You can install a 60Amp breaker and just limit the cars amperage. That way the mini split can work and not go over the 80Amp limit on the 100Amp sub panel

You dont need a subpanel. I had it installed because of the new garage build. The subpanel was necessary for the addl outlets, minisplit, garage door opener and lifts.

A 60 amp breaker will give you 48 amp charging.
