    I throw anchovies in the food processor and make it into a paste. I then whip that paste with softened (not melted) butter and roll it into a thin "log" using parchment paper and throw it in the fridge to harden. Slice the compound butter and use it on steaks, it's amazing!

    To kick up the butter or bacon grease a bit, mix blue cheese into. Blue Butter is out of this world. I think the best ones use a softer creamy blue cheese.

      Gorgonzola is basically the same thing and is usually soft could be a good substitute for the blue cheese

    I love my version of homemade hollandaise sauce and it is easy to make: Immersion blender, 1 pint wide mouth mason jar, 2 large egg yolks, 1 tsp white vinegar, 1 tsp water, dash salt, 1 stick of butter. Partially fill jar with warm water and microwave for a couple minutes to get good and hot. Pour out water. Place egg yolks, vinegar, water, and salt in warm jar and blend together. Melt butter and get good and hot. Trickle the melted butter into the jar with the blender running (may need to tilt the jar slightly to insure the blender head is whipping the egg yolk mixture). Done. Enjoy on meats, especially cuts that have less fat as this adds a good deal of fat. I just recently used it on leftover Thanksgiving turkey.

    Carnivores can replace vinegar with whey/lactic acid. Lactic acid or lactate can be made by simply sealing milk in a bottle and letting it go sour. Filter out the curds and the whey remaining has had all the lactose converted to lactate.

    I make goat yogurt, goat feta, and fresh chèvre cheese. I eat the feta on my steaks and I keep it in a SUPER salty brine so I get more salt that way too. And since its raw its full of awesome goodness. The goat yogurt works great as a dip or a sour cream alternative. And if I strain it it becomes super thick and great for topping all sorts of dishes.

    yeah learning how to make french sauces is a game changer. Hollandaise, bernaise, beurre blanc... these can made almost carnivore and they help you get pack the fat in.

    Béarnaise sauce is what it becomes with vinegar instead of lemon juice. There is a great Julia child video on THE HOLLANDAISE FAMILY. Shows how to make proper Hollandaise and Béarnaise and how to FIX it when it goes wrong. My copy of the episode I purchased and downloaded from Amazon. Worth it!

    Keep in mind that beef gelatin can be added to all kinds of meat juices like au jus, bone broth or just water to thicken liquids into sauces and creams plus you get some extra collagen aminos while your at it.
    Gelatin may be processed, dehydrated beef skin but it is 100% beef.
    I mention this because I had a life’s best, mushroom and swiss burger at a BJ’s Brewhouse yesterday that used real au jus and butter for their mushroom sauce.

    Before Carnivore I loved spices on meat. Now... It's been a year, and while I sometimes use rosemary or thyme (like once in two months), I don't crave them or miss them. It's strange, because the longer I am on Carnivore, the less restrictive and more enjoyable this way of life becomes. I haven't even tried out all those Carnivore recipes yet.

    Hi Anthony, thank you for the videos. We have pork rinds in the house. They are nice as a side or ground up a bit as a coating on meat. Just read the label some times they are contaminated with sugar or seed oils.

      I’m a huge fan of fattier cracklins over dry rinds. I’ve tried a dozen brands and only found one I liked over the years and it was crazy expensive. Mac’s brand original cracklins at WalMart were pretty terrible.
      However, Mac’s just came out with a new recipe, Golden Cracklins that are much bigger and actually have a large strip of fat on every piece. Half a bag is 48g fat and 56g protein. It’s hard not to eat at least 1/3 of a bag at a time.

    Yeah Butter is the wort thing for us Carnivore Hard healers from Autoimmunity. Tallow with egg yolks and AVC would be my plan without risk to my gut biome. I make meat crisps-beef and chicken as it's simple.

    Who only eats steak and ground beef on carnivore? I eat lamb, bison, goat, roast, bacon, pork belly, hog jowel, venison etc.

    For those of you who eat dairy, I make a cream/butter/salt/aged cheese sauce that is delicious. It's great on just about everything from fish to chicken to steak. I usually make mine with plain kefir instead of cream, which keeps the carbs extra low.

    I'm coming from 3 years Keto, new to carnivore as of October 1st. My favorite beef condiment so far is the beef juice I collect from my (silicone) sous vide bag. Chuck, ribeye, sirloin. It doesn't matter. I pour the juice in a demitasse cup and add butter & salt to taste. It tastes great, and I get all the beefy nutrients with no waste. However, my next condiment experiment is going to be butter with the black garlic I still have on hand from my Keto days. Sounds promising.

