  • Hello people! Enjoy this 20 minute long what I eat in a week. Full of cozy easy and tasty vegan recipes. We’ve got a recipe for blueberry breakfast donuts in this one, a mac and cheese wrap with plant based chicken, a delicious thicc banana free smoothie bowl and so much more!

    I am not a nutritionist or qualified health professional. What works for me will probably not exactly work for you and that’s okay. My food diaries are not to be taken as diet advice, but as vegan recipe inspiration and source of entertainment (so I hope).
    INGREDIENTS:
    #1 Sunday’s Chocolate Banana Breakfast Bowl
    1/3 cup oats (33g)
    a pinch of salt
    1 1/4 tbsp cocoa
    ¾ tbsp vegan chocolate protein powder
    1 banana frozen
    3 dates, soft
    ½ tbsp flax seeds, ground
    1/3 cup non dairy milk, more if needed (80ml)
    + muesli of choice

    #2 Tuesday’s Summer Rolls
    5-7 rice paper sheets
    1 red onion
    2 red peppers
    oil for the pan
    salt and seasoning for the veggies, to taste
    lots of hummus
    a few handfuls of fresh spinach and or steamed broccoli

    #3 Monday’s Salad Bowl
    a couple handfuls fresh baby spinach
    1-2 carrots
    1-2 bell peppers
    for the dressing:
    one heaping tbsp hummus, ¾ tbsp white wine vinegar or lemon juice, seasoning to taste, 2 tsp non dairy milk
    also: hemp seeds, cashew cheese* optional: more vegan cheese

    #4 Tuesday’s Berry Chocolate Porridge
    1/2 cup oats, of small (45g)
    ¼ tsp salt
    2 ½ tsp of unsweetened cacao
    1 cup of nondairy milk (250ml)
    2 teaspoons of date syrup or other sweetener
    also 3/4 cup of frozen berries or cherries (~80g)
    toppings: soy yogurt, pecans …
    #5 Wednesday’s Blueberry Breakfast Donuts (or Muffins)
    1 cup + 2 tbsp oats (90g + 2 tbsp)
    1 cup flour (125g)
    1 tbsp flax seeds, semi ground
    2 tsp baking powder
    ⅓ tsp salt
    ½ tsp cinnamon
    ½ cup non dairy milk (125ml)
    1 tbsp apple cider vinegar
    3 tbsp applesauce
    2 heaping tbsp peanut butter
    ¼ cup melted vegan butter or coconut oil or veg oil (65 ml)
    1 tsp vanilla
    1/3 cup sugar (70g)
    ½ cup frozen berries (50g)
    → yields 7-8 donuts or (I think) 10 muffins

    #6 Thursday’s Apple and Raspberry Smoothie Bowl
    2 handfuls of frozen apple slices
    ~ 1 cup frozen berries (100g)
    1 tbsp vegan vanilla protein powder
    ½ tbsp flax seeds, ground
    ~ ½ cup vegan yogurt (125ml)
    a splash of vegan milk
    1 tsp beet powder but no need for that really haha
    topped with almond butter, blueberries, breakfast cake from recipe #5
    #7 Thursday’s Mushroom and Quinoa Risotto
    1 red onion
    a handful of mushrooms
    oil for the pan
    3-5 handfuls of fresh spinach
    ¼ cup unsweetened non dairy milk (60ml)
    1 tbsp nutritional yeast
    a generous pinch of salt
    other spices of your choice
    ½ cup cooked quinoa (~90g)
    a few handfuls of vegan pizza cheese
    toppings: sprouts, fresh spinach, sriracha, more vegan cheese??
    #8 Friday’s Quinoa Porridge
    ¾ cup cooked quinoa (~135g)
    a pinch of salt
    ¾ cup non dairy milk (180ml)
    ¼ tsp cinnamon
    1 tsp chia seeds
    also sweetener of choice, to taste, i just topped it off with date syrup
    toppings: blueberries, almond butter or whatever

    #9 Friday’s Lentil Veggie Bowl
    1 carrot
    1 bell pepper
    oil for the pan
    ½ can of brown lentils (140g)
    ¼ cup peanut sauce
    a squeeze of lime juice

    toast or crackers
    #10 Friday’s Salad Bowl
    greens
    cherry tomatoes
    cucumber
    alfalfa sprouts
    dressing:
    1 tbsp olive oil
    2 tsp apple cider vinegar
    1 tsp miso paste
    1 tsp mustard
    a generous pinch of salt
    1 tbsp maple syrup
    water to adjust the consistency
    #11 Saturday’s Mac and “Cheese” “Chicken” Wrap
    for the cheese sauce:
    ¾ tbsp cold vegan butter
    ¾ tbsp cornstarch
    ½ cup non dairy milk or non dairy cream
    1 tsp white wine vinegar
    salt to taste
    ¼ tsp turmeric
    2 tsp nutritional yeast
    2-3 handfuls of vegan pizza cheese that melts
    pasta (about 80g?)
    also vegan meat substitute of choice
    tortilla
    greens
    hummus, vegan spread
    cherry tomatoes
    sriracha
    hemp seeds

