    INGREDIENTS:
    6-8 oz A+ grade ahi tuna
    1/4 cup green beans (blanched and cooled)
    1/4 cup mini marble potatoes (blanched and cooled)
    1/4 cup sliced cherry tomatoes
    2-3 tbsp kalamata or nicoise olives
    6-8 leaves butter lettuce
    picked parsley to garnish
    Sherry Vinaigrette:
    2 tsp chopped garlic
    2 tsp picked thyme
    3 tbsp sherry vinegar
    1/4 cup olive oil
    salt and black pepper to taste

    Hi ! I actually am from Nice in France. I just wanted to say that there are no potatoes or green beans in the nicoise salad. Originally, it was a meal for very poor people from the south and it was only made with tomatoes, salad, and anchovy and seasoned with olive oil, salt and pepper. Then the tuna was added, as well as the olives and the eggs. But for nissarts (people from Nice since several generations), it's considered a sacrilege to add potatoes or beans since the original recipe doesn't include starchy food. Just wanted to mention the history of a meal I know by heart and really represent a lot to me and my family, no offense intended !
    It's still a very good interpretation, thanks for your hard work, I really enjoy watching your video, you are such a talented men ! Sorry for the possible mistakes, since french is my first language.

    You have such a way with preparing food in a simple and almost elegant fashion. I dont know, I have fun just watching you cook in your videos while you narrate the directions. No nonsense needed, no catch phrase screamed out loud and just a nice a background music to pull in the audience. YUM YUM YUM i like fish dishes!

    Tuna is that type of fish where you can eat it raw. Especially the cut he bought, slightly under the belly or tail section ( I think it's called Oca-row in Japanese). It's one of the fastest fish in the ocean, I would have pressed some lavender flowers along with a melange of coloured pepper corns. But this one looked delicious.

    yummmm :) this is the only time I've liked olives in anything. I remember eating an adaptation of this dish, but instead of seared tuna it was a tuna carpaccio underneath. Simple and delicious!

      Either from restaurant supply stores or you can get applicator bottles that are used for hair coloring.

      Tran Minh It's supposed to be. Cooking tuna all the way through, ESPECIALLY sushi-grade tuna, ruins the flavor and texture.

    Love that coating and the colours of the salad. Milk frother- genius-. I think is crucial for a salad to be colourful and to seem "crunchy"... but the fish... too raw and unsafe for me.
    Love to watch you using olives from my village, Kalamata :D If only I could sent you some freshly picked from our olive trees

      You cook food for safety to kill bacteria. Only the outside of the loin has been exposed to the outside world. This is as safe as rare steak is.

      I’ve used frozen tuna for my nicoise, thaw if first and cook it rare.