    ALFREDO!!! Look for a keto recipe without flour. It's a game changer. Great for adding fat to low fat meats like chicken and shrimp.

    I do use G. Hughes sauces in ground beef. I do not consider that to be carnivore though. I use 2 tablespoons of a sauce in 1-2 pounds of 80/20 ground chuck. I consider this Ketovore and not Carnivore. G. Hughes sauces do contain modified cornstarch.. But the carbs are 1 per tablespoon with no added sugar.
    I measured my blood sugar and ketones 30, 60, 90, 120 minutes after to test and the difference between plain beef and using the sauce is within the accuracy of the meter (keto mojo). All the ketone readings were within 0.1 and the blood sugar increases were within 5 points on consecutive days. Total increase in blood sugar for the meal was 10 points and 12 points. Ketones went down 0.2 initially and then up by 0.4 on the last reading (so up 0.2 for the meal).
    Sometimes I use Primal Kitchens and not G. Hughes sauces. Same sort of response with ketones/glucose with those.

    I love that Redmond Salt has tons of different flavor profiles that are carnivore compliant. I also typically use bacon grease (yes oven made bacon, yum), butter (absolutely on my steaks or any beef) & ghee. They're all pretty tasty. I haven't transitioned to carnivore yet. Still doing BBBE since 9/1/22 & loving it. Not interested in chicken, fish or pork (other than bacon) as of yet. Luv this video, humor & your insight. Be well.

    Alfredo sauce without garlic if you are looking for 100% carnivore. Otherwise it's just butter, cream and parmesan cheese.

    For those starting out to a midway through their journey, I would recommend finding a marinade like Allegro Hot&Spicy, its a soy mix but no other sugars or carbs, yes contain soy protein bad... however if overweight there are more priorities first. it will help to enjoy a steak more than a few taste effects of the marinade, after all your not injecting all of it just some topical flavoring.
    Sous Vide your steaks at 131 or so for 2hrs, then do a quick searing 1 min each side. I also use a George Forman grill, so a quick min sear is all I do and its fantastic. You do pour out most of the marinade so for what it is do it to power through until you get to a level where you can wean away, and understand the amount of food/fat your body is needing.
    Once you get to a point of not needing the marinade, Costco has some jalapeno/garlic stuff olives, and one you two, after a steak to do a pallet cleanse is great as well.

    I know this isn't carnivore but it will definitely hit keto macros. Chicken picatta sauce (minus the broth if you like it super lemony). lemon juice + butter + capers slightly reduced. Goes amazing on any meat.

    Make some baconnaise. Like mayonnaise but made with bacon grease instead of seed oils. Also, glad to see you mentioned Red Boat fish sauce, that stuff is amazing!

    A super tasty but expensive one- Foie gras- put in micro for about 15 seconds- melts and then is YUM dipping sauce (and a source of liver for nutrients (is expensive)

      yes...super expensive. Try Cod Liver packed in it's own oil. They come in tins. Some people say it tastes like canned tuna. To me, it tastes like the Smoked Oysters that comes in a tin but packed in cottenseed oil. I felt like I found a gold mine with the cod livers!

      @@dakotad.8609 Thanks. I'm assuming you're meaning 80% protein 20% fat. I bought some wagyu ground beef from Costco that's 75/25. Definitely has some grease but it's super tender and tasty. And it seems like people talk about adding so much fat in that I started to wonder how the percentages were working out for people.

      @@therealdeal3672 Yes the high end of fattier ground beef I have seen is 70% protein 30% fat. It is definitely better to go for the higher fat ones as they are healthier and more flavorful compared to the scam "extra lean" ground beef options.

    Saturated animal fats cause heart disease. In randomized controlled outcome studies if the replacement for saturated animal fats isn't specified in the study then there was no difference in heart disease metrics (because people likely replaced the saturated animal fats with fatty carbs). All the pro saturated fat youtubers and docs latch onto these studies to confirm their bias.
    But if whole carbs were specified as the replacement then heart disease difference was obvious. Saturated animal fats caused far more heart disease than whole plant carbs.
    So ya I would bet my life that any studies showing saturated animal fats had no effect on heart disease rates that the replacement for those fats were not specified. Do you understand this?
    I can take a pack a day smoker and add 5 more cigarettes to his daily habit and show no extra mortality from smoking them. Does that mean smoking is safe and doesn't cause health problems? No, if you take someone that doesn't smoke and have them smoke 5 cigs a day then it would definitely show an effect. I hope you can understand the logic here and why studies showing saturated animal fats to be harmless are flawed studies.