      It depends. Not everyone can afford a healthy diet, far less a completely vegan one. For starters, it's much more expensive for some, and while I am lucky to have parents who are able to afford high quality foods, there are many individuals who are forced to buy what they can afford, which may not always be the best option for their health. It also takes a lot of knowledge on how to prepare these foods and what foods to pick, both of which can be challenges for people who have been on a diet of highly processed unhealthy foods. I have been interested in health since I was very young (I remember in 3rd grade I wanted to do a presentation to my class on healthy eating), so while this may not be an issue for me and individuals experiencing in healthy eating, it can be a great one for others. Its like learning a completely new skill, and its not always because people are lazy (although that is more often than not a reason). We must slowly guide them by gradually replacing foods for better alternatives, like a bag of Doritos for an apple or banana, while considering their budget as well. It isn't easy, but its definitely worth it :)
      EDIT: In light of the various negative replies to my comment, I would like to mention like I have to many people who misunderstood my comment that eating healthy CAN BE CHEAPER, HOWEVER, many people don't have the proper knowledge in order to do this, which is why education is key. And in the long run, it can save you thousands, if not more. It just requires a bit more time to learn and understand, but it's worth it. You don't need to buy fancy high quality protein powders or bars or anything along those lines in order to be healthy, you just need to eat more whole, minimally processed nutrients rich foods :)

      @@asmrcafe3542 I actually find that, since I've started to look up more healthier meals, that the recipes are more simple (from what i've seen). Of course there's maybe some more prep time if you're using fresh fruits/veggies/tofu/etc but overall I feel like its harder to mess up lol

      @@jupiter8037 the more money you have the more creative you can be with prep and meals, but it's not necessary. I own a small business and 98% of the money i have i put back to keep it running, the remaining 2% i use to feed myself everyday, pay my bills, and save in the bank. I only buy the cheapest in season fruits and veggies in the farmer's market. It's actually very easy to be healthy if you have the knowledge. Sadly not everyone knows that sourcing ingredients can be cheap and they are caught up with influencers buying fancy stuff and think it's what you need to stay healthy.

    I love how simple your recipes always are. Having my allergies, mobility, and health randomly getting worse, limiting my diet, and making it hard to cook my own food has been a struggle. Finding you and a few others has really helped with the frustration and fear I've started developing around food. Fewer ingredients = less chance of a reaction. Thank you for existing.

      I have a sneaking suspicion we might have the same condition, but I totally share your sentiment! I have to be really creative in the kitchen as well and while I usually can't use her recipes, I love watching them for flavor combination inspiration or new ideas for how to use my limited food variety in different ways (and, ya know, the general aesthetic coziness of the videos themselves).
      I hope your food reactions stabilize and you find things that work for you, too.

      @@LilacsAdore yes I have! I do one of their recipes a week as a way to get myself used to trying new things. Some of them can seem complex, but I've made their Rose Pasta, Spiced Black Bean salad, Raspberry lemonade, Chai hot chocolate, and more and I'm not even fully vegan. They are super good and once you familiarize yourself with them, they get easier and quicker!

    Sure, It’s nice to follow complex recepies to make delicious foods, but my favourite food is definitely “getting-rid-of-scraps-dishes”. It challenges your imagination and skills in the kitchen, which means that the food is so much more hearty and comforting!
    I can also end really badly, but hey ho! We eat it anyway (or throw it in lasagna) :P

    Thanks for the inspo.I've been really depressed so altely my meals are either a slice of Christstollen or rice, veggies, beans and tofu all cooked in the rice cooker haha! But now I'm a little more motivated to cook.
    (I watch Mirella's videos too and every Sunday she shows me how trash tv can be entertaining lol. Nice to know you are a fan too :))

    These are my favourite videos of yours! I love that you always use up leftovers and even find ways to use up items you don’t like (e.g. the cherry yogurt). Some people are too quick to throw food away. Your attitude toward food is just great in general and this video was definitely worth the wait! ❤️

    Dear Mina, I just found you and I can for sure say you are definitely my favourite vegan-cooking-youtube person from now on! To me you just find exactly the right balance between healthy/yummy/soulfood and between fancy and easy. Also you inspire me to experiment and try out some new stuff without overwhelming me with super weird and expensive ingredients that I would never even know where to buy. Thank you so so much!!!
