    INGREDIENTS & NOTES
    #1 Chocolate Rice Cake Bowl 1:08
    3 rice cakes
    about 200g thick vegan yogurt (7oz or ¾ cup + 1 tbsp)
    1 tbsp nut butter (peanut, almond or cashew)
    optional: 1 tsp chia seeds, ground flax seeds or locust bean gum powder
    1-2 tsp agave or maple syrup (or to taste)
    a pinch of salt
    1/2 tsp vanilla
    2-3 tbsp chocolate chips (it’s easier to melt a larger amount of chocolate to avoid burning it, then use however much melted chocolate you want)
    optional: sprinkles, shredded coconut or berries for the top
    → serves 1
    #2 Salt & Vinegar Roasted Cabbage 2:35
    ½ napa cabbage, cut into thick strips
    1 tbsp olive oil
    1 ¼ tbsp white wine vinegar
    generous pinch of salt
    a dash of black pepper
    optional: other spice mixes of choice, roasted sesame seeds for the finish
    → yields 2 baking sheets of cabbage
    → roast for 10 - 15 minutes at 180 C , or until golden brown, depending on how crowded your baking sheets are, the cabbage can take up to 20 minutes, keep an eye on it !! For example, if you give the cabbage pieces a lot of space on the sheet they will cook really fast, for only around 10 minutes. Hope i am not confusing anybody haha just keep an eye on your oven
    → serves 1 as a snack, 2 as a side
    #3 No Bake Protein Cookies 3:55
    4 tbsp quick cooking oats
    a pinch of salt
    2 ½ tbsp protein powder (choc, vanilla, caramel flavored)
    1 tsp ground flax seeds
    1 ½n tbsp unsweetened cocoa powder*
    1 medium banana ~ 90g = 3.17oz
    3 tbsp peanut butter
    3 - 4 tbsp chocolate chips
    optional: extra sprinkles or chopped nuts for the finish
    *if u want a more intense chocolate flavor, add another ½ tbsp cocoa
    If you want the dough to be sweeter, add 1-2 tsp powdered sugar or coconut sugar. However the melted chocolate gives it a nice level of sweetness, so that may not be necessary.
    → yields 5 - 6 cookies
    #4 Spicy Sesame Rice Bites 5:20
    1 handful frozen korean rice cakes (or however many u want to eat)
    a drizzle sriracha (or whatever hot sauce you prefer)
    for the tahini sauce:
    2 tbsp white tahini
    1 tbsp soy sauce
    1 ½ tsp maple syrup
    1 tbsp white wine vinegar
    if needed: 1-2 tsp warm water
    optional: roasted sesame seeds or bagel seasoning for the top
    → serves 1
    #5 Molasses Yogurt Bowl 6:17
    4-5 heaping tbsp unsweetened soy yogurt
    1 tbsp peanut butter (crunchy)
    1 banana
    1 tsp molasses
    #6 Leftover Crunch Wrap 6:54
    Inspired by the Enchilada Crunch Wrap Recipe - from my Cookbook ALL DAY VEGAN !
    a bit of oil for the pan
    3-5 tortilla chips, store bought or homemade
    1 warmed tortilla wrap (medium to large size)
    1 tbsp dip of choice (vegan cream cheese / hummus / tahini spread)
    3-4 pieces flavored tofu (fried, smoked, i did store bought deep fried tofu from my local asian food store)
    small handful of greens
    1 tbsp extra add-ins: vegan kimchi, grated carrot, cherry tomatoes, pickled vegetables, vegan cheese …
    → serves 1
    #7 Cold Silken Tofu 8:40
    1 tbsp olive oil
    1 tsp sesame oil
    1 spring onion
    1 tbsp white wine vinegar
    a dash of red pepper flakes
    a dash of pepper
    ¼ tsp sesame seeds
    1 tbsp soy sauce
    1 tsp agave syrup
    1 400g block silken tofu (14oz)
    → Alternatively use smoked tofu (cold or fried), tempeh (cooked) or boiled potato chunks as a base for this dressing !
    → serves 1, 2 as a side

    Hey Mina, please be careful with the cracked glas blender bowl. It can explode/shatter any time. Glas blender bowls are very dangerous. This is the reason why no high end blender company is using them.

      came here to say this, also if it’s partially cracked already it will already be weak, and possibly is already getting small shards of glass in her food!

