt your chicken for the oven. Yum.

    Too much work for a sandwich they say? I think this sounds amazing and would be worth planning ahead for… cook up the chicken ahead, while you are grilling dinner the night before, perhaps… you have to cook the chicken before you can make a chicken salad anyway, right? The rest is normal prep for a salad, chop/dice/mix, the fennel and pear however are great fresh flavors… I gotta make this!

    Since my nana passed away about 6 years ago her recipe for chicken and dumplings went with her since she never cooked from a recipe. Let alone when we asked her about it she was past remembering to try and tell us. I've tried to remake the dumplings and chicken but the dumplings came out doughy and sticky. When I ate them as a kid visiting her in Tennessee the dumplings were flat and when cooked had an almost al dente texture without the noodle if you get what I mean because the dumpling dough was simple and not to the extent of work and I think eggs that noodles have when I've made noodles myself. It feels so silly that I can cook and hand make fresh pasta but I can't get my Nanas chicken and dumplings. I do remember she made the chicken in a pressure cooker and dropped the dumplings in and they never stuck to each other, never got gummy, never made the stock or broth look different. HELP! I'm not looking for identical taste that's hard and very personalized I'm looking for help with the dumplings, that made the dish. Hope you and your wife (family) had a wonderful Christmas!
