- Today I am making a super easy homemade corn in a cup. This recipe is very versatile and the ratio of ingredients are up to you and your taste buds. I find that using canned corn and heating in the microwave most convenient but you can also heat this on the stove top. The toppings of Mexican lime chili seasoning, fresh squeezed lime, mayonnaise, Mexican table cream and cotija cheese make this so wonderful. This is a great Mexican street food recipe you can make at home.

INGREDIENTS
15.25 oz can of sweet golden corn (drained)
2 Tbsp butter
1 1/2 to 2 Tbsp mayonnaise
1 Tbsp Mexican table cream
squeeze of fresh lime juice
1/2 tsp Tajin chili lime seasoning
1 to 2 Tbsp crumple Cotija cheese (or grated parmesan cheese)

I like this version and I also have one of my own because of the region I am from. And my uncle is a street corn vendor in Mexico.
He uses the white corn and I actually found some frozen bag ones. He mixes his powder chili with lime and the paste it creates is super delicious. Top that with some Mexican table crema, butter, and shredded panela cheese. Super good!
He actually carries around the mayo and tajin since people do ask for it.

I do not own a microwave but I am all for simple. Love corn in a cup also. Tajin is a good spice brand and I am sending some to my Filipina friend since it is a spice blend they would enjoy in the Philippines. Usually, send a box twice a year of interesting things I can only find in the Americas.