    quick tip for anyone who doesn't have access to these Korean rice cakes, search up rice paper tteokbokki & you'll see a technique to stack, roll & cut 2 pieces of rice paper to make them! not the exact same but they're close and very delicious nonetheless, you can't feel the layers of rice paper, it kind of all becomes one just like regular tteokbokki. it's honestly genius

    My biggest problem with healthy eating is I get the main meals down but I forget about snacks. I go ages without wanting or needing a little snacky snack between meals but then I get hit with the snacking bug and end up eating everything. But I can never find healthy and or cheap snack options. Sometimes the store bought snacks cost as much as a whole meal! For a few bites! But these recipes will make a wonderful addition to the menu. Thank you 😊

      Fantastic and bravo! If you don't know her already, I really recommend the channel Rainbow Plant Life, Nisha makes really delicious recipes! Also Gaz Oakley channel. He's a chef and really passionate about cooking so some of his recipes are not for beginners but he has easy ones too! ^^

    the tteok with tahini sauce remind me of a traditional hong kong snack - 腸粉 rice rolls (essentially the same shape but just rolled) and served with soya sauce, peanut/tahini sauce, and a sweet sauce (not sure what it's called in English, maybe oyster sauce??), and garnished with sesame seeds!! i love all of these ideas :))

      yes exactly what i thought of when i saw those rolls !! (rice rolls are much softer than korean tteok and the sweet sauce is often hosin sauce!)

    I'd be scared shitless using an almost-broken food processor honestly. Small pieces of glass could get into the food and that wouldn't be fun to chew on or get your tongue/throat torn, ouch.

    Love this recipes ❤ I get so nervous with your food processor with the crack on the inside…what if you are eating little bits of glass…or bacteria living in the crack cuz it can’t be cleaned between the cracks. 🙈

    Made the no bake protein cookies and struggled a little bit to get the right consistency of the dough. Had to add about 1,5 times as much oats and protein powder for it to be not too sticky. Maybe my bananas were bigger (didn't weigh them). Just a heads up, that might happen to you too and the it's a little annoying to add more oats since the "wet" ingredients are already in. Probably better to make some extra oat flour in advance

    these look amazing, especially the rice cake bowl! my favorite snack is corn cake with a thin layer of tahini and jam (i love red currant jam because it is sweet and kind of sour). try it, its delicious!

    I keep seeing versions of the silken tofu dish and I still haven't tried it. Definitely need to try it soon.

    I found that cooking firm tofu cubes for 10 mins makes them very silky

    Mina ❤ fab recipes as always!!! I i make a very similar sauce to the spring onion sauce, except I also add a bit of grated ginger and grated garlic to the bowl, then when you pour the hot sesame oil on top, it cooks and freaking makes the most tasty concoction 🤤
    I also make a damn good peanut sauce and the method is similar so I wanted to share. (except I use almond butter because I think it tastes better)
    - almond butter
    - soy sauce
    - freshly grated ginger
    - freshly grated garlic
    - sriracha
    - lime juice
    - agave
    - toasted sesame oil
    Mix everything except oil, heat it up in a pan then pour over top of mixture. Then I usually adjust everything to taste and desired thickness!

      @@tungstensmum1491 I know but not everyone, like me, has the ability to get everything needed for these recipes. I make do with what I have and sometimes I can make these and sometimes not. And honestly after a while I could get used to being vegan, but to put people down because they have different beliefs about food is stupid and disrespectful. I follow this channel because I want to try new and different foods not because I want to get dogged on because I eat meat

    If you don't have pounded rice cakes (tteok/mochi and other words depending on the language) you can make them at home if you have rice or rice flour

    Interesting to see other people's ideas on what an "easy" snack is. When I need an "easy" snack I'll take a block of smoked tofu out of the fridge and eat it raw like some goddamn gremlin 😂

    Hey, I see you like using tahini in your recipies and since you live in Gemany I'd like to ask if you have any (organic) brand recommendations? I once bought tahini that was insanely bitter and ruined my hummus :( since then I never bought tahini again because i was scared that it was also bitter like the other brand. Would really appreciate your thoughts :) thx

      Nein, tatsächlich ist es ein bisschen anders. Melasse entsteht als Restprodukt bei der Herstellung von Zucker. Ist also eigentlich "Müll" in dem Sinne. Aber wie Mina sagt, zufällig eben auch ein gutes Süßungsmittel

    Please, don’t melt the chocolate in the oven. Heating up that thing just for that is an insane energy waste. If you wanted to bake anyway, whatever, but otherwise never heat up the oven for something so small.
    Ovens need an insane amount of electricity. Really, any other method would be wayyyy better.
